Cari Amici, Now more than ever, our appreciation and anticipation of spending Christmas with our family is at the forefront of our minds. We can’t wait to experience the joy, relaxation, and indulge ourselves with the most delicious food and wine on this special occasion. Our Christmas Eve tradition is simple but first-rate: a specially-selected wine paired with fresh Aussie lobster, salad from our garden, and copious quantities of Italian extra virgin olive oil and freshly squeezed lemon juice. In keeping with the spirit of simplicity, we often choose a fluffy, buttery Pandoro to top off the meal. Since our Pandoro was only just produced in late September, the fresh aromas and melt-in-your-mouth texture lift the mood as we toast with a glass of effervescent Moscato d’Asti. We are so proud to offer the selection of confectionery that we have been presenting for decades. The difference is that we work with artisans that do not compromise on the quality of their ingredients—natural “mother” yeasts, new season nuts and fruits from Puglia, Sicily and Piemonte, fresh Belgian butter, free range eggs, and high grade wheat flour. This year, the long-lasting summer heat in Italy meant that the workshops started producing a bit later when cooler weather arrived, in order to ensure the high standards of production were maintained. Aspide Spritz is born out of a desire to elevate the typical spritz cocktail with a non-industrial aperitivo liqueur, made from meticulous infusions of Sardinian citrus and wild botanicals. Aspide has the colour of strawberry juice, the aroma of a grove of mandarin trees heavy with ripe fruit, and a taste that feels like a burst of fresh citrus juice laced with delicate herbs. Riccioli is “curled” wavy pasta that is also known as campanelle or gigli, depending on the region. The undulating surface of these porous egg ribbons collects all the delicious sauce on the inside. Try Riccioli in the ‘mari e monti’ version, with seafood, chickpeas and extra virgin olive oil. Cooking time 9 minutes.
Garganelli is one of the most typical pastas of Emilia-Romagna. When made by hand, this pasta shape is made with a small square of egg pasta, wrapped around a pencil or a wooden stick, then rolled over a ridged surface to give it the texture on the outside. This shape is wonderful with any fine ragu so that the sauce is captured in the middle. 9 minutes cooking time.

Whole broadbeans are gently roasted in small batches and then salted for a satisfying crunch. A delicious and wholesome snack for aperitivo time!
Sweet, mild peppers are strung on wreaths, dried in the sun, then fried in extra virgin olive oil and seasoned with sea salt. These crunchy snacks are packed full of flavour and are unbelievably moreish. A must try.
These hefty olives are a variety native to the Etna volcano region. They are preserved in grand cru extra virgin olive oil and flavoured with local herbs. They have an intense aroma of mint and wild fennel, and are buttery, tender and slightly fruity.

RISOTTO FELICE RECIPE Serves: 2 entrees or 1 generous main course 1 packet Risotto Felice 500ml broth (veg or chicken), brought to gentle simmer in saucepan a little butter or olive oil (optional) a little Parmigiano Reggiano or Grana Padano (optional)

Nebbiolo grown in Ratti’s Dogliani vineyards is the source for Reggimento, an area noted for its cooler climate than the La Morra commune to the north. Akin to a ‘baby Barolo’, Reggimento is a red wine of superb refinement that will appeal to connoisseurs of upperechelon Nebbiolo wines of the Langhe.
Intense and penetrating, when young it expresses marked fruity scents of citrus and green apple, acquiring evident mineral scents as it ages in the bottle. It is fresh on the palate, thanks to the sharp acidity inspired by the high altitudes at which the grapes ripen, savoury and nicely concentrated. The persistence is stimulating, juicy and textured. Pair with seafood, from raw fish to more elaborate dishes.
La Selvatica is the Dogliotti family’s Asti Spumante, made from a single vineyard near their winery. It can be served as an off-dry aperitif, or with fruity or creamy desserts. It is a classic match with panettone at Christmas. It is absolutely delightful and delicious. You won’t find a better example of Asti Spumante.
