Because they provide food, farm markets were considered essential businesses when businesses were closed under COVID19 restrictions, but that does not mean that the organizations were not affected by changes in shopping patterns in the economy that resulted from the shutdown. “The pandemic has changed the typical summer landscape for many, and that includes our local farmers and small businesses,” said Dani Decker, manager of communications for Lancaster’s Central Market Trust. Coin Auction Will Help Support MCC The Pennsylvania Relief Sale, which supports the work of Mennonite Central Committee (MCC), is an institution in the state. Held yearly at the Pennsylvania Farm Show building in Harrisburg, the event has been known to feature close to 400 handcrafted quilts, wall hangings, and comforters,

Main St., Leola, on Friday, Aug. 14, beginning at 5 p.m. Funds raised by the auction will benefit Mennonite Central Committee. The auction is being organized by the board members of the Pennsylvania Relief Sale, which was canceled due to COVID-19 restrictions.

Lancaster, the local icon remained open throughout the coronavirus pandemic. “We have been actively providing updates to the community online on what stands are open and any operational changes that have needed to happen,” reported Decker. Kristofer Bucher, manager of Harvest Lane Farm, 851 E. Oregon Road, Lititz, noted that the market stays open year round, but this spring he was pleased to find more customers than usual wanting to shop there. “I think the small format gave and continues to give a lot of people the confidence to shop (locally) during the pandemic,” said Bucher. Jill Hertzog, artistic director of dance with Cavod Academy of the Arts, is excited about the theme for this year’s Camp Create, a summer camp experience specifically designed for teenagers and adults, those age 13 and up, with intellectual and developmental disabilities. “We are doing ‘Create With Purpose - What’s your purpose?’” said Hertzog, who noted that Cavod’s tagline is “Create With Purpose.” “Each camper will have the chance to explore different passions and creative outlets, and we will touch on identity, how much they are loved and how much they are worth.” This is the second year that Cavod, which is located at 665 W. Main St., New Holland, will hold Camp Create. See Cavod pg 2

The event is also known for homemade food and family-friendly activities. This year, however, due to COVID-19 restrictions, the auction was canceled. Steven Stoltzfus of Leola, who has long been involved with the relief sale, along with a group of volunteers wanted to help make up for some of the funds lost due to the cancellation. “We’re holding just the coin auction,” reported Stoltzfus. A variety of donated coins have been gathered to be sold at an auction that will be both live and online at the same time. The live auction will be held at the Bareville Fire Hall, 211 E. Main St., Leola, on Friday, Aug. 14, beginning at 5 p.m. At the same time, the auction will be held online through https://hibid.com. Trying out a new recipe, cleaning out drawers and closets, taking up an old hobby and trying their hands at arts and crafts are just some of the activities that congregation members at St. John’s Episcopal Church, Compass, spent time on during the stay-at-home order. Among those who took the time for a cleanout project was the Rev. Dr. Nina George-Hacker, rector of St. John’s. “My husband (Rick) and I moved into our apartment four years ago and were so busy working we never had time to deal with our basement storage unit, which was a mess,” she said. “One day, during our enforced stay-at-home, we spent 10 hours cleaning out and reorganizing the space. Now we know what is and isn’t in there and where to find it.” In addition to the basement, George-Hacker

also cleaned out and reorganized her desk drawers and dresser drawers, the home’s hall closet and linen closet, three floor-to-ceiling shelves of CDs, two four-drawer file cabinets and one kitchen cabinet. See St. John’s Compass pg 9

This year’s camp will be held at Cavod from 4 to 6:30 p.m. starting on Monday, Aug. 3, through Friday, Aug. 7. On Aug. 7, at 6 p.m., a showcase performance will be held for family and friends of campers in Cavod Theatre, 685 W. Main St., New Holland. A display of artwork created during camp will be held at the same time. Hertzog said that the showcase is important because it gives those close to the campers a chance to be part of what the participants have learned. Hertzog helped plan the 2019 camp, and she took the role of designing it again this year, but Jess Rajski will serve as the teacher. “(The daily schedule) will be similar to last year,” said Hertzog, who noted that because Cavod is a Christian organization, each session will begin with a time of devotions and the introduction of

a verse that will be the theme for that evening. Socially distanced games and times to connect and get to know each other will be part of the opening exercises. “They will take dance class,” said Hertzog, who noted that the foundational skills of jazz, ballet, and hip-hop will all be included. “(We want to) keep it really fun and upbeat and lighthearted,” said Hertzog. Dance will be followed by working on an art project that is based on exploring individual purpose and identity. “There will be a musical theater time,” said Hertzog, noting that the segment will include a song with motion, using basic percussion instruments such as tambourine, and dance moves. “We will be integrating music (into the camp) as much as we can,” Hertzog said. Camp will close with a review of the verse, showand-tell activities based on that night’s theme, and an additional game before saying goodbye. Cavod Academy classes may run an hour or more, but during the 2019 Camp Create session, organizers found that it really worked to have a short dance class, followed by art and then musical theater incorporating dance. “It keeps the campers engaged,” said Hertzog, who noted that two young, energetic Cavod students will be assisting Rajski with teaching. The camp is following Centers for Disease Control and Prevention guidelines for all summer camps, including masks, hand sanitizing, and temperature checks. Hertzog noted that the classrooms have been outfitted with heavy duty air filters, and that it is easy to do social distancing with the small group of students attending Camp Create. More information about the camp and the academy’s response to COVID-19 restrictions may be found at www.Cavod Academy.com. “Camp went really well last year,” said Hertzog, noting that there were few changes in the design of the 2020 camp. “The campers were so excited once they got to be on stage (at the showcase),” she said, adding that it was a joy to share with students about how God has designed and created them and tying the arts into their identities. “I feel like each student got a shining moment (at the showcase),” she said. “They are proud of themselves, and that is a good thing.”

Cavod Academy’s summer musical theater camp for youths ages 10 to 18 will conclude with performances of “Frozen Jr.” at 8 p.m. on Friday, Saturday, and Sunday, Aug. 14, 15, and 16, at the New Holland Community Memorial Park, located in the 400 block of Jackson Street, New Holland. The complexities of handling online bidding and live bidding simultaneously will be addressed by having two auctioneers working in conjunction with each other. “The way this works, there will be an auctioneer bid calling with people in the audience, and, in addition, there will be a clerk sitting nearby with the computer,” explained Stoltzfus. Pre-bids may be placed online, with lots closing live at 5 p.m. “If someone puts in a pre-bid, that is the starting bid. When we are auctioning a particular lot live, a person can be on the computer to enter live bids.” Both internet bids and floor bids will be announced. “The clerk will report bids coming in by computer to the live auctioneer,” said Stoltzfus, who noted that the bidding link will be posted at https://pareliefsale.org. Lead coins in the auction will be a 1904 $2.50 gold piece, a 1997 American Eagle $5 gold coin, a one-tenth ounce gold piece, and a one-quarter ounce gold piece. A 10-ounce silver bar and an 1884-CC Morgan dollar will be sold, as will a 1925 Stone Mountain half dollar and 1923 Monroe/Adams centennial half dollar. An 1866 three-cent piece will go up for bids as well. “We will also have a nice selection of 2013 and 2020 Silver Eagles,” said Stoltzfus. In addition to the coin auction, a food fundraiser will be held at the Bareville Fire Company on Aug. 14, beginning at 4 p.m. It will include wings, french fries, and a beverage sold as a meal. Food will be sold on a drive-through or takeout basis. “We are hoping the income from the food will offset expenses of the auction to increase the coin auction profit,” said Stoltzfus, who noted that some of the food is being donated. All profits from the sale will help to support the work of MCC, with the goal of sharing God’s love and compassion by helping to meet basic human needs and making efforts for peace and justice. Diana Stoltzfus, assistant manager with Brook Lawn Farm Market, 2325 Lititz Pike, Lancaster, said the farm staff did not let the pandemic change their outlook. “We are doing what we have always done over the years,� she shared. “Our focus continues to be on growing and selling high-quality, homegrown fruits and vegetables in season.� Recently, the market featured its own sweet corn, which is picked fresh daily, as well as peaches, squash, eggplant, Shishito peppers, and more. In season, the market will offer more than 50 varieties of heirloom tomatoes. Safety procedures for customers and employees have been foremost in the minds of market owners. Central Market, Brook Lawn, and Harvest Lane have focused on procedures that protect all those who walk in the door. “We are asking all customers to socially distance and wear a mask (at Central Market), following the Pennsylvania Department of Health guidelines,� said Decker.

Stoltzfus said Brook Lawn is following the state guidelines, as well. “We limit the number of customers inside the market when necessary, and we have installed protective barriers at our checkout.â€? Hand sanitizer is available at the entrance and exit. “We ‌ are committed to providing a safe, clean environment for our employees and our

customers,� she said. Each market is currently promoting the reasons that area residents should pay it a visit. Stoltzfus pointed out that Brook Lawn is an open-air market and that the layout was recently redesigned to promote one-way traffic to flow easily to the checkout area. “We are working hard to serve our customers in (ways) they are most comfortable,� she said, noting that online shopping and same-day contactless curbside pickup are available. Bucher stated that Harvest Lane would like to see shoppers visit local growers. “Now is the time to support local food in season,� he said, adding that the market’s offerings are produced on local farms and utilize local processing facilities. Decker concurred. “Our standholders (at Central Market) are people you know and trust,� she said, noting that the market offers community and conversation, along with items for purchase. “While that looks different right now, it is important to remember that these community members need our support and that they are doing everything they can to provide a safe experience.�

LSO Appoints Board Members The Lancaster Symphony Orchestra (LSO) recently announced the appointment of four new members to its board of directors. They are Brent Edmondson, Sara Male, Michael J. Slechta, and Bob Thomas. Two of the appointees are musicians from the orchestra. Edmondson is the principal bass of the LSO and is often featured as the LSO’s preconcert lecturer. Edmondson performs with orchestras throughout the region, including the Philadelphia Orchestra. In addition to performing, Edmondson is a composer, arranger, editor, engraver, and publisher. Male is the acting principal cello of the Lancaster Symphony Orchestra and performs with orchestras throughout the region. A sought-after chamber music recitalist, Male is a founding member of the Newstead Trio and Duo Chiaroscuro. She teaches cello at Franklin & Marshall College and Elizabethtown College, in addition to her private studio. Slechta is the coordinator of music, art, humanities and 21st century skills in the School District of Lancaster. In addition to administrative leadership, Slechta serves as an adjunct instructor in the Master of Music Education program at Lebanon Valley College, is conductor of the Reading Philharmonic Orchestra, and has presented at conferences for Pennsylvania Music Educators Association (PMEA) and International Society for Technology in Education (ISTE). Thomas holds a Ph.D. in higher education, administration/management, and served as an administrator for 33 years, including 10 years as vice president for student affairs at Millersville University. Following his time at the university, Thomas worked as president of Tabor Community Services. Thomas retired from Tabor in 2018 and currently volunteers as a SCORE Lancaster-Lebanon mentor. He is also a member of the board of directors for the Samaritan Counseling Center and is a trained volunteer with United Way’s Voluntary Income Tax Assistance Program. The LSO anticipates beginning its season in the fall with minimal seating capacity and numerous safety precautions designed to comply with and exceed social distancing guidelines outlined by government officials and the CDC. “Prior to COVID-19, we couldn’t keep up with the demand for our services,” commented Karen Gerth, founder and executive adviser of Keystone Pet Enhanced Therapy Services (KPETS). “Many of our volunteers seem to find a population or type of visit that they enjoy and that is a good fit for their pets so they may focus in that area.” Gerth reported that KPETS currently has 443 registered human volunteers and 476 registered animals, as some of the volunteers have multiple pets that work with them. The teams provide more than 10,000 hours of visitation every year in communities throughout southcentral Pennsylvania and northern Maryland. “More and more facilities, agencies, and organizations are becoming aware of the benefits of the human/animal interaction, and KPETS is a way to implement that benefit,” Gerth remarked. KPETS teams bring cheer to residents of retirement communities, provide a comforting distraction to cancer patients and other hospitalized individuals, encourage adults and children in all different types of therapy sessions, and support reluctant learners and struggling readers. “Visiting schools can be anything from reading programs to working with life skills or multiple disability classes. The pet can motivate or calm in ways that amaze the staff (members),”

Gerth said. “We’ve heard over and over again about residents in health care or hospice settings who finally smile or even communicate when the therapy pet is with them.” With the stay-at-home orders suspending in-person visits, KPETS volunteers utilized social media and other communication technologies to stay in touch with their clients. Some teams recorded themselves reading stories with their pets, while others encouraged children to read to their own animals. Virtual meetings were held with hospital and school staff members to know they are being thought of. One team created a video featuring a day in the life of a therapy dog under quarantine for a life skills class. The students were curious to see how therapy dogs were being affected by the situation, Gerth said. Teams also made a special video for the Class of 2020 at Warwick High School. “We had a very special bond with this class two years ago when they lost three students within a few weeks,” Gerth said. “We wanted to wish them well, congratulate them, and let them know how proud we are of them and how honored we were to be a part of their lives during that most sad time.” With Pennsylvania beginning to reopen, KPETS is also considering how to begin to make visits again. Gerth asserted that guidelines will be in place to ensure the safety of the clients, volunteers, and pets. Any facility or organization that would like to

Fire, rescue, and EMS companies hampered by lack of fundraising opportunities during the COVID-19 pandemic can register now for grants to help cover expenses. The Office of the State Fire Commissioner will offer funding via the COVID-19 Crisis Fire Company and Emergency Medical Services Grant Program. Fire/rescue/EMS companies that received a grant award from the 2019-20 Fire Company and Emergency Medical Services Grant Program (FCEMSGP) and register for the COVID-19 crisis grant program will receive an initial award equal to the amount they received from the 2019-20 FCEMSGP. The surplus funding in the program will be distributed to each eligible company that meets the funding criteria and submits a completed registration, including those that did not receive a 2019-20 FCEMSGP grant award. More information and registration instructions can be found by visiting www.osfc.pa.gov. Registration will be open until Friday, Aug. 7.

“When I wasn’t cleaning out and reorganizing spaces, I did a lot more cooking - trying out new recipes and reviving old favorites,” she reported, noting that one of her most successful meals consisted of panko-encrusted fish with asparagus, zucchini with cheese and quinoa and vegetables. As a tribute to her late husband, Richard Gilfillan, lifelong congregation member Frances Gilfillan, who resides in the Tel Hai Retirement Community in Honey Brook, created 25 pillows from her late husband’s shirts, pants and jeans. “He passed away in November 2019, and after deep thought I decided to make this my project,” she said. “Fortunately, I was getting started on this when the virus struck, and I was counseled at Tel Hai to stay at home unless absolutely necessary to go out. Making the pillows was extremely helpful in passing the time and actually very relaxing.” Gilfillan distributed the pillows to her husband’s family members, including his grandchildren. Robin Baldwin, also a lifelong member of St. John’s, spent time organizing photos and birdwatching. “My 92-year-old mother (Selena Baldwin) and I are enjoying feeding and watching the birds like never before,” she stated. “We’re learning about orioles, that catbirds like oranges and grape jelly and house finches like sunflower seeds and

After much reflection, the board of directors of the Ephrata Performing Arts Center (EPAC) has decided to officially postpone its 2020 season until 2021. When making the decision, the board followed local, state, and federal guidelines and recommendations, as well as looked at what its fellow members in the performing arts community were planning for 2020. Artistic director Edward R. Fernandez is planning to move many of the 2020 mainstage shows and events to the 2021 season. For those who are current subscribers or ticket holders for the 2020 season, their tickets and subscriptions can be automatically moved to the 2021 season. If they are unable to attend the rescheduled shows in 2021, they may consider donating the value of their tickets or subscription to EPAC as a tax-deductible contribution. All subscribers and ticket holders will receive a letter with these updates, but they can

also contact the EPAC box office for additional details. EPAC is committed to producing exciting new content during the closure and making updates to the theater for the future safety and comfort of its patrons. EPAC has raised more than $15,000 toward the campaign thus far and is also planning an online auction in the fall. Additional announcements about virtual and small-scale programming for the fall and holiday season will be announced in the near future. EPAC experienced a water leak at the theater during its closure which resulted in significant damage to its shop area, green room, rehearsal room, prop room, and conference room. EPAC is working with the Ephrata Borough to repair and remediate the damage. UDS Service Dogs will host its first golf outing on Friday, Aug. 28, at Meadia Heights Golf Club, 402 Golf Road, Lancaster. Program manager Lori Breece hopes it will become an annual event. “We have been trying to find a signature event that can bring in strong revenue for our program and get the community engaged,” Breece remarked. Landis Communities offered pointers in planning the event. Volunteers met with representatives of golf courses around Lancaster County to see who would want to partner with UDS Service Dogs, and Meadia Heights was the most eager. The Aug. 28 date was scheduled in August 2019. Breece said that when the shutdown occurred, she was afraid that the outing might have to be postponed or canceled, but final planning for the event is going strong. On Aug. 28, golfers may check in beginning at 8 a.m. Play will begin with a shotgun start at 9 a.m. and will take a scramble format. Refreshments will be provided. A barbecue buffet is set for 2 p.m. Opportunities to win gift baskets will be available. Additionally, UDS clients and their working service dogs, as well as puppies in training, are slated to attend. Breece hopes that the program’s newest dog - a Doberman pinscher - will have arrived by then and can be introduced at the outing. This will be the first Doberman to go through the UDS Service Dogs program, although Breece has had a pet Doberman for six years. The program’s primary breed is the Labrador retriever, but because Dobermans are tall, they are better suited to providing stability when adults move from sitting to standing and vice versa. Breece had initially hoped to make $50,000 from the golf outing, but revenue expectations have been cut by half. “Any success will be a positive success because it’s new for us,” she said. The proceeds will be used to purchase more puppies for the program and cover veterinary costs, which can reach $2,000 per animal. With about 12 new puppies every year, UDS Service Dogs has vet bills for 25 dogs a year. Breece noted that in total,

the program invests $25,000 in each dog. Clients are charged just $5,000. “We haven’t raised prices in 15 years,” Breece said. Breece is excited about the evolution the program has undergone in recent years. She credited the change to the implementation of a better business plan and processes four years ago. “We had to commit to bringing in more puppies (to be trained),” Breece said. “Now we’re placing six to nine dogs a year. We have eight staff members and 30 puppies in different stages of training. That’s a lot of growth.” Only a portion of the dogs that go through the training process provide mobility assistance. The others go to work as facility dogs or become pets. Several UDS Service Dogs interact with children in schools and with clients in a counseling office near Philadelphia. Breece would like to increase the services the dogs provide. Currently, staff members are taking classes to become certified to work with veterans with post-traumatic stress disorder (PTSD) and train dogs to assist them, and child advocacy centers are on the waiting list for support canines. “I can’t wait to do it because I know it’ll help these children who See Service Dogs pg 15

He was asked by a member of the IU13 staff to apply. “Being nominated was quite a surprise, let alone winning,” he said, adding that he is honored to have received the award. “I do know that we have built a special program at Garden Spot High School (GSHS) over the past few years,” he shared, noting that he has been fortunate to work in the technology and engineering department alongside teachers Mark Kaufman, Mike Stitzer, and Cody Stoneback. “Together, we have created an impressive program that gives students unique STEM experiences,” he said, adding, “So although I was humbled to receive the award, I

am also incredibly proud to be a part of that team.” Steinmacher said that he sent several documents and pieces of information as part of the application process. “I wrote a few paragraphs outlining what our technology and engineering program looks like at GSHS and my philosophy on teaching,” he noted. He also sent an updated resume and five artifacts of student work, including CADD drawings and projects and website portfolios the students made. Also included in the packet was a video by GSHS assistant principal Steve Good, who spoke about Steinmacher’s work at the school. Due to COVID-19 restrictions, the presentation of the STEM awards was done in a virtual format. Children at the Transitional Living Center (TLC) in Lancaster received activity bags from the Lancaster Optimist Club. The Lancaster Optimist Club has supported local youths this summer by providing activity bags. The club delivered a total of 101 activity bags to four shelters in Lancaster city on June 30. The club supports these four shelters throughout the year. Recipients included the Transitional Living Center (TLC), Clare House and Milagro House. The activity bags were the result of many weeks of work by the local club members and friends. Each bag contained a book, arts and craft items and physical activity items. Many groups provided items for inclusion in the bags. Art of Recycle in Ephrata, Lancaster Creative Reuse, Otterbein United Methodist Church (UMC), Pearl Street UMC, Ross Street UMC, LANCO Federal Credit Union, and Home Depot were of few of the partners. Items chosen for the bags were age-appropriate. Bags for children ages 3 and 4 contained balls, flying discs, sidewalk chalk, primary wooden beads and/or blocks and a book. Children ages 5 to 8 received jump ropes with jump rope rhymes, balls, a wooden craft and a book. Children ages 9 to 11 were given bead kits, foam kits, a large beach ball, playing cards, flying discs and a book. For children age 12 and up, the Optimist Club provided painting sets, journals, a large beach ball, a flying disc, jewelry making kits and a book. The

Directions: 1. Combine butter, water, salt, and sugar in a medium saucepan over medium-high heat. Bring to a boil over high heat. Remove from heat and quickly stir in the flour. Return the pan to low heat and cook, stirring frequently, for about 3 minutes to cook the flour slightly and rid the mixture of a starchy, floury taste. 2. Remove the pan from the heat and place the dough in the bowl of the mixer fitted with the paddle attachment. Mix on medium speed until most of the steam subsides, then add the eggs and egg whites one at a time until each is incorporated, and a batter is formed. 3. Pour 3 inches of oil into a stockpot and heat to 350 degrees Fahrenheit. 4. Meanwhile, place the batter in a pastry bag that is fitted with a round pastry tip no wider than 1/4 inch in diameter. 5. Holding the pastry bag over the hot oil, push the batter out into the hot oil in a zigzag or spiral shape. Fry no more than 1 large or two smaller funnel cakes at a time. 6. Fry the cakes until puffed up and golden (they will triple in size), 3 to 5 minutes, flipping every 30 seconds or so. 7. Drain the cakes on a rack and cool slightly, then sprinkle with confectioners’ sugar and berry topping.
