Because cans seal in foods’ nutrition, freshness and flavor, they
are one of the best ways to get food from its source to your table. Canned foods not only mean less preparation, but they also ensure that you have quality ingredients on-hand year-round – especially during the winter months. As temperatures fall and your to-do list grows, don’t let your packed schedule compromise sharing a heart-warming, homemade meal with your family. Simply reach in your pantry – your “Cantry” – and unlock the goodness of canned foods that can help you make meals, such as Vegetarian Three Bean Chili or Pumpkin Mac and Cheese, in no time.
Vegetarian Three Bean Chili Prep time: 5 minutes Cook time: 20 minutes Servings: 6
2 tablespoons vegetable oil 1 large onion, diced 1 large green pepper, seeded and diced 2 large garlic cloves, minced 1 tablespoon chili powder 1 teaspoon ground cumin 1 can (28 ounces) Red Gold Crushed Tomatoes
1 can (16 ounces) Red Gold Diced Tomatoes 1 can (15.5 ounces) Goya Pinto Beans, drained and rinsed 1 can (15.5 ounces) Bush’s White Kidney Beans, drained and rinsed 1 can (15.5 ounces) Progresso Red Kidney Beans, drained and rinsed 1 can (4 ounces) Old El Paso Chopped Green Chilies, drained 1/2 teaspoon salt 1/4 teaspoon chipotle Tabasco pepper sauce chopped parsley (optional) shredded cheddar cheese (optional)

In large saucepan over medium heat, in hot oil, cook onion, pepper and garlic until softened, about 5 minutes. Add chili powder and cumin, cook 1 minute.

Add crushed tomatoes, diced tomatoes, pinto beans, white beans, red beans, green chilies, salt and Tabasco sauce. Over high heat, bring to boil; reduce heat to low. Cover and simmer 15 minutes to blend flavors, stirring occasionally. If desired, sprinkle with parsley and cheddar.
Pumpkin Mac and Cheese Prep time: 20 minutes Cook time: 30 minutes Servings: 4 8 ounces rotini or medium shell pasta 5 tablespoons butter, divided 1/4 cup all-purpose flour 1 can (12 ounces) Nestle Carnation Evaporated Fat Free Milk 1 cup milk 1/2 cup Libby’s 100% Pure Pumpkin 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1/4 teaspoon ground nutmeg 2 cups shredded Swiss or Gruyere cheese 1 cup shredded cheddar cheese

Cook pasta as package directs. Drain. Set aside.

Heat oven to 375 F. Grease 1-1/2 quart baking dish. In 4-quart saucepan over medium heat, melt 3 tablespoons butter. Stir in flour; cook 1 minute. Gradually stir in evaporated milk and milk, cook until mixture is thickened and smooth. Stir in pumpkin, salt, pepper and nutmeg.

Remove from heat; whisk in Swiss and cheddar cheese until smooth. Stir in cooked pasta; toss to mix well. Spoon into baking dish.

Melt remaining 2 tablespoons butter; stir in bread crumbs to coat well. Sprinkle on top of casserole. Bake 30 minutes or until sauce is bubbly and mixture is golden.

Twice Baked Potato Jackets with Rosemary Servings: 16 8 small Yukon Gold potatoes 1 cup Sabra Classic Hummus 2 tablespoons chopped rosemary n
Scrub potatoes and poke with fork 2-3 times to allow steam to escape while baking.

Place whole potatoes on rimmed sheet pan and bake for approximately 25-30 minutes (depending on size of potatoes) or until potatoes are soft; cool for 10 minutes.
n
Carefully slice potatoes in half lengthwise and scoop inside into bowl, leaving about 1/4-inch ring of potato around edges.
n
Combine all ingredients and stir well.
Lightly mash potato chunks in bowl; add hummus and stir until combined. Season mixture with salt and pepper, taste and adjust if necessary.
n
Serve in bowl of radicchio as salad, on sandwiches, wraps or as an appetizer with veggies, chips or pita bread.
Using spoon, divide potato-hummus filling evenly among potato jackets and broil for 5-7 minutes or until tops are golden and crispy; watch carefully as they burn quickly.
n
Remove from broiler and sprinkle with rosemary and a pinch of sea salt. Serve immediately.

Pork Crown Roast with Garlic Herb Rub Prep time: 30 minutes Cook time: 2 hours, 30 minutes Total time: 3 hours Serves: 12-16 1 Omaha Steaks Pork Crown Roast 1/4 cup kosher salt 2 tablespoons coarsely ground black pepper 1/3 cup fresh garlic, peeled and finely diced 1/4 cup thyme, leaves removed from stem and coarsely chopped
1/4 cup rosemary, leaves removed from stem and coarsely chopped 2 tablespoons sage, leaves removed from stem and coarsely chopped 1/2 cup, plus 2 tablespoons olive oil 2 pounds baby red potatoes, halved 1 pound fresh pearl onions, peeled and halved

Thaw roast completely and remove plastic packaging.

Heat oven to 350 F.

Prepare rub by combining salt, pepper, garlic, herbs and 1/2 cup of olive oil.

Mix 2 tablespoons of rub with remaining 2 tablespoons of olive oil and toss with potatoes and onions.
n
Liberally rub all sides of roast with remaining rub, including in between bones. Put any excess rub on top.
n
Place roast on foil lined sheet pan and spread potatoes and onions around sides of roast. Cook on center rack of oven for approximately 2 hours and 20 minutes to 2 hours and 35 minutes for a 9-pound roast, or until internal temperature reaches 145 F in the middle.
n
Let rest for 10-15 minutes before cutting away string and slicing between bones for 16 even portions. Serve with roasted red potatoes and pearl onions in natural au jus.

Pork Tenderloin with Balsamic Roasted Vegetables Servings: 4 1/2 cup Pompeian Extra Virgin Olive Oil 1/2 cup Pompeian Balsamic Vinegar 2 cloves garlic, finely chopped 2 teaspoons mixed dried herbs, such as thyme, rosemary, oregano or marjoram Salt and freshly ground black pepper

n To prepare marinade, combine olive oil, balsamic vinegar, garlic and
herbs in bowl. Whisk until blended; add salt and pepper to taste.

Place 2 pork tenderloins in large sealable plastic bag. Pour in half marinade and refrigerate for 1 hour or overnight, turning bag occasionally.

Preheat oven to 400°F.

Pour remaining marinade over peppers, onions and eggplant and toss. Arrange vegetables in large oiled roasting pan. Roast in preheated oven 15 minutes.

In meantime, heat large non-stick skillet over medium-high heat. Remove pork from marinade. Add to skillet and brown on all sides.

Transfer pork to pan of roasted vegetables. Return to oven for 20–25 minutes or until pork registers 155°F on meat thermometer. Slice pork and serve with roasted vegetables. Drizzle olive oil over finished dish.

Broccoli Gratin with Crunchy Herb Topping Servings: 4 1 bunch broccoli, cut into florets Sea or kosher salt, to taste 1/4 cup Pompeian Extra Light Tasting Olive Oil 1 small onion, chopped 2 tablespoons all-purpose flour 1 1/2 cups low-fat milk 1/3 cup grated Parmesan cheese

Bring large pot of water to rapid boil. Add broccoli and salt to taste. Blanch for 3 minutes. Drain and refresh under cold water and drain again. Pat dry with paper towels and transfer to bowl.

Preheat oven to 400°F. Oil small gratin pan.

For sauce, heat extra light tasting olive oil in medium saucepan over medium heat. Add onion and cook until tender. Add flour and stir until foamy. Pour in milk and cook, stirring continuously until mixture comes to boil and thickens. Stir in Parmesan cheese and parsley and cook until cheese is melted. Season with salt and pepper, to taste. Coat broccoli evenly with sauce. Transfer broccoli to gratin pan.

For topping, heat extra virgin olive oil in nonstick skillet. Add garlic and thyme and cook until garlic is golden. Add breadcrumbs and toss until lightly browned. Sprinkle topping over baking dish and bake for 20 minutes until hot and bubbly. Serve immediately.

Sauce: 1/2 cup water 1/2 cup honey 1/3 cup fresh lemon juice 1 1/2 teaspoons cornstarch mixed with 1 tablespoon water 1 cup sliced, stemmed Blue Ribbon Orchard Choice or Sun-Maid California Figs
Adjust oven rack to middle position and preheat oven to 325°F.
■ For crust, mix graham cracker crumbs and sugar; stir in butter. Press
into bottom of buttered 9-inch springform pan. Bake 8–10 minutes, till edges are golden. Remove from oven and sprinkle evenly with figs.

For cheesecake, beat cream cheese with electric mixer on mediumlow speed until smooth, scraping bowl as needed. Gradually beat in sugar, then sour cream, zest and vanilla. Beat in eggs, one at a time. Scrap filling into pan over figs. Bake on middle rack for 45–55 minutes, until almost set in center. Cool. Chill 4 hours or overnight.

For sauce, in small saucepan, combine water, honey and lemon juice. Stir over medium heat until mixture comes to a simmer. Add cornstarch solution and stir for a few seconds, until thickened. Remove from heat and stir in figs. Cool. Chill until serving time.
■ To serve, run thin knife around edge of cheesecake and remove side
of pan. Cut into wedges and top each with sauce. Garnish with thin slices of lemon, if desired.

To make sauce, in small saucepan, combine figs and orange juice. Bring to a boil over high heat, then reduce heat and simmer until liquid is reduced to about 1/4 cup, 4–5 minutes. Stir in brown sugar and simmer until liquid is syrupy, 2–3 minutes. Remove from heat. Stir in orange liqueur and lemon juice. Chill until serving time.

To make mousse, with wire whisk, beat cream cheese, powdered sugar and vanilla until smooth and creamy. Gently whisk in 1/2 of whipped cream. With rubber spatula, fold in remaining whipped cream. (Sauce and mousse can be held in refrigerator up to 1 day.)

To serve, spoon mousse in bottom of 4 martini or champagne flutes. Smooth to even layer. Top with fig sauce. Sprinkle with crumbled cookies and nuts. Garnish with mint.
