Whena 25-year-old Bill Fisher joined the New Holland Farmers Fair board in 1972, phones were still attached to the wall, “google” was just a funny word, and those wishing to compete in the New Holland Fair had to belong to the New Holland Community Club, of which Bill was a leader.

“I was in charge of the pig department,” said Bill, who noted that the club was run through the Lancaster County Extension. “We would get the pigs in the spring and weigh them and tag them, and (the contestants) would show up with those two pigs,” recalled Bill, who said when the system was restructured, the club moved to the county level. He noted that the open county-level competition brought in about twice as many pigs as the local show had. Bill pointed out that the timing of the New Holland Fair makes it unique

in the countywide livestock competition because animals that are not at the right weight for the Denver or Ephrata fairs have a chance to compete.

Taking over leadership in the swine show came naturally to Bill, who worked with his father, Earl Fisher, on the Stauffer Homestead Farm near Goodville from the time he was 12. “I came out of high school and my dad gave me free charge of the pigs,” said Bill, who added that at that time his father managed the farm for ABC Groff. Bill began exhibiting in the fair around age 11, later joining the board along with his father.

Currently, the livestock judging takes place in a fenced area near the New Holland Sales Stables, but when Bill began volunteering, it was in the parking lot of what was then Earl Sauder’s Feed Mill. Sensenig’s Feed Mill is located there now. Bill praised the Sales Stables for help in this area. “They work with us

100%,” he said. “If it weren’t for them, we’d have a tough time (holding the competition).”

One of the big changes Bill has seen was the purchase of the Meke building, originally a tobacco warehouse and later a sewing factory, on the corner of Franklin Street and Roberts Avenue in June 2009. “We hope to remodel the building,” said Bill, who noted that the fair board is working with local legislators to obtain grants for the project. “We’d like to make it more of a community building,” he said.

Bill has served as vice president for the fair, and in 2018 and 2019, he served as president. More often, he has worked with Bob Lauffer, former Garden Spot High School agriculture teacher and Grassland FFA adviser, in overseeing the livestock competition. He recalled that sheep were added to the competition around the time Lauffer joined the fair organizers in 1990.

Nelson Coblentz, who, along with his wife, Sarah, answered God’s call to form Gospel Express in 1984, has some words of advice for married couples. “A happy marriage is a union of two forgivers,” said Nelson, who is in his 49th year of wedded bliss with Sarah. “The whole theme of forgiveness is one of the biggest things in a marriage relationship.” With a chuckle, he added, “Keep forgiving and give flowers.”

The partnering of food and football at Fairmount has resulted in a win for all involved. On Nov. 1, Fairmount, 333 Wheat Ridge Drive, Ephrata, kicked off its fourth food drive in three years. Tours To Re-create Wedding Preparations

Historic Ephrata Cloister, 632 W. Main St., Ephrata, will host its Lantern Tours daily from Tuesday to Friday, Dec. 27 through 30. Tours will

start every 30 minutes beginning at 6 p.m., with the last tour at 8:30 p.m. The Student Historians, high school volunteers, will

play the parts in a retelling of the true story of a Ephrata Sister and her intended marriage to an indentured servant working for Broth-

ers. Surviving records suggest the events surrounding the marriage took place about 1750. Preparations for the wedding in this telling will require creating Fraktur artwork, tailoring a suit for the groom, and making a cake. The fictional Frau Fahnestock will lend her talents in planning.

Christmas Dinner Planned

A Christmas dinner will be held on Sunday, Dec. 25, at the West Earl Fire Company, 14 School Lane, Brownstown. The meal will be served free of charge from 11 a.m. to 1 p.m. to anyone unable to afford a dinner. The meal is sponsored by three Brownstown area churches: Carpenter Community Church, Emmanuel United Methodist Church, and Ebenezer EC Church.

Tips For Holiday Cookie Cutting

Baking is a tradition in many households, and goodies include cakes, pies, and cookies. Cookies are a tradition passed down through the ages. In medieval Europe, small spiced cookies were exchanged as treats, and people still bake and share gingerbread cookies today.

Cut cookies are especially prominent during the holiday season, with some families having favorite cookie cutter shapes and dough recipes. Certain techniques can make baking sessions easier and help to ensure consistent results any time of year.

Working on a lightly floured, cool surface, such as a cutting board or stone counter top, is recommended. Bakers should never work on a warm surface, which can cause dough to spread and stick.

The dough can be rolled out between two sheets of baking or parchment paper to prevent it from sticking. Betty Crocker recommends a thickness of about 1/8 inch, unless noted in the recipe. The parchment paper also enables rolled-out dough to be easily transferred to a refrigerator or elsewhere.

When rolling out dough, portioning the dough into a few smaller amounts allows it to roll out more easily. This will also help it to chill more readily.

Cookies cut most easily

when the dough is chilled. The dough should be refrigerated for as long as possible, ideally an hour or more - even overnight. The more chilled, the firmer the dough will be.

Rubber rolling pin rings that slip onto each side of the rolling pin can help ensure that the dough is being rolled out to a uniform thickness.

Cookie cutters should be dipped in flour with each cut. It is a good idea to work from the center and move out to the edges when cutting out designs. When cutting, it is a good idea to maximize space and avoid scraps and rerolling.

Some expert bakers say that metal cookie cutters cut cleaner than plastic ones. Whichever cutter is used, the cookie should be cut by pressing straight down. The cookie cutter should not be twisted or jiggled when being used. Doughs with a high butter content can help, as the extra grease helps separate the dough from the cutters.

If cut cookies have gotten warmer, placing them in the freezer for a few minutes will help them firm up again before baking. This will help to ensure the cookies will not spread or become misshapen while baking.

Extra steps may seem like they will take a lot of time. However, the extra effort and attention to detail may help produce better results.

Christmas Bird Count Announced

Since 1900, the National Audubon Society has conducted a bird census called the Christmas Bird Count with much of the leg work done by volunteers. All levels of birders can help, including backyard bird watchers. The data collected has been used for studying bird population trends, migration patterns,

and conservation policy.

The Lancaster County Bird Club will offer several opportunities to participate in the count. Interested persons will be assigned to a team with leaders who are acquainted with their areas. Backyard birders should register with the contact person before the count to

determine if their home is within the count circle and to receive instructions.

Nelson and Sarah will sing and share their advice at the eighth annual Restart Training Center Ministry (RTCM) Valentine Banquet to be held at Faith Mennonite High School, 5085 Woodland Drive, Kinzers, on Tuesday, Jan. 31, 2023. Doors will open at 5:30 p.m., and a fellowship meal, catered by Shady Maple, will begin at 6:30 p.m. RTCM is an organization that strives to help men who have turned to abusing chemicals or have developed other kinds of addictions.

Gospel Express has focused on prison services and crusades, evangelism, revival meetings, discipleship materials, and more in the United States and Canada, as well as internationally. Nelson and Sarah and their five children traveled and lived for many years in a 40-foot bus. “How do you keep a marriage alive on and off the road?” asked Nelson. “You are doing marriage living in a glass house, which means you’re visible to everybody and you are under the microscope.” Nelson and Sarah have negotiated the years successfully, bringing their adult children and now grandchildren into the ministry. “We have been able to minister three generationally for the first time stateside and internationally,” said Nelson. “That has been a dream.”

Jaime Santiago, founder and executive director of RTCM, noted that the Coblentz team is a good fit for the banquet because of the couple’s devotion to each other and experience with prison ministry.

“(Gospel Express) helps people in prison, and a lot of people in prison suffer from trauma and addiction,” said Santiago, who added that the organization evangelizes and disciples inmates in the U.S. and Canada. “We are trying to evangelize

and disciple broken people,” explained Santiago.

Currently, RTCM is graduating about a dozen students a year and mounting a capital campaign with the goal of purchasing the former Strasburg Elementary School. “The old elementary school building would be a good fit for us, and it would allow us to expand and add a second phase to the program,” said Santiago. Goals for the second phase, which would offer 12 beds, are to provide rooms students could rent while working locally.

RTCM would continue to provide meals, transportation, and a supportive environment.

“We could house 40 students and up to 10 live-in staff members,” said Santiago, who noted that the goal is to raise $1.3 million to purchase the building and a total of $1.6 million with renovations included.

Bringing together food and football for a touchdown was the brainchild of housekeeping employee Andy Miller. The goal was for employees to put food items on tables designated for either Steelers fans or Eagles fans. A few rogue Cowboys fans devised their own play to score donations in their team’s name.

Among the food items requested by the organizers were canned goods, such as corn; baby foods; pasta sauces; salad dressings: mayonnaise; and crackers. Carol Swailes, Fairmount public relations coordinator, said that she had seen donors delivering cases of soup and ketchup as part of a strategy to add to the contributions. Seibert noted that most donations are made by Fairmount team players, including staff members and residents in independent living.

At the end of the drive, Eagles fans had out-collected Steelers fans to reach the endzone. “(The winners) get the satisfaction of knowing they helped tackle hunger,” said Keim with a chuckle.

“There’s a second and third generation of members (taking part) now,” said Bill. “There are parents that were the children at one time bringing their children (to compete).” Bill added that he believes raising livestock is educational. “It teaches the kids life skills, a good work ethic, and money management skills,” he said.

“I like working with the kids.”

Bill recently received a special award for his five decades as a member of the fair board.

Toy labels are good sources of information, but shoppers must know what to look for. The American Academy of Pediatrics (AAP) notes that toy labels include information about ageappropriateness (such as “Ages 3 and Up”) as well as directions regarding how to use the toy. If the instructions seem a bit complex for the child the item will be for, look for something else. Children’s toy labels also include information that consumers may not be familiar with. For example, toys labeled “ASTM F963” meet the latest safety standards from the U.S. Consumer Product Safety Commission. An “ASTM D4236” label indicates the materials associated with an art toy have been reviewed and deemed safe by a toxicologist. More information about toy label requirements can be found at www.cpsc.gov. The AAP advises that electric toys should only be given to children if they include the UL label, which indicates that the toy has been certified by the global safety certification company UL.

The AAP notes that toys that are loud, shoot objects into the air or contain small pieces pose a threat to children. Toys that are too loud can damage children’s hearing, and projectiles can increase the risk of eye injuries or choking. Toys with small pieces also pose a choking risk to young children who may try to put the pieces into their mouths.

Consumers who are uncertain about the safety of a given toy, even after reading its label, should err on the side of caution and only give toys they are confident will not pose a safety risk. Even toys that may seem safe could be dangerous to kids who might otherwise seem old enough. For example, the AAP advises against giving children under age 12 hobby kits and chemistry sets. That is because such kits may contain dangerous chemicals that even preadolescents are not old enough to handle safely.

Medical Students Win Scholarships

Five area students were selected as recipients of the 2022 Lancaster Medical Society Foundation scholarship awards. The competitive process, which makes selections based on character, motivation, academic achievement, and financial need, included submissions from applicants throughout Lancaster County.

As part of the application, students were required to write an essay explaining why they have chosen to pursue a career in medicine. The selection committee chose the awardees through a blind review process.

This year’s recipients are Launick Saint-Fort of Ephrata, Nicole Hanselman of Manheim, Hannah Kuntz from Elizabethtown, Rhea Sullivan from Landisville and Kevin Chao of Lancaster.

Saint-Fort, a trauma research coordinator, graduate of Penn State Berks and first-year medical student at the Pennsylvania State College of Medicine, was awarded $4,500. For Saint-Fort, whose younger years were spent as a child slave in Haiti, medical school and a potential career as a physician were beyond her wildest dreams. She noted that in childhood, she contracted various illnesses that could have been prevented with quality medical care, which was not available to her.

Hanselman, an Elmira College graduate and research specialist currently in her first year at Saint James School of Medicine in Illinois, received a $3,500 award. She explained that her passion to pursue medicine was conceived in a small orphanage in Vietnam, where she lived after losing

her parents and oldest sister. Placed in the orphanage at age 7, Hanselman was assigned to care for the sickest babies, but could only do so much to ease their pain and suffering.

Kuntz, a former medical assistant with AmeriCorps and a graduate of Rochester Institute of Technology, is a first-year student at the Pennsylvania State College of Medicine. Her passion for medicine was fostered through her volunteer experiences working with underserved populations in Lancaster city and later in Rochester, N.Y.

Sullivan, a fourth-year M.D. and Ph.D. student at the Pennsylvania College of Medicine and a graduate of Pennsylvania State University Schreyer Honors College, shared that her decision to pursue a career in medicine came after experiences she had in college, including witnessing the deaths of both a fellow college student and then a neighbor as a result of addiction.

Chao, a former medical scribe and volunteer smoking cessation counselor, is a Saint Joseph’s University (formerly University of the Sciences) graduate and second-year student at Drexel University College of Medicine. Chao’s choice to pursue medicine grew from childhood experiences with the health care system. Born with a heart abnormality that was incredibly difficult to manage, he credits his parents, pediatrician and cardiologist for their tireless care, giving him a life that he would not otherwise have had.

Chao, Kuntz and Sullivan were all awarded $2,000 scholarships.

If you look out your window on New Year’s Day, you may see a crowd of motorcycles zooming down the road. They are part of an annual ride to benefit veterans.

“We take the same route every year, and people know about it, so they come out and kids come out holding flags and cheering us on,” said Tyler Stumpf, one of the event organizers. “It’s become a New Year’s tradition.”

The is the 14th year for the event, which will be held on Sunday, Jan. 1. Registration will begin at 10:30 a.m., and the ride will leave from the Walter S. Ebersole American Legion Post 185, 255 W. Main St., Mount Joy, at 1 p.m. The ladies auxiliary will serve breakfast items before the ride.

The 25-mile ride will follow a route along the Susquehanna River and conclude at the

Elizabethtown American Legion Post 329, 240 N. Hanover St., where a pork and sauerkraut meal will be served following the ride. An auction will be held there as well, featuring items donated by local businesses. T-shirts and patches will also be for sale. Proceeds from the event will benefit veterans in the Lebanon VA Medical Center. Since its inception, the ride has raised more than $240,000, Stumpf said, adding, “We will hit the quarter-million mark this year.”

Each year, the event includes fun traditions such as Baby New Year, when a participant is chosen for the honor and must attend in a baby costume and sash. This year’s honoree is Brian Landvader.

Over the years, the ride has grown significantly, Stumpf said. “We started with 11 motorcycles, and now we’re averaging about 400 motorcy-

cles,” he commented. “When all the bikes are lined up on Main Street in Mount Joy, it’s really something to see.”

Billy Hecht, who is also helping to organize the ride, said the event has continued to be popular because it not only offers a fun excursion for participants, but it also supports an important cause. “A lot of people like that the money stays local,” he noted.

“One hundred percent of the money goes strictly to the veterans’ needs.”

The event will be held rain, snow or shine, and participants are encouraged to come with any form of transportation. “You don’t have to come with a motorcycle,” Hecht shared. “You can drive a car or a truck. You can come in any vehicle.”

Tippetts/Weaver Architects Honored With Award

The American Institute of Architects (AIA) Pennsylvania recently named Tippetts/Weaver (T/Wa) Architects of Lancaster as the recipient of the 2022 Architecture Firm Award.

This is the first time since its inception in 2013 that the award has been given to a firm with a female founder. Wendy H. Tippetts is one of the two founding partners of T/Wa, and for more than 30 years she has led the design direction and culture of the firm.

The Architecture Firm (of the Year) Award recognizes a Pennsylvania firm whose passion and practice have produced notable architecture for at least a decade. Deserving firms have demonstrated excellence in design and leadership through any combination of the following criteria: the breadth and/or depth of their portfolio, a healthy firm culture, influence on the practice of architecture and exemplary outcomes for clients and/or society.

T/Wa was chosen from a pool of four nominees submitted to the committee by the nearly 3,000 members of AIA Pennsylvania. T/Wa is not only the first firm from central Pennsylvania to have been

chosen for the award, but also the smallest.

Working in the small cities, towns and rural places of central Pennsylvania, T/Wa mixes a modern aesthetic with an historical context. The firm’s projects include the Fulton Theatre expansion and Actor’s Housing; the Lancaster Science Factory; the Pennsylvania College of Art and Design; Lancaster Conservancy in Lancaster; Historic Fairmount affordable housing; Keystone Kidspace; St. John the Baptist Episcopal Church in York; Newville Town Center mixeduse housing/commercial in Newville; Bucknell University; Barnes & Noble Bookstore in Lewisburg; and numerous residences, including new construction, renovation and adaptive reuse across the area.

A Master Watershed Steward information session for Dauphin, Lancaster, and Lebanon counties will take place on Thursday, Jan. 12, 2023, from 6:30 to 7:30 p.m. via Zoom. The MWS program seeks to educate and empower volunteers to do watershed projects and education in their communities.

Master Watershed Stewards teach adults and children about water quality, wildlife habitats, and the environment; develop educational materials; organize and conduct educational events, stream cleanups, and invasive plant removal projects; design and maintain demonstration gardens; con-

duct stream monitoring projects and research; research and write newsletters and online articles; and partner with municipal officials on projects, such as bioswales, rain gardens, native meadows, and other green stormwater management solutions.

The Lancaster County Bird Club (LCBC) will offer a Harold B. Morrin Scholarship to two individuals. The annual scholarship will be awarded to one youth ages 12 to 18 and one adult. The deadline for applications is Saturday, Dec. 31.

The scholarship is designed to promote or develop an interest or leadership in natural history and the environment, with a preference given to the field of ornithology.
