Georgina Young, Brewing Director at St Austell Brewery, gives us her recommendations on some perfect food pairings.
If you’re looking for something different to try with dinner, you may already be asking yourself the age-old question ‘red or white?’.
However, says Georgina: “I can safely say St Austell’s IPA, Proper Job, should be what you’re reaching for!”
Whilst it may not be the obvious choice to opt for a pint over a glass of wine with a meal, Georgina explains that there’s something special that a beer can add which some wines just cannot rival. “Proper Job cuts through fats, complements the punchier flavours of a dish and contrasts to wake up the senses and ignite flavours you might not otherwise have recognised,” she explains. “Due to its large hop load, the beer will clear and refresh a palate with ease for rich and creamy dishes, working brilliantly with favourites like mac and cheese or deep-fried camembert!
“It also complements roasted garlic, sweet onions, rosemary, thyme, sage and citrus peel, and its bitterness will even help to balance salt in dishes. Sip a glass with miso and chilli glazed aubergine, which harmonise with the tropical
pineapple and grapefruit flavours that Proper Job brings to the table, and serve it with sticky coconut rice, bok choy and roasted tender stem broccoli. Garnish with toasted sesame seeds, fierce chillies and sweet pomegranate and you have a culinary pairing that promises to deliver a burst of flavour with every mouthful.”
This punchy IPA pairs with favourites from the summer grill, too. As Georgina explains: “It contrasts with a range of smoky barbeque flavours like ribs, crispy chilli cauliflower or chicken wings and, if you’re in the mood for a south-east Asian curry, it’ll help to ease those punchy flavours, too. Proper Job is brewed to stand up to some big flavours, both savoury and sweet, in fact it will easily boost sweet treats like a juicy carrot cake, too!”

Being half Chinese/Malay and half Mãori, cooking on fire is perfect for the Asian dishes that he’s heavily influenced by. Jude has recently introduced a Josper grill into his kitchens so that he can bring that heavenly smoky flavour you get from cooking over a BBQ to his new summer menus.
“This summer, will see a plethora of grilled items coming on such as lobster, whole fish, squid, octopus, and a hot-grilled seafood plate... mackerel will be fantastic on it too. We’ll also be serving hot-grilled peaches and apricots with vanilla ice cream and raspberries that will surely be a hit in the summer weather,” says Jude. “I love eating lamb but especially when they are a little older and tastier. To be honest I prefer hogget which is a sheep which is one to two years old. A good way to serve BBQ lamb is with this recipe of peperonata which is sweet with slow/ medium cooked peppers, tomatoes and onions with a punch of herbs from the salsa verde and splash of vinegar to cut through the lamb fat. The anchovies in the sauce are a perfect marriage with the lamb. Pan frying the lamb is also fine as an alternative.”
BBQ GRILLED LAMB CHOPS WITH PEPERONATA AND SALSA VERDE
METHOD
1 To make the marinade, mix all the ingredients together in a bowl. A few hours before grilling, coat the chops thoroughly in the marinade.
2 To make the salsa verde, first put the olive oil and the herbs in a jug blender and blitz until smooth. Stir in all the other ingredients and season with salt and pepper.
3 To make the peperonata, first heat the olive oil in a thick-bottomed or cast-iron pan over a medium heat, then add the sliced garlic and cook until just going golden. Then add the peppers and onions and cook until softened and starting to colour slightly.

INGREDIENTS
For the Lamb:
4 Add the passata and tomato purée and cook until the tomatoes have reduced. Finally, season with the sugar, salt, pepper and vinegar.
5 When you are ready to grill, season the chops and then cook on each side on a high heat until brown and caramelised. About 4 minutes on each side will make them medium rare. Allow to rest for at least 10 minutes.
6 To serve, warm the peperonata if necessary, then spoon into the middle of each plate and place the lamb chops on top. Drizzle all over with the salsa verde. If you fancy making it more substantial, serve with rosemary roast potatoes and a rocket salad.

150ml olive oil
For the Salsa Verde:
80g basil, picked
80g flat-leaf parsley, picked
100ml extra virgin olive oil
1 clove garlic, minced
1 tbsp capers, chopped
2 tbsp gherkin, chopped
4 anchovies, chopped
1 tsp Dijon mustard
2 tsp white wine vinegar
1/2 lemon, zest and juice
For the Peperonata:
200ml extra virgin olive oil
6 cloves garlic, sliced
5 red peppers, sliced
5 yellow peppers, sliced
2 medium white onions, sliced
250ml passata
3 tbsp tomato purée
3 tbsp caster sugar
3 tbsp red wine vinegar

Each feast includes a variety of dishes such as colourful salads, dips, grilled marinated vegetables, and extras like seeded cracker crunch and herby aioli. Picnic packages offer a fun collection of finger foods including cheese and spinach pies, Thai watermelon wedges, Cornish charcuterie, pickles, Reuben sandwich fingers, and sweet treats like sour cream raspberry pots. The BBQ
package elevates simple sausages into a party with mega salads, aubergine caponata, smoky Gouda cheese straws, minty courgette tzatziki, egg yolk choc chunk cookies, and more.
They’ve also catered for bespoke events, such as a recent 50th birthday weekend, creating three unique evening meals for a houseful of guests. Tailoring menus to special events is one of their passions.
Despite spring’s challenges, keeping up with local food events and sourcing the best produce was exciting. From small beginnings, Bluntrock Brewery has gained much acclaim for its smallbatch, high quality beers, brewed just a few miles from the north Cornish coast.
Here you’ll find George and Hugo, a modern brewer and craft beer enthusiast who joined forces to open a nanobrewery and taproom, with the goal to share their passion for world class beer. Built out of second-hand shipping containers, the Taproom opened its doors in spring 2021 on the north Cornish coast, with brewing beginning the following winter. Serving their beers on-site affords Hugo and George complete control over the quality of their beers, giving a guarantee that the beer will always be in prime condition when it’s served.
Taking up the story Hugo explains, “We use modern brewing techniques, pure Cornish water from our borehole, traditional English malts, a range of English, European, American and New
Zealand hops, fresh liquid yeasts and a range of local fruits and plants in our special brews. All of these ingredients go to create the delicious and diverse beers that you can enjoy in our taproom. And soon enough you’ll be able to enjoy them further afield!”
Such has been the success of Bluntrock’s stable of beers that Hugo and George have just announced that they will be expanding into a new, state of the art brewery some ten times the size of their existing one, but literally just down the road. The new brewery will not only allow them to grow their incredible community, but to achieve new heights of innovation and quality in their brewing techniques. “The expansion, which has included investment in progressive technology, also helps us to continue to operate
in the most sustainable, inclusive and honest way possible. These progressive systems include CO2 recovery, solar power and an onsite bore hole, all of which pull us closer to net zero. It’s worth adding that we will be the very first brewery in Cornwall to have a CO2 recovery system installed. We are going to aim for a B-Corp certification within the first two years of our expansion, as well as working with Zevero, a leading carbon accounting firm, to monitor the carbon emissions of our supply chains, processes and finished beers.”
Two new brewers joined the team this spring, giving Bluntrock a combined brewing experience of over 20 years. Hazy pale ales, IPAs, unfiltered lagers and traditional cask ales will be made in the new brewery, while the smaller brewing kit on the Taproom site
will be reserved for monthly explorative special brews and recipe development. The vibrant container taproom in St Minver will continue to act as a place for the Bluntrock team to share their passion for fresh, diverse styles of beer, and also to continue to host its hugely popular live music events with a focus on jazz, blues and groovy vinyl nights. An exciting selection of street food trucks including local favourites Dank Franks, Fat Pepper and Sourdoughlicious will be back at the Taproom over the summer.

“We source from small-scale, passionate suppliers,” Jay adds, “such as the fantastic Pasha from Pasha’s Patch, who sends us beautiful herbs, fruits and vegetables, and asks only to be treated to an occasional meal in lieu of payment. We also supply a good deal of the ingredients ourselves, either via Harry’s many foraging escapades, or produce from my own

Sustainability is hugely important at The Mulberry, with an aim to produce as little waste as possible by making every effort to use every part of an animal, fruit or vegetable. “We order in whole cuts from Philip Warrens and butcher the meat ourselves.” Harry continues. “That way we are able to utilise off cuts of meat which may otherwise go to waste. For example, whilst the premium cuts are used in our pork tenderloin dish, offcuts from the pig help create the quail scotch eggs currently on our menu. From our whole lamb saddle we take the saddle fillet off and turn the lamb belly into lamb bacon or salt lamb to be utilised elsewhere on our menu. Left over parts of fruits may go into making gels or sorbets, and vegetables into stocks.”

‘Friendly greetings’ from Jumunjy, Cornwall’s most southerly Thai restaurant.
Exchanging the vibrant party-life of the Thai island Koh Phangan for the equally idyllic, albeit more leisurely life of the Lizard Peninsula; the evolution of Thai restaurant, Jumunjy, is a tale best told over an evening of spicy food and cold beer.
It’s a tale of growth and family, and begins with owner and Head Chef, Phansa ‘Bim’ Takun. Growing up in northern Thailand, Bim helped her mother sell street food at village festivals, her aunt’s wholesale business, and her family-run distillery responsible for making Lao-khao ‘Thai Moonshine’. Now, along with husband Tristan and the support of his dad and brother, Bim continues to cook the authentic Thai food that Cornwall has come to know and love.
Before their move to Cornwall, the couple spent many happy years living on Koh Phangan, serving food and drink to travellers from all over the world. During that time, they learned how to cater for a wide range of tastes, taking advice and learning recipes, always expanding their menu and skills. They eventually made the move to Cornwall in 2010, introducing Thai Tuesday, an event that quickly became a sell-out, and with the knowledge that their dream was within reach, they began to build their very own Thai kitchen.
