Cari Amici, For the first time, we present to you our 2020/21 Enoteca Sileno Summer Magazine entirely in digital format. As the final months of 2020 approach, our excitement has turned toward the exceptional and delicious artisan delicacies we are privileged to import from Italy to Australia. This magazine is our annual homage to the artisans and craftspeople in Italy who work hard to keep their local food traditions alive. We know we share our passion with so many of you who cannot imagine Christmas without an authentic traditional panettone on the table. Read on to discover what we are pleased to share with you this festive season, and we hope that as we share with you, you will share with your family and friends. In this edition of the ES Summer Magazine, you will discover many traditional favourites. For example, we get asked many months in advance about the arrival of panettone and pandoro from the venerable Veronese pasticceria, Perbellini. You also won’t go astray enjoying a few cream-filled panettone from playful Piedmontese bakery, Gilber. And there is always room to make a splash with the show-stopping packaging you get from the folks at Flamigni. We have also added to the range of enjoyable Gluten-Free panettone and 4

Perbellini’s exquisite baked goods are not mass-produced, and only the finest butter, eggs, and natural “mother” yeast are used. The dough is leavened for 48 hours before baking and then allowed resting time before being tastefully hand-wrapped with decorative paper and tied with string. 7

TORE nougat factory makes nougat following the ancient tradition of Tonara, a small mountain town located in the heart of Sardinia with a long, proud tradition of making nougat recognised globally for its quality and flavour. Torrone di Tonara is made using egg whites and Italian honey that are beaten together and blended with almonds, walnuts or hazelnuts and sometimes infused with local Sardinian botanicals and no sugar.

The SINATTI pastry shops of Siena make typical Tuscan sweets according to traditional recipes and methods that often date from the Middle Ages. Luciano Sinatti still heads and oversees his brigade in the production facility. In 2013 Sinatti’s Panforte di Siena was granted IGP (Indicazione Geografica Protetta*) status guaranteeing the provenance of ingredients, the quality of production, and historical and cultural significance of the product. The best way to savour panforte is to cut thin wedges, but multiple rounds.

The ANTICA DOLCERIA BONAJUTO shop and factory in Modica in the south of Sicily has changed little since it was founded in 1880. Bonajuto is one of the only chocolate producers in the world still using the recipes and “cold working” methodology of the Aztecs. This cold worked chocolate is uniquely granular in texture. There are no glossening agents added, and it should be consumed in very small pieces about the size of a teaspoon, placed on your tongue and allowed to melt slowly with body temperature. XYAUYU RISERVA 2015 500ml – $55.00; Aged for between two and a half and three and a half years in former Barolo barrels, Xyauyu is a living, top-fermented beer (technically a vintage barleywine), which after being exposed to the air of the Langhe area, becomes a drink akin to a Port wine or Vin Santo. When poured, it has no head and no bubbles; and it has a clear, full amber, brownish colour with copper reflections. It’s very intense on the nose, with aromas of dried and candied fruit and strong and harmonious notes.
