Historical Beginnings

The Sayre Mansion in Bethlehem stands as a testament to what is often referred to as the Second Industrial Revolution, which occurred roughly between 1840 and 1870. The period revolved around steel, railroads and electricity, and Robert Heysham Sayre (1824-1907) was the chief engineer of the Lehigh Valley Railroad. As such, he built his Gothic Revival-style mansion overlooking the railroad, which ran along the Lehigh River below. Sayre’s mentor and boss was Lehigh Valley Railroad founder Asa Packer (1805-1879). Part of Sayre’s job was to assist Packer in his desire to better the community through education and arts institutions. Though it was Packer’s vision, Sayre was the person who ultimately made endeavors like Lehigh University a reality. As Packer’s right-hand man at the railroad, he was entrusted with the responsibility of making the school a success. Sayre’s other contributions to Bethlehem include St. Luke’s University Hospital, Fountain Hill Opera House and Bethlehem Iron Works, the precursor to Bethlehem Steel Corporation.

“We sit and talk at the breakfast table,” says Rich. “(Guests) just love to ask questions about the Amish and the Mennonites,” as well as about the local farms. Since Bert and Rich are both area natives, “We pretty much have most of the answers, I think,” Rich adds. Guests also often connect with other guests, developing friendships and staying in touch. French Toast

12 slices French bread 1 8-ounce package cream cheese 12 eggs 2 cups milk 1 cup blueberries 1/3 cup maple syrup

Cut bread into 1-inch cubes. Place half into greased 9-inch-by-13-inch dish. Cut cream cheese into ¼-inch cubes and place over bread; top with blueberries and remaining bread. Beat eggs and milk; add syrup and mix well. Pour over bread; refrigerate overnight. Remove from refrigerator 30 minutes before baking. Cover and bake for 30 minutes at 350 degrees. Uncover and bake 25 to 30 minutes more, if needed. Serves 12

1 1/2 cups Bisquick 9 eggs, beaten 2 1/4 cups cottage cheese 1 1/2 cups milk 1 tablespoon onion, grated 3 cups cheddar cheese, grated 2 tablespoons parsley, chopped 3/4 cups butter Broccoli, tomato, red peppers, or vegetables of your choice, chopped Combine Bisquick, cottage cheese, parsley, onion, eggs, and milk. Fold in cheddar cheese. Melt butter in 9-inch-by-13-inch dish. Pour mixture into dish. Top with chopped vegetables. Bake at 350 degrees for 55 minutes, or until set. Serves 15 Page 44
