The Bonajuto shop and factory in Modica in the south of Sicily has changed little since it was founded in 1880. Bonajuto is one of the only chocolate producers in the world still using the recipes and “cold working� methodology of the Aztecs. The chocolate is made using only pure cocoa, sugar and sometimes spices. There are no dairy or vegetable fats, milk derivatives or lecithin.

EASTER DRINKS Giraudi makes a very special coffee drink at their café in Piedmont. They coat a clear coffee cup with Giacometta and then fill the glass with a cappuccino. It’s a basic but very indulgent coffee. In Naples, a reigning favourite coffee beverage is the Caffe Brasiliano, an espresso disguised as a cappuccino. Beginning with half a teaspoon of sugar and half a teaspoon of cacao in a glass, pour a shot of espresso. Next, spoon a thick layer of milk foam before sprinkling the top with drinking chocolate. They layered drink presents like a delicate dessert and offers the wonderful rich bitterness of espresso with the creaminess of foamed milk. A traditional hot drink to Turin, Caffe al Bicerin has been known since the 18th century, and in 2001 became recognised as a “traditional Piemontese product”. It is a drink made with espresso layered with thick hot chocolate and topped with cold whipped cream served in a glass.

GIRAUDI GIANDUIA GIACOMETTA SPREAD Made with wild Tonda Gentile IGP hazelnuts and pure cocoa, it is perfect for spreading on toast or hot cross buns. Because Giacometta is a natural product, it is acceptable to store the jar upside down to fully distribute the pure hazelnut oil that sometimes separates from the chocolate mixture.
