The family began welcoming overnight turn “the pictures that they (see) in the children’s books about farms” into reality, Elisa adds. The goal, she says, is guests to the farm in 1967. Today, visitors from around the world enjoy cozy “giving them an authentic experience on a working farm, integrating them into our regular rhythms and patterns.” Guests often tell the proprietors that they want their children to learn about agriculture, including the chance to see chickens up close, pet a goat or bottle feed a calf. Then there’s Scooby, a 5-year-old border collie who greets guests and serves as the unofficial “concierge.” Children often love playing fetch with Scooby, who happily obliges. The hands-on component is especially attractive to children, “that they can touch it, smell it, feel it,” says Eldon. “Also the fact that they can just run around. It’s just kind of like it’s their place when they’re here.” Guests are encouraged to look around the farm and ask questions of the farm crew or just relax on the front porch and watch Elisa Fleming and Eldon Ranck the cows ambling about in the pasture. CHOCOLATE
Shoofly Pie
Bottom layer: 2 cups sugar 2 teaspoons corn starch 2 teaspoons flour 3 teaspoons cocoa 2 eggs, beaten 1 teaspoon vanilla 3 teaspoons butter 2 cups water Three 9-inch unbaked pie shells Combine all ingredients in a saucepan and cook until thick. When completely cooled, pour into unbaked pie shell. (Lydia’s note: “Both parts should be cooled completely before putting them into the pie pans. I like to cook and mix the top layer the day before I plan to bake them.”) Top layer: 1 cup brown sugar 1 egg, beaten 1 tablespoon cocoa 1/2 cup butter 1 cup molasses 1 cup hot water 1 teaspoon vanilla 2 1/2 cups flour Pinch of salt 1 teaspoon baking soda 1/2 teaspoon cinnamon Preheat oven to 375 degrees. Mix molasses with water and set aside. Mix brown sugar, egg, cocoa, butter and vanilla until well combined. Add remaining ingredients and set aside until water has cooled. Pour on top of bottom layer and bake for 40-45 minutes. Creamy frosting (optional) 1/2 cup shortening 1/2 cup butter 1 teaspoon vanilla 4 cups 10x sugar 2 tablespoon milk Cream shortening and butter, mix in vanilla, add 10x sugar and milk and beat on high speed for 10 minutes. Children can burn off energy at a small playground, and a pond offers guests the opportunity to do a little fishing. If guests want more of an educational experience, farm tours, including the more hands-on Farmer’s Apprentice tour, are available from spring through fall; every tour offers a chance to milk a cow by hand. Guests can also learn how to make cheese and ice cream. These experiences, at an additional cost, are also available to non-guests. The farm’s cattle herd numbers 92, composed of heifers, steers and 30 milking cows. Crops grown at Verdant View Farm are corn, hay and soybeans. The farm serves and sells its own beef. That often leads to questions from guests, particularly children, about the practice of eating farm animals. In answering, the hosts describe it as the “circle of life,” as Eldon puts it. Elisa adds that the animals are cared for in the best possible manner. The meal table is laden with delicious fare, including seasonal fruit, garden produce, farm sausage, homemade breads and, yes, desserts. Tammy does the menu planning, and the cooking and baking is done by kitchen “mastermind” and longtime employee Lydia Beiler. A recent menu featured fried cheese, poached eggs, creamed chipped beef and cranberry upside-down cake. Among the most-asked-for desserts is the chocolate shoofly pie. (The farm sells its own cookbook of family recipes, titled “Sharing Our Best.”) The farm does accommodate vegetarian and vegan visitors at the breakfast table, Elisa notes. Guests eat at the long wooden table in the original 1896 farmhouse, which has four guest units, including two rooms with a shared bathroom and a suite. Outdoors, a stone veranda with a fireplace, to be completed this summer, will be a great spot to serve breakfast, Elisa anticipates. The addition also will include living quarters for family. The family is headed by “elder statesman” Don Ranck, father of Elisa and Eldon. Don and his late wife, Virginia “Ginny” Ranck, the parents of four children, operated the dairy farm and bed-and-breakfast for many years, taking over from Lloyd and Ruth Ranck. Lloyd and Ruth had followed in the footsteps of forebears Chester and Anna Ranck, who began farming there in 1916 and raised three children. Lloyd and Ruth, parents of five, opened the bed-and-breakfast, originally called Sleep Haven, in 1967. The “Little White House,” built by the road in 1950, began housing guests in the 1990s. What is the best time of year to visit the Annville area? We are fortunate to be located in an area where there are four true beautiful seasons, which offer much to see and do any time of the year. Also, we love seeing our guests have fun during the winter, which we call our “secret season.” Winter is filled with a litany of adventures, and guests are amazed at the Christmas decorations, including the 30 Christmas trees. Yet, each season at Annville Inn is “perfect” in its own right, because not only does the inn respond well to all four seasons, the area attractions do as well. Procedure: Prepare 12-cup muffin pan with oil or spray. In a mixing bowl, cream shortening and sugar. Add eggs – one at a time, beating well after each addition. Add yogurt and vanilla and mix well. Combine all dry ingredients for muffin mixture and add to creamed mixture just until moistened. Fold in chocolate chips and blend. (Rosalie likes to use a bit more chocolate chips.) Fill the muffin cups two-thirds full. Prepare topping: Combine the topping ingredients; sprinkle over batter. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to wire rack or before serving. (Rosalie recommends checking the muffins at 20 minutes because baking time depends on the oven and pan.)
