The lights are already up here in Porthleven, and nothing gets us more in the mood for Christmas than watching them twinkle away in the harbour; the gentle aroma of wood smoke filling the air, as families and friends get cosy around the log burner, catching up over roasted chestnuts and their tipple of choice. Magic moments
The weeks leading up to the big day are all about the ambiance, especially for those with young families – embracing the magic of Christmas. There’s no shortage of festivities to immerse yourself in throughout December, from vivid light displays and traditional parades to live theatre and carol singing.
What makes Christmas Eve the most exciting day of the year for me is following Falmouth Docks Choir singing through the streets of Falmouth in the morning while doing last minute shopping and having a couple of pints at The Seven Stars. If you love the Cornish countryside and celebrating ages-old traditions, then the National Trust has Christmas all wrapped up. Cotehele is famed for decking the halls with its 60ft Christmas garland, typically containing around 30,000 dried flowers, which hangs in the Tudor Hall. As well as festive arts and crafts activities and seasonal events, Father (and Mother) Christmas will be making appearances at National Trust properties throughout Cornwall, including Cotehele, Trelissick and Lanhydrock – it’s a busy time for the couple, so make sure you book in advance. The children have the chance to meet Santa and his elves on selected dates right up until Christmas Eve (when he starts to get quite busy in the evening with other commitments). Again, we recommend buying your tickets in advance, and you’ll need a valid entry ticket to Eden. While you’re there, the whole family can have a go at ice-skating. Prepare to be dazzled at Eden’s Festival of Light and Sound, a tremendous laser show that lights up the night sky, set to stirring music. For most families, it’s just not Christmas without a trip to the theatre… oh no, it isn’t! Hall For Cornwall presents Sleepy Beauty, the final instalment of an epic panto trilogy starring Granville Saxton and our own Kernow King, putting a very Cornish twist on the classic tale. Meanwhile, Bah Humbug!, the Miracle Theatre’s adaptation of A Christmas Carol runs throughout December in residency at Falmouth’s Princess Pavilion. Last year’s show Cinderella was practically a sell-out, so you’ll have to get in quick to secure any remaining seats – with a fantastic cast, state-of-the-art effects and a sprinkling of Miracle magic, prepare to be dazzled! We’re fortunate to have friends in Cornwall – Christmas and New Year are always a special time to visit. Take a walk on the wild side
A clear theme emerged from almost everyone we’ve spoken to: beach walks! Everyone has their family favourites; a local beach that they get to enjoy all to themselves. Highlights include: a cold walk along Porthkidney beach; Porthmeor beach in St Ives and a windy stroll around ‘The Island’, followed by a pre-dinner, very dry Martini made with Curio Rock Samphire gin; the coast path at Rinsey Head down to the engine house, before admiring the fabulous views of Mount’s Bay… the list goes on. That’s the real beauty of Cornwall, one of its great assets – the opportunity to make the morning’s first tracks in the sand as the turkey is cooking.
We plan an epic walk on Boxing Day – ideally somewhere we haven’t been, or a new way to get somewhere. To the top of Brown Willy, or along unused footpaths to Gwithian. Family and friends can share in the sense of adventure and the memories are unique and unforgettable.

Enjoy a beach walk along the South West Coast Path at Holywell Bay on the north coast
Boxing Day, no matter the weather it’s on with the wellingtons and it has to be a walk on our local beach at Porthluney, a dog-friendly beach – at its best when the tide is out. We find sticks and write messages in the sand to photograph and send to friends and family or even post on Facebook now! It’s a fun way to wish someone happy new year from Cornwall – decorate your message with seashells you’ve picked up from your walk across the beach. Jeanette Eustace, Julian Foye, the Furnishers If a gentle amble by the sea is not adventurous enough, you could take it one step further with a Christmas or Boxing Day swim, a fine Cornish tradition. Stick to one of the many organised events in harbour towns and villages across Cornwall – remember, strength in numbers and embrace the cold! You’ll soon warm up round the fire in pub afterwards with a celebratory toast.

Food, glorious food
Whatever you have planned, no doubt some hearty, warming food is on the menu, and the moment we’ve all been waiting for is the big Christmas lunch. “Christmas Dinner is the most important meal of the year for me,” says Scott Buzza, butcher at Etherington’s, “as all of the family get together and spend quality time. As a butcher, I like to eat a bit of everything, so our Christmas tends to be a smorgasbord. The key ingredient however has to be gravy – and the tip to making the most flavoursome gravy is never to waste any of the juices that come from your meat. If you’re cooking a turkey make sure to cook your bird above the gravy on a rack. When carving, carve your meat back into your gravy and then warm for five minutes in a low oven and it’s ‘ansome!” But you don’t need to limit yourselves to turkey. Indeed, with Cornwall known for its freshest seafood, many are switching the bird for a fresh fillet of fish. A keen angler among us recommends a Christmas morning fishing trip. “Nothing beats sea air pumping through your lungs on a wintry morning, followed by freshly caught fish. Of course, it can’t hurt to have some ready in the fridge as a back up!” Our Foodie section has lots of recipes to try.
JACK STEIN “Gravlax is traditionally served in our house at Christmas. Rick loves curing his own fish for a couple of days – it’s beautiful and tastes great. The cure is very simple: four parts salt to three parts sugar, with some white peppercorns. Mix it all together, chop some fresh dill, then lay it out on the flesh of the salmon. Wrap it tightly in cling film, and weight it down in the fridge. Turn it every 12 hours for two days and you’ll notice a lot of juice comes out. Make sure you clear this all off, so it’s not sitting in its own juice. Then after two days, take it out, unwrap it, and slice it down nice and thin on a 45° angle. It’s served very simply, with some fresh horseradish grated into cream, whipped slightly; knock that back with a bit of lemon juice and salt, and serve it with some toast and a bit of lemon wedge – job’s a good’un!” Jack Stein, The Seafood Restaurant

One of my favourite alternative Christmas Days was when we decided to forsake the Christmas turkey for something that required less prep and far less washing up! I pre-ordered some frozen Cornish pasties which I baked in the oven on Christmas morning. We packed up our trusty VW camper and drove over to Gwithian beach to eat our steaming hot pasties overlooking the ocean. For Christmas dinner we normally have some roasted whole fish with all the normal roast trimmings – this year it’s turbot. My daughter Jessie is a mean baker (only 13!), so one of her famous ‘Messy Jessie sticky toffee puddings’ normally tops the evening off!

ornwall is famous for its wealth of beautiful, Grade listed buildings, however as an owner, you have a legal obligation to obtain listed building consent for any alterations you wish to carry out. This includes external and internal changes, as well as those to any buildings on the land attached to the house. It’s a common misunderstanding that no permission is needed for alterations to the inside of listed buildings, particularly in cases involving Grade II listed homes, but this is not the case. Often work may already have been carried out without consent, either by yourselves or by previous owners, which can create an issue should you decide to sell. And, while it may be possible to obtain a retrospective listed building consent for the work, it can often take a lot of time, meaning you could lose your buyer as a result. With this in mind, it’s important you ensure that the relevant permissions are sought and put in place before you enter the marketplace. Andrew Hayes at Court Design & Conservation has the knowledge and expertise to assist owners in this situation, helping with negotiations with the local authority conservation office and the submission of documentation to obtain a decision. What’s more, situations can arise where the work that has been done is so far-reaching and damaging to the

We visit The St Mawes Hotel where contemporary design meets coastal chic, a stone’s throw from the water. he delight in our stay came even before we set foot in the hotel. We chose to take the iconic river crossing on the King Harry Ferry over to the Roseland peninsula. The short, ten-minute trip crosses just 300 metres of water but it takes you a world away. The Roseland is a very special place and at its heart lies the village of St Mawes. The St Mawes Hotel, sister hotel to The Idle Rocks, is owned by David and Karen Richards. The location is outstanding, right on the harbour front of the bustling village. Decorated by Karen herself, the interiors reflect the hotel’s waterside culture and with its ‘toe-in-the-water’ position this rivals the best in Mediterranean stays. The hotel is very much part of the village community with locals frequenting what

has become the coolest spot in town. Think scrubbed wooden tables and striped armchairs where you can sit and relax with a pint and a pizza in an atmosphere that is relaxed and friendly, putting visitors immediately at ease. There is live music on most Saturdays throughout the year in the Lower Deck bar with local musicians playing laid-back tunes. Jazz Sundays are also a highlight with locals and visitors alike enjoying wine, food and conversation. We were greeted by some of the friendliest staff we have known in a hotel – they really did seem genuinely pleased to see us. They were attentive yet unobtrusive, almost magically there when you needed them, but not when you didn’t. We were shown to our room, which was beautiful – understated but elegant, with muted tones that reflected our mood on an autumnal afternoon. The bathroom included a huge shower, a roll top bath and every product you could wish for. The view out across the water was mesmerising as we watched a sailing boat pass by, gently bobbing on the water of the Carrick Roads.
We were here to watch a live performance of The Magic Flute from the Royal Opera House in the recently opened 25-seat cinema room. Complete with luxury leather seats and a 160-inch screen this takes cinema screening to a whole new level as it also available for private hire. We ate in the Upper Deck, as part of the Live Arts Evening, where dining is simultaneously laid back and delicious. We both chose a braised featherblade of beef that literally melted in the mouth and was accompanied by an unctuous pomme puree and seasonal vegetables – Head Chef , Ben Bass, clearly knows his onions!

After dinner we took our seats for the opera showing and it was brilliant to be able to watch in such comfort, with the addition of an incredible sound system. A brief interval allowed us to sample a stunning selection of bite size desserts. Miniature lemon meringue tarts, a chocolate and Cointreau delice and white chocolate and pecan fudge were washed down with glasses of chilled champagne – the whole evening was very special. After a blissful night’s sleep we awoke to that view again. The morning light bathed the water in hues of grey and blue and as we breakfasted, with doors thrown open to let in the sea air, we really didn’t want to leave. The pace of life here seems to slow down and take on its own tempo. Blissfully unaware of the day-to-day goings on, and not giving a second thought to our return to home, we sat in quiet companionship sipping hot coffee and drinking in the view. Having stayed at the ultra-chic Idle Rocks, we questioned whether we would feel as if The
St Mawes Hotel would feel like the poor relative. This couldn’t be further from the truth. Yes, it has a very different vibe, but one that is perfect for an informal night away. Karen’s interiors are stunning in both and the service you receive is, without a doubt, five-star. We are already planning our return in the new year, but for now we will have to be content with the marvellous memories.

We are given the chance to test out the all-new Mazda CX-5, courtesy of Vospers Truro.
W
hen the chance came up to test-drive a brand new car for the weekend, my hand shot up before I even knew the make or model. Luckily for me the car in question was the brand new Mazda CX-5, the brand’s newest mid-size SUV. Turning up at Vospers Truro bright and early on Friday, the car’s bold good looks immediately stuck out as much as my eagerness to get behind the wheel. After a quick demonstration of the car’s built-in and crystal clear HUD infotainment system, I was already an expert. Within two minutes my phone was hooked up, my music was streaming through Bose speakers and the satnav had my route mapped out for me. I must admit I was a little cautious pulling away as, compared to my humble hatchback, this Mazda was a certifiable giant. This initial anxiety slipped away by the time I was in third gear, as the smoothness of the steering and drive gave me the feeling of complete control. How, though, to test a car in a way that is relatable? Well, I thought the best angle for you, our readers (and the easiest for myself) was to see how the car stood up to

the mundane tasks of real life. No scenic excursions across Bodmin Moor, rather, a kid’s football party in a soggy field. The Mazda cruised through this first test – five teenagers with football gear in tow were easy to accommodate, and my only worry was the mud they left on the carpets. Next up a trip to the cinema and with it, a tight parking space. What good is a car if you are too afraid to actually park it anywhere other than the deserted corner of a supermarket car park? The parking sensors, rear view camera and easy handling made this a doddle and duly inflamed the sense of pride I’d gained from driving around in a brand new car. A wet and dark drive home afterwards also highlighted another handy feature – the advanced I-Activsense safety technology, which really did help make for a very comfortable stress free journey home. Driving back to Vospers, Truro on the Sunday, I contemplated my weekend with the Mazda, and I can say that I absolutely loved it, honestly! It looks fantastic both inside and out, the infotainment system is deft, allowing

you to focus on actually driving rather than messing around trying to change the station or destination. To top it all off, and most importantly, the drive was exquisite. Silent and smooth at all times, it’s easy to forget about the 2.2ltr diesel engine, which gives more than enough power when asked for it. The best part is an average fuel consumption of 44mpg – even on Cornish roads – won’t leave you wishing you bought something smaller. Alas, all good things must come to an end. My weekend love affair with the Mazda CX-5 was over and I now faced a downhearted drive home in my own car, which until two days ago, I was more than happy with.

TURBOT ROASTED ON THE BONE, WITH SPROUTS, CHESTNUTS, PANCETTA, ROAST POTATOES AND HOLLANDAISE SAUCE
SERVES 4 INGREDIENTS: 4x 200g turbot troncons 8 medium or large potatoes Approximately 100g duck or goose fat/dripping
O
ne of Cornwall’s best-known chefs, Ben Tunnicliffe boasts a string of accolades and has been an advocate of seasonal Cornish food for almost two decades, experimenting to create dishes that really pack a flavoursome punch! This recipe is an alternative to traditional Christmas lunch, but retains some festive ingredients. Turbot, regarded as the king of fish, can be substituted for another species, but cooking times will vary, depending on the cut.
Save yourself some time by doing some prep the day before: Peel, wash and cut the potatoes, storing in cold water; trim the sprouts and blanch in salted boiling water until tender. Refresh them in cold water, before draining and cutting into halves of quarters. You can also cut the pancetta into lardons and fry in a dry pan until golden brown, as well as cut or break the chestnuts in half. Set all aside until required.
METHOD 1

4 egg yolks 50ml white wine vinegar (reduced to 25ml with 2 peppercorns and a bay leaf) 250g butter Salt and pepper 3
To begin cooking preheat your oven to 180°C, add the fat to a suitable roasting tray in the oven and melt, before adding and turning the pre-boiled potatoes to coat them. Season well and put back in the oven, turning them every 10 to 15 minutes until golden. To make the hollandaise sauce, whisk the egg yolks together with salt, pepper and white wine vinegar, doing so over a pan of simmering water. When the mixture is at ribbon stage (a trail of the mixture will sit for approximately five seconds before merging back into the rest), remove from the heat and slowly add butter, whisking while you do so. Season with lemon juice, salt and pepper to taste. Meanwhile, heat a frying pan for the turbot. Season the fish well, add your chosen oil to the pan and when smoking, add the turbot, white skin side down. Cook until golden then turn onto the dark skin side.
Allow to seal, then place the pan in the oven or transfer to a baking tray, roasting it for approximately 8 to 10 minutes. 4
Now, place a frying pan on a moderate heat and add the cooked pancetta lardons. When they start to sizzle, add the sprouts, allowing them to fry and brown. Next chop your parsley, and add it with the chestnuts when the sprouts are hot through.

To assemble the dish, carefully remove the dark skin by simply peeling it off. Spoon the sprouts, nuts, pancetta and parsley onto four warm plates. Place the roast potatoes to the side and lay the fish on top, before spooning over the hollandaise sauce and serving.

PAN FRIED SQUID, ROCKET AND BALSAMIC SALSA
METHOD 1
Firstly, prepare and slice the squid into triangles and lightly score with a sharp knife. Keep the tentacles to one side.

Next, wash the cherry tomatoes, halve them, before adding them to a bowl with the balsamic glaze and olive oil.

Now add a drizzle of olive oil to a hot, nonstick frying pan and add the squid triangles and tentacles, frying for two minutes. Add the garlic butter and remove from the heat.

Finally, place the rocket on a plate, top with the squid and drizzle with the tomato and balsamic salsa. Serve with a wedge of lemon.

egular readers of Cornwall Living will already have heard that No 1 Rock Road in Rock was taken over in May this year by husband and wife team, Rohan and Emma. As you might expect in one of Cornwall’s premier destinations, the summer flew by, bringing immediate success for the pair (much to their relief!). Now, however, Emma tells us: “We’re concentrating our efforts on our first winter.” “We’re very excited about Christmas and the New Year. With such fantastic views over the estuary and the promise of Padstow’s eagerly anticipated, annual New Year’s fireworks display, we believe that this is the perfect venue for enjoying the festivities.” Since taking over, the couple have firmly established a reputation for great service and a menu that offers wholesome and honest food. While affordable, the whole menu, where possible, is built from local, seasonal produce, and we all know how much difference that can make! There’s also a well-stocked bar, offering a great range of beers, wines, coffees, shakes and smoothies, and in the morning and early afternoon, you
can pop in for breakfast, or enjoy a cream tea – the perfect stop on your walk around the Camel estuary. Rohan is from South Africa, and over the years he’s really honed his ability to cook seafood. In the short time of running the No 1 kitchen, he’s already become known locally for his legendary Seafood Platter. While you’ll need to book this in advance over the winter months, it comes highly recommended! PAN FRIED HAKE WITH DEVILLED BUTTER, CHRISTMAS INSPIRED SPROUT TOPS WITH PANCETTA AND CAULIFLOWER PUREE
SERVES 4 INGREDIENTS: HAKE 4 180g portions of hake 20ml light rapeseed oil Pinch of Cornish sea salt DEVILLED BUTTER 150g Cornish salted butter Pinch of chilli powder Pinch of Spanish smoked paprika

s Truro and Penwith College trains the big-name chefs of tomorrow, the team at Senara Restaurant share a delicious alternative to the classic Christmas dinner recipe. The Senara team is passionate about food and outstanding service, opening for lunch from 12pm until 2pm, Tuesday to Friday, as well as on Friday evenings from 6pm (during term time).

Devilled butter Mix all the ingredients together before rolling into a log using cling film and storing in the freezer.
pan with 20ml light rapeseed oil. Cook the fish on a medium heat and watch the hake turn from pink to white halfway up the flesh.

Cauliflower puree Sweat the cauliflower in butter until lightly caramelised. Add the milk and bay leaf and leave to simmer until the cauliflower becomes soft. Remove the bay leaf, blitz and pass through a sieve. Season to taste.

Pancetta sprout tops Prepare by removing any woody external leaves and pull any remaining leaves away from stalk. Cut out the woody stem from each leaf and set aside. Next, put the pancetta on a baking tray and grill until crispy, then thinly slice.
At this point, warm up the cauliflower puree, blanch the sprout tops in boiling salted water for two minutes. After two minutes, take the sprout tops out and drop into a pan with the salted butter and sliced cooked pancetta. Turn the fish over to flesh-side down, add the devilled butter to the pan and baste the fish until the butter is foaming. Finally, remove from the heat and serve.

s we arrive and park in front of the sculpture gardens, we look up and see one of the many sculptures at the crest of the hill, which seems to be gently swaying in the blustery November wind. The breeze, with its distinct oceanic tang, reminds us of just how hungry we are, so it’s with great purpose that we make our way to the entrance. On entering the restaurant we’re welcomed by the lovely and extremely accommodating hostess, Zoe, who shows us to our table and leaves us to pore over the drinks menu. As usual, we order a bottle of white and set about taking in our surroundings. A stylishly minimalistic décor gives guests a feeling of ‘room’, a pleasant change from other more cramped restaurants. Fabulous artworks by local artist, Sam Bassett adorn the walls. In the corner a fire crackles, warming the room with its comforting glow and creating a cosy ambience with its subtly flickering flames. After an aperitif, we order the first two courses. I opt for the mussels. Cooked in a delicious Thai style curry broth, these are served with a spectacular, saffron-infused flatbread that’s made on the premises. My partner Jess opts for the scallops, served on black pudding with watercress. All in all, a solid start!
For the main course, we both stick to seafood. Jess chooses the market fish (today, cod) with new potatoes and seasonal greens, while I select the plaice fillet, served with croquettes, seasonal greens, and flavoured beautifully with fennel. We’re really pleased to see that, while the food has been expertly prepared and tastes fantastic, the chefs haven’t scrimped when it comes to portion sizes, and it’s fair to say that when we finish, we’re absolutely stuffed! But, full as we are, we can’t help requesting a sweet menu. Indeed, it’s only after polishing off a slice of rich chocolate tart, and a brandy basket full of Moomaid ice cream and sorbet that we grudgingly surrender. The evening has been lovely, and there’s something quite special about veering off the beaten track on a blowy winter’s evening, especially when the hospitality is as warm as it has been tonight. We’ll certainly be returning to Tremenheere Kitchen, only next time we'll be sure to have a lighter lunch!

pen throughout the year, Gylly Beach Café is the ideal place in which to enjoy proper Cornish food while immersing yourself in a stunning coastal setting. Indeed, whether you’re after a steaming mug of hot chocolate to warm your cockles after a walk along the beach, or a meal to satisfy that hearty sea-air appetite, there’s plenty on the menu throughout the day to tempt your taste buds. It’s in the evenings, however, that Gylly Beach Café really comes into its own. Opening nightly as a restaurant, you can expect only the finest Cornish produce on a menu designed and executed by a team of talented local chefs with MasterChef Professional quarter finalist, Dale McIntosh at the helm. What’s more, every Wednesday, between 6pm and 9pm, the team hosts a different theme night. On Wednesday 6th December, for instance, it’s Winter Night, and then on 13th December, it’s Chef’s Night, which gives the kitchen team a chance to really show off their skills. After Christmas, on Wednesday

10th January, you certainly won’t want to miss steak night, which promises to be a sure-fire way of shaking off those post-Christmas blues. The restaurant takes bookings between 6pm and 9pm, except for on Saturdays, and on Sundays, they also offer a ‘roast on the coast’ deal between 5pm and 8pm. For just £12, you can sit down with a full roast dinner and wash it down with a glass of your favourite Cornish beer, cider, or wine. Bargain! Whenever you decide to visit Gylly Beach Café, the chefs take great pride in their food, so you won’t be left feeling disappointed. All dishes are homemade and freshly cooked, and the team even has its own bakery, which means fresh cakes and fresh bread on a daily basis. Just walking past the café is enough to get your mouth watering!

ffering smoked fish, meat and cheese from its very own smokehouse, Tregida in north Cornwall is a family run business that delivers its most sumptuous smoked products and seafood all over the UK. We speak with owner Coralie, who tells us how it all began. “Jon and I met at university, where Jon was studying for a degree in Agriculture and I was working towards a degree in Business. When we graduated, we set up a smoker on my parents’ land in Trelash on the north Cornish coast with my brother, Yan.” She explains how Jon built the first smoker by hand and started producing products that had been traditionally smoked, including salmon and mackerel, in 2000. Since, they’ve taught themselves about the industry and have evolved from a small smokery to one of the most successful independent smokehouses in the UK! In 2010, Jon tells us how they opened their fresh fish-processing site, complementing the smokehouse with great success! “We buy the fish from two markets in Looe and Plymouth where possible, branching out to others if necessary. Looe is a lifeline for the small boats in Cornwall – boats which actually supply the freshest fish – so we do our best to support Looe’s market.” I ask Coralie what’s the best part of running a business in Cornwall.

She tells me: “We love how, despite there being very few smokehouses left in the south west, we’re still here after all these years! Cornwall has and continues to be a wonderful place in which to bring up our family, and it’s made even better by running a business that we love.” Impressively, the company has won lots of Taste of the West Awards for all its products over the years. “We even won best fish for our kippers a few years ago! SERVES 4 INGREDIENTS 100ml white wine 500g live cockles 500g live mussels, beards removed and shells cleaned 30g butter 2 small shallots, finely diced 2 garlic cloves, finely crushed 20g plain flour

year on from when Nick took over and his vision to create a family friendly, reasonably priced menu filled with great quality food is now being realised. Nick is a very ‘hands on’ head chef and loves to create new dishes from locally sourced ingredients alongside his small, but perfectly formed team at The Lookout. With over 23 years’ experience, Nick is still as passionate about food as he was when he started and we’re delighted to be able to share one of his favourite recipes.
METHOD 1
To clean mussels/clams, leave them under cold running water for 12 to 15 minutes, agitating them with your hand every 2 to 3 minutes to release trapped sand.

Add the celeriac, continue to simmer until the celeriac is cooked (about 6 to 7 minutes). By now the stock should have reduced by about a third.

Place the mussels/clams in a pan with white wine and cover with a tight fitting lid. Cook over a high heat for about 3 minutes until the shells have opened and clams and mussels are cooked.

Pan fry the hake portions in a clean frying pan.

Remove the clams/mussels from the pan but keep the cooking liquor, straining through a fine mesh sieve or muslin cloth.
In the saucepan containing stock/celeriac, add the kale, parsley, spring onions and cream, then simmer for 2 to 3 minutes. Check seasoning; add clams and mussels back in.

To serve, divide the sauce/veg/cockles/ mussels into 4 bowls, place the hake on top, then garnish with celery leaves.
4 tblsp double cream 4 spring onions, finely sliced 1 celeriac, peeled and diced 500g kale (pre cook in boiling salted water)

Melt the butter in a clean saucepan, gently cook the pancetta, shallot and garlic. Add the flour and stir over a low heat.

Gradually stir in the cooking liquor from the mussels/clams, turn the heat up, then add the fish stock in 2 to 3 stages, stirring between each. Bring to a boil, and then simmer for 20 minutes.

To pan fry the hake, pat it dry with a clean cloth/tea towel. Heat an ovenproof frying pan of adequate size, add 2 tablespoon of cooking oil. Gently put the hake into the pan skin side down. Leave it alone! Do not shake the pan or try to move the fish. Let it fry for 2 minutes, till you see the edges of skin turning light brown. Put the pan into a pre-heated 195°C oven for 3 to 4 minutes. Take the pan out from the oven; turn the fish over using a pallet knife. Add a good heaped tablespoon of butter. Return to the hob under low heat, basting with butter until the fish is cooked.

Christmas is such a magical time for children. As I type, my own two little ones are busy practising for their nativity and carol concert, filling the house with merry tunes. Their Christmas lists have been written and we are counting down the days on the advent calendar with excited anticipation. The tree will go up shortly and they will take great delight in decorating it (while I desperately try not to rearrange the decs into some semblance of order!). Baking with children over the holidays is fun and fills the house with the glorious smell of spice and warm dough – turn to page 100 for a recipe you can all enjoy making and eating. Mowzer’s back for Christmas! Cousin Jack’s The Mousehole Cat is back by popular demand, returning to Mousehole this Christmas.
T
his festive season, Cousin Jack’s present a magical puppet and live action production of Antonia Barber’s classic children’s story, The Mousehole Cat, at the Solomon Browne Memorial Hall, Mousehole – the village’s former pilchard works. Following a sold-out Christmas residency last year, Mowzer is back by popular demand. Cousin Jack’s Artistic Director, Guy Watson tells us: “Enthusiasm and feedback for the show was so great that we just couldn’t stop Mowzer making a return journey home again this year.” He adds: “The show was so popular with educators in the audience wanting to bring some of our magic to their school that we had to create new children’s workshops this year! All of these have now been snapped up, but do register your school’s interest with us for next year!” This year’s adaptation features many familiar faces, including Mowzer of course, in the safe hands of the hugely talented Bec Applebee, while Bryher Flanders returns as the most loveable Cornish fishwife Dolly, who steers the audience through Mowzer and Tom’s epic adventure. New for this year is a folk driven live acoustic soundtrack, taking influence from traditional Cornish songs performed by local musician, Richard Trethewey.
Families will again have time to marvel at Mousehole’s spectacular lights display, before taking their seats to hear how this west Cornwall village was saved from desperate famine by the brave actions of fisherman, Tom Bawcock, and his faithful cat, Mowzer. Based on a well-known Cornish legend, Antonia Barber’s uniquely heartwarming story is sure to warm the cockles of your heart, almost as much as a hefty portion of stargazy pie! The Mousehole Cat runs from 17th to 31st December, and this year, on 24th and 31st December, Cousin Jack’s have also included two relaxed performances, perfect for adults and children who might benefit from a more relaxed environment, or are uncomfortable with sudden lighting changes or loud noises. Participating in a Bys Vyken Events & Cornish Trails run is a fantastic way to keep fit and discover more of the stunning Cornish countryside and its heritage
put it, “it was an honour to be part of an emotionally charged experienced.” There has been a surge recently in trail running within the UK, especially in Cornwall. “We started from very small beginnings when we planned an outing on social media after attending a Christmas run. We named the event ‘The Cousin Jack Classic Coast Run’. It was to celebrate St Piran’s Day, to give back to a running community that helped to support me personally and as a runner. I had expected 20 people to show up. We had a hundred!” From tiny acorns grow fine oak trees, and the Cousin Jack Classic event is now in its third year, which will include double the distance for the hardcore thrill seekers wishing to challenge themselves on the treacherous section of coast path between St Ives bay and St Just. The route takes in ‘The Tin Coast’ of Wheal Owles (Poldark’s Wheal Leisure), Levant and Geevor, passing over Commando Ridge at Bosigran, and grazing past the ever-wonderful Pendeen Watch. “We broadened our horizons and became a business when we realised the potential for what we were doing. We grew our events
to include Fordh Sen Mighal, which is a race along St Michael’s Way; The Smuggler’s Scuttler, a pirate and smuggling themed half-marathon where you have to gather contraband and escape on foot back to Land’s End; a 5k following the St Ives train from Lelant; The Madness of King George, a 12-hour event running mile loops of the same Memorial walkway; and Cornwall’s longest ultra-marathon following the ‘Cornish Celtic Way’ from St Germans to Marazion which is currently in the making. “Our passion comes not only from the coast but from the runners themselves. Seeing the smiles when crossing the finish lines and personally handing them our carefully and beautifully designed finishers’ medals, and hand painted bespoke slate trophies with Cornish themes is all we need to wake up in the mornings and start planning the next event.” If you want to get fit while enjoying the wonderful great outdoors of Cornwall, why not give it a go yourself?

A STEP IN THE RIGHT DIRECTION If you’re having foot trouble, surgery at Duchy Hospital may help to get you back on your feet.
W
hat better than a walk along the many miles of beautiful Cornish coastline? We’re spoilt for choice when it comes to getting outside and into the great outdoors, but being on our feet for long stretches means we need to look after them! Michael Butler, Consultant Orthopaedic Surgeon at Duchy Hospital, Truro says: “A lot of demand is put on the forefoot.” The foot is an extremely complex structure, made up of 26 bones, 33 joints, more than 100 ligaments and 19 muscles and tendons. In fact, 25% of the bones in your body are found in your feet! According to Michael, a common problem is Hallux Valgus or ‘bunions’, causing a deformity at the base of the big toe. The enlarged joint can become inflamed as extra bone and tissue swelling grow, which may cause painful rubbing on previously comfortable shoe wear, as well as pain and deformity in the lesser toes. Initial steps involve adjusting your shoes or getting ones with a wider fit. Often, referral to a podiatrist can help advise on footwear and exercises, often leading to the recommendation of a special insole for your shoe. Anti-inflammatory medication
can also help. In more severe cases, corrective surgery may be useful, but only if conservative measures prove unsuccessful. Another common condition is Hallux Rigidus, or arthritis of the big toe, causing the toe’s base to stiffen. This can be very painful and lead to bone spurs. As it progresses you may notice a prominent bump, which will affect your gait and potentially contribute to metatarsalgia, forcing the lesser toes to work too hard. If conservative treatment fails, then injections or a big toe fusion, or, in rare cases, a partial joint replacement may help. Other conditions include claw toes, hammer toes and mallet toes, which may cause severe pain and rubbing, or may contribute to metatarsalgia. Again, conservative measures are always the first option, measures such as a podiatry review, orthotics and a review of footwear. Surgery should only be considered as a last resort, bearing in mind that there are risks as well as benefits. With proper patient selection and appropriate surgery with an expert orthopaedic surgeon, there is a very high chance of success in most patients. Surgery aims to improve symptoms, not provide a cure, and while there can be some associated complications, such as numbness or poor alignment, studies have shown that more than 90% of patients are satisfied with the result. If you suffer with foot pain, perhaps it would be useful to consult an expert to ensure you have the correct diagnosis and treatment.

There are plenty of allowances to consider when it comes to tax benefits. Matt Begley, financial expert, takes a look at a few of the main ones.

nheritance Tax (IHT) is a fairly emotive tax, as many view it as double taxation. A tax paid by the beneficiaries on money that may have already been taxed throughout the life of the person providing the inheritance. As it stands, the individual threshold is £325,000, and beyond that there’s 40% tax to be paid. Married couples and civil partners can also combine their thresholds meaning the last remaining person’s estate can be worth £650,000 before the 40% tax is applied. Additionally, the new ‘home allowance’ may also be applicable – the Residence Nil Rate Band (RNRB) – which is designed to make it easier to pass on the family home to direct descendants without incurring IHT. This will be phased in gradually from the 2017/18 tax year and (if the value of the estate is less than £2m) it could increase each individual’s threshold to £500,000 by 2020/21. Thereby, raising the threshold for a couple to £1m before the 40% tax is payable. An Individual Savings Accounts (ISAs) is one of the most obvious and available tax-saving devices. An ISA is basically a ‘wrapper’ into which you can place cash or stocks and shares up to a certain limit each year. For the 2016/17 tax year the total individual limit was £15,240. For 2017/18, it’s even better, as the individual threshold now stands at £20,000, which means that a couple, for example, could invest up to £40,000 in this period! Any interest, income or growth that you receive within an ISA will be free from any personal liability to Income or Capital Gains Tax. To give you a feel for what this could amount to, consider this. If someone used up all of their individual ISA allowances since
its launch in 1999 (including the 2017/18 tax year), this could have added up to over £186,500 of contributions, with any growth on that amount being sheltered from tax! According to HM Revenue & Customs, 150,000 married ISA savers die each year. Tax benefits can now even be applied to ISAs beyond a person’s death, if it’s passed onto the surviving spouse, or civil partner. In the past, the ISA tax ‘wrapper’ passed away with its owner, and the money that had been sheltered became liable for Income and Capital Gains Tax, but rule changes mean that it can be passed on tax-free at death to the surviving spouse, or civil partner. The surviving partner is then able to invest as much into their own ISA as their spouse/civil partner had at death, on top of their usual allowance. However, the tax-efficient wrapper of an ISA does not apply if, for example, the surviving partner then dies and the ISA was left to another family member or beneficiary. In this instance, it may be subject to 40% tax, if the IHT threshold for the estate was exceeded, unless you’ve planned accordingly.

n i g e b n w o d count This advent, Cornwall Hospice Care marks the run up to Christmas with its very own online Advent Calendar.

he calendar can be found on the charity’s website and social media, with each day featuring interesting and often little-known facts and figures about this local Cornish charity. Christmas is a time for togetherness and reflection, so the calendar complements the charity’s seven Light up a Life remembrance services, its family-fun Santa Runs, and the care its staff and volunteers deliver, which the team hopes will help their patients and their loved ones forge treasured memories this Christmas. It aims to celebrate all the different elements of the charity, sharing information about its teams at St Julia’s Hospice in Hayle and Mount Edgcumbe Hospice in St Austell; its therapists out in the communities in its newly launched Neighbourhood Hubs; its 31 charity shops across Cornwall; the variety of fundraising events that take place, as well as the thousand volunteers that help to support all of this. The calendar begins on Friday 1st December, showing that just £1 will buy a Lottery Christmas Prize Draw Ticket, presenting a chance to win £2,000! It will then run up until Christmas Eve, illustrating the charity’s specialist care work 24 hours a day, seven days a week. The Cornwall Hospice Care team tell us they would like to wish everybody in Cornwall a very happy Christmas, and to send a thank you to all of their supporters for helping to fund the care in 2017. Dawn Tame-Battell, the charity’s Director of Patient Services, says: “The aim of our charity is to make as much difference as we can to as many people as people as possible who are coping with a terminal illness. Thank you again for helping us to achieve all that we do in and for Cornwall – we couldn’t do it without you!”
