Cari Amici, As another festive season comes our way, we are delighted to offer only the finest artisanal Christmas produce directly from the Italian regions to be shared at your table. Traditionally Italians celebrate the festive season using and including some of the wonderful regional ingredients which rekindle memories of dishes of their customs and intergenerational influences. The fabulous appetite-stimulating assorted antipasti from real artichokes preserved in olive oil to fillets of anchovies; smoked scamorza cheese; regional olives that can be tossed in the pan with a pinch of chilli, garlic, rosemary and olive oil gently warmed and served with wonderful crusty casalinga bread; some well-aged Parmigiano Reggiano that deserves a fine drizzle of quality balsamic vinegar. These are just a few staple products that deserve a place in your pantry. We introduced the first D.O.C.G Prosecco into Australia around 40 years ago. Today, prosecco is widespread & it is customary to order a glass in a restaurant and have a few bottles chilled at home in case someone drops in – or even better, if no one drops in at any time of the day. The Perbellini family’s reputation as one of the finest pastry houses of Italy was established in 1891 when Giovanni Battista Perbellini created the Offella d’Oro®, a traditional Veronese cake that remains the family’s flagship product.

Massimiliano Tore makes nougat as it has always been done, following the ancient tradition of Tonara, a small mountain town in the heart of Sardinia. Many local families in Tonara still produce torrone for themselves, tourists or other locals, using copper vats, wooden paddles and scarce Sardinian millefiore honey. Massimiliano adheres to traditional methods of production on a slightly larger scale and carefully selects traditional ingredients like sustainably sourced organic ADI honey from Abruzzo, Sardinian eggs, Italian Tuono almonds, and sometimes Sardinian botanicals, which gives his torrone a distinct flavour. The BONAJUTO shop and factory in Modica has changed little since it was founded in 1880. Bonajuto is one of the only chocolate producers in the world still using the cocoa recipes and “cold working” methodology of the ancient Aztec civilization. The chocolate is made using pure, fair trade, sustainable cacao, sugar and spices. There is no dairy, vegetable fat, milk derivatives, emulsifiers or thickeners added.

AUTORE is a family-owned company with generations of experience making the traditional confectionery of San Marco dei Cavoti, a picturesque village in the countryside outside of Naples. Their unique chocolates are hand-made using the finest Valrohna chocolate from France combined with local Campanian fruits, fine Italiangrown nuts and local honey.

GIRAUDI is a family-run pasticceria and chocolateria in Alessandria, Piemonte, operating since 1907. Giacomo and Davide Boidi craft exquisite chocolates of the highest quality using pure, sustainably and fairly-sourced cocoa and locally collected Tonda Gentile hazelnuts. Their skilled and passionate team at Giraudi ensures every hand-made specialty is carefully wrapped and presented in a way that reflects the fine craftsmanship inside each package. Il Parrozzo is a traditional cake which takes its name from an ancient peasant bread called Pane Rozzo – a hemispherical, woodfired bread with corn flour. LUIGI D’AMICO had the idea to pay homage to this culinary heritage in confectionery form, reproducing the bread’s hemispherical shape, creating a yellow dough with farm-fresh eggs, and covering the cake in a layer of fine chocolate to represent the scorched appearance from wood oven cooking. CONTINI NIEDDERA ROSSO ‘MALUENTU’ 2018 (SARDEGNA) – $48.50 Maluentu is a Sardinian word that translates to “rough wind”, and is the ancient name of a small island near the Cabras coast, which is often beaten by the strong mistral wind. This fresh, fruity, and exuberant red wine is obtained from native Sardinian grapes – primarily Nieddera – grown in the Oristano province. Nieddera is an ancient black grape variety, likely introduced to the island by Phoenician merchants around the 8th century BC. It is this ancestral origin that envelops the grape in mystery, but due to the efforts by the Contini family, it is starting to receive the accolades it deserves. EW11.18

Baladin beer is made with organically grown grains, Italian cereals, and wild yeasts (a “lievita madre”) for fermentation. The beers are unfiltered, unpasteurized, and refermented in the bottle, so the flavours are rich, complex, and totally unlike mass produced beer.

METODO CLASSICO BRUT BIERE RISERVA 2016 750ml – $49.50 All beers produced by Teo Musso undergo a second fermentation in the bottle, but in the case of Metodo Classico, the 56 refermentation technique is taken to a higher level. Each batch of “Brut Biere” undergoes a refermentation that lasts two years. This process takes place in the cellars of a prominent Piedmontese winery, which is a fortunate collaboration between Baladin and the enologists who developed the “Alta Langa” sparkling wine. Although the techniques to produce Metodo Classico mimic those of Champagne, it is 100% beer and does not contain any wine or wine by-product. The bottle itself, 900 grams of glass (the necessary weight to withstand the extremely high pressures caused by fermentation) is a tribute to the original Baladin bottle shape adopted by Teo Musso in 1997. Metodo Classico has a fine perlage like the finest French or Italian sparkling wine, with a slightly hazy light amber colour. Delicate scents of fruit and cereals are accompanied by notes of caramel and subtle hints of citrus fruits. The taste confirms the very rich but balanced scents. XYAUYU RISERVA ORO 2015 500ml – $55.00 Aged for between two and a half and three and a half years in former Barolo barrels, Xyauyu is a living, top-fermented beer (technically a vintage barley-wine), which after being exposed to the air of the Langhe area, becomes a drink akin to a Port wine or Vin Santo. When poured, it has no head and no bubbles; and it has a clear, full amber, brownish colour with copper reflections. It’s very intense on the nose, with aromas of dried and candied fruit and strong and harmonious notes.
