Enoteca Sileno is the wholesale and distribution division of L. Di Santo Pty Ltd, Australia’s oldest and most respected importer of authentic, regional, Italian food and wine. Founded in Melbourne in 1953 by Luigi Di Santo, entrepreneur and pioneer of the Italo-Australian community, the company has been the Australian home of some of the great gastronomic brands of Italy and many smaller, artisan producers of note. THE ITALIAN SPIRIT For a country that is renowned for being at the vanguard of innovation, design and fashion, Italians are conspicuously old-fashioned when it comes to eating and drinking. Many age-old customs and rituals of Italian dining are played out on a daily basis throughout the country with the quiet confidence of a nation that has mastered the art of eating. A digestive liqueur, “il digestivo”, served at the end of a meal, is one such ritual. Depending on where you are in Italy and who you are with, the digestivo could range in flavour from sweet, to bitter, to outright medicinal. Each made from a

secret recipe of distilled spirits infused with roots, barks, spices, herbs, fruits and other botanicals that offer therapeutic benefits of aiding digestion and calming nerves. The flavours are often complex, evocative and satisfying. The Enoteca Sileno portfolio includes a wide selection of authentic Italian liqueurs. Founded in 1943, Distilleria Bepi Tosolini was a pioneer of authentic grappe and distillates in Friuli. The distillery has built a reputation for refining the process of monovitigni distillation, which uses only single grape varieties for producing grappe. The traditional Friulian recipes of the Tosolini family are well guarded family treasures and include a wide variety of specialty liqueurs which are made with the finest ingredients. The ancient art acquired by Master Distiller Bepi Tosolini continues to live on in the professional commitment of the entire family; from Giovanni, who now heads the company, to his grandchildren Giuseppe, Bruno and Lisa. They work together to preserve the ancient knowledge that their grandfather Bepi acquired from the master distillers of Friuli, refining it over time through the continued search for product quality and purity.

This stands in sharp contrast to most other Amaretto brands that typically use apricot kernel concentrate. Miele - Honey & Grappa Infusion Liqueur This is an elegant liqueur made from an infusion of mountain honey, alpine flowers and aged grappa. Amaro Tosolini – Liquore d'Erbe 700ml..........ZS205...........30% abv. A refined herbal liqueur prepared according to the recipe of the founder, Bepi Tosolini. The amaro is made with a blend of 15 varieties of Mediterranean herbs macerated with acquavite (brandy) in ash vats and distilled in botanical stills. Salicornia, Limonium, sea fennel, sea wormwood (precious 'Santonego' handpicked next to the Friuli lagoon), and with the use of pure water of the Friulian alps. The liqueur matures in ash barrels in the traditional casoni delle Venezie (lagoon huts). Full bodied, with aromatic citrus notes and distinctive Mediterranean sweetness and spice on the finish.

China Antica Elixir - Amaro Digestive

ANTICA FARMACIA CLEMENTI

In 1884 Dr Giuseppe Clementi, a botanical expert, created the recipe for “China Clementi� in his pharmacy in the Tuscan hillside town of Fivizzano (Lunigiana). It is a unique elixir, consisting of the measured combination of two precious varieties of tropical China (Cinchona Calisaya and the rare Succirubra) and various aromatics and herbs. Today, China Clementi is produced as it was, adhering strictly to the original recipe of 1884, and with the same commitment and passion.

The botanicals used for China; Cinchona Calisaya, or China Calisaya, is a tree of the genus Cinchona, originally distributed in the Andes and known for its alkaline pharmacopoeia contained within the tree bark. It was also known as Peruvian bark and was used until the beginning of the twentieth century to extract quinine, a substance used in the prevention of malaria. Cinchona Succirubra is native to Peru, Bolivia, Venezuela and the whole Andean area; it has a reddish bark, deeply cracked and oval leaves, which with time assume a blood red colour. The flowers of this tree are also used. Mediterranean bitter orange peel, medicinal herbs, sugar and alcohol round out the contribution to the final result. The recipe is naturally secret and has been guarded by the Clementi family for over 130 years.

This co-operative based near L’Aquila, Abruzzo, produces a range of herbal tonics based on the original medieval recipes of the monks using ingredients sourced from Abruzzo’s rugged mountains. The raw materials are carefully selected and can be traced to origin and collection. Infusi Dall’Eremo tonics are made via cold infusion where the leaves, flowers, roots and berries are macerated in alcohol to extract the aromas, flavours and therapeutic constituents. They contain no preservatives or additives.

The result is a complex ‘amaro’ tonic with a warm amber colour, rich herbal aroma and pleasant fresh aftertaste.

Ratafià Di Viciola - Sour Cherry Liqueur 500ml..........ZS259..........24% abv. Ratafià is a broad term for the traditional sweet, fortified, fruit-based beverage found throughout the Mediterranean. In Abruzzo it is made from the wild sour cherries (Viciola) that grow in the Apennines. In this centuries-old recipe, the fruit and leaves of the cherry are cold infused in the full-bodied Montepulciano d’Abruzzo wine. Sour cherries are a rich source of vitamins, minerals and antioxidants. Traditionally it was given to aid digestion, support immunity and reduce inflammation.

Zafferano - Saffron Liqueur

500ml..........QS260..........30% abv. This liqueur is made from a cold infusion of saffron from farms in the L’Aquila Saffron DOP area, widely regarded as the best quality saffron in the world. Saffron is rich in antioxidants, especially carotenoids as well as volatile oils. The traditional uses include soothing coughs and ulcers, boosting memory, and restoring vitality. Generally it is considered an elixir for wellbeing. Serve this saffron liqueur as an after-dinner digestive at 7-9ºC, also making for an excellent component for cocktails, long drinks and desserts.

Nocino - Walnut Liqueur 500ml..........ZS261..........30% abv. This liqueur is made by the cold infusion of the walnut exocarp (the fleshy green part of an immature walnut) in pure alcohol. The recipe has its origins in ancient Abruzzese tradition and was believed to have invigorating, digestive and cleansing qualities. In traditional medicine, walnut was regarded as an anti-inflammatory, immunity-boosting and purifying and was mostly used for respiratory conditions, infections and skin disorders. Nocino is best enjoyed chilled to 6-10ºC and served as an after dinner digestive liqueur or added to espresso for a “caffé corretto”. In the kitchen, use Nocino for flavouring biscuits and cakes, or add to sauces for game meats.

ROSSA SICILY

Located near the slopes of Mount Etna are acres of blood orange trees, part of an ancient farming tradition in Sicily. Rossa is a new and innovative company, created out of passion of a new generation of entrepreneurs from Sicily, deeply in love with the island, its countless resources and its genuine products. The director of Enoteca Sileno, John Portelli, happened upon this liqueur by coincidence at dinner one night during a visit to Sicily and found it to be so special that he decided to import it to Australia.

Carefully selected blood orange peel is infused with sugar and local herbs to produce this sweet, bitter and intensely citrusy liqueur. Produced in small quantities, Amara is made with the local blood orange which is one of the main varieties grown in the rich soil on the hillsides of Mount Etna. The flavours are incredibly intense, highlighting the quality and strength of the oranges used. The taste is persistent and leaves the palate with a sweet and bitter combination, and a lingering aroma of pure citrus. Drink Amara chilled and smooth; or fresh over ice as a digestive. The liqueur can also be mixed with sparkling water or lemonade over ice with a slice of orange.

LA SPINA SANTA & PRALINA

La Spina Santa, an active citrus farm located in the southernmost point of Calabria (the “toe” of the boot), began producing liqueurs beginning in 1996. Calabria is the world’s largest producer of bergamot, with 90% of the total production coming from this region. The essential oils of bergamot are used in the production of perfumes, sweets and liqueurs.

700ml..........ZS201...........40% abv. Intense in aroma and flavour, Bergaspina should be drunk well-chilled both as a digestive and as a refreshing drink. However, on winter nights it makes a great hot punch. Its velvety palate and intense aroma is also ideal for cocktail-making.

Pralina, a natural foods company in Salento, Puglia, transforms local edible herbs and vegetables into a wide variety of products, while capturing local traditions in the flavours and cooking techniques. The company practices organic farming methods and is certified organic by the ICEA governing body of Italy. Pralina also has a partnership with the university of Agriculture in Parma, Foggia and Bari, and serves as an educational facility for food science students.

Amaro d’Arancio Bitter Orange Liqueur 700ml..........ZS089..........36% abv. This liqueur is obtained from an infusion of high quality orange peel and selected herbs of Salento. The production methods are strictly natural, and no chemical additives or stabilisers are used. The nose displays delicate aromas of citrus fruits and bitter herbs, with flavours of dried orange peel, woodsy bitterness, and a smooth finish. Serve chilled and smooth, or fresh over ice with a slice of orange as a digestive.

It was 1880 when Francis Bonajuto, following in the footsteps of his father, opened his small business among the pastry shops of baroque Modica, Sicily. He continued for years with passion and precision, and the pastry shop is still a major attraction for locals and tourists alike. The chocolate of Modica is produced according to the original recipe and methodology of the Aztecs. The production process involves harvesting the cocoa beans, which are then dried and roasted; then carefully milled to produce very coarse cocoa ‘flour’. The gritty cocoa mixture is slightly heated to form a paste. The paste is gently heated, castor sugar is added and, in some cases spices are added too. The mixture is maintained at this temperature to prevent the dissolution of the sugar crystals. The chocolate itself is perfectly balanced, rich in flavour, and has an airy texture.

Xocolic is a velvety smooth chocolate liqueur that is made with pure cacao and does not contain any dairy or thickener. It may be enjoyed hot, chilled, or served over ice. It is also ideal as an accompaniment to panettone, ice cream, and other desserts.

At the beginning of the 1950s, Silvio Carta founded the eponymous company which is now the most prestigious and active in Sardinia. Their foundation is rooted in the production of Vernaccia wine, a noble Sardinian tradition, and after several years they expanded and introduced a range of high quality spirits and liqueurs. Tradition and innovation have gone handin-hand to guarantee quality. The company’s business philosophy is expressed in the simple slogan ‘armonia della natura’ (harmony in nature). All raw materials for the Carta products are sourced from their own estate.

Carta’s Vermouth is a blend of aged Vernaccia di Oristano DOC Riserva infused with elicriso (a local flowering herb which is similar to sage or wormwood), foraged sage, myrtle, thyme, artemisia, and mastic. The aromas are a complex array of herbs like rosemary, bay leaf and pine resins with a layer of honeyed walnut and apricot kernel with hints of saline seabreeze. Intense, soft and round with pronounced layered flavours of herbs and ripe honeyed stone fruit, with a lengthy and nutty finish.

Giniu - Sardinian Gin (in wooden box) 700ml..........ZS278..........40% abv. Wild juniper berries are gathered by hand from plants that grow 5-6 metres from the Sardinian coastline and then transported in special cane baskets to the distillery to ensure they do not get damaged. The fresh juniper berries are macerated for 20-25 days and no other botanicals are added to make Giniu. The taste is delicate and smooth with a juniper intensity that isn’t overwhelming. A gin of this quality should be used in its purest expression, such as in a martini.

Boigin - Sardinian Gin

Wild, hand-gathered juniper berries, lemon peel, tangerine peel, orange peel and elicriso (Helichrysum italicum) are added to the infusion which is warmed slowly and kept temperaturecontrolled throughout the distillation process. The obtained liquor is 80% abv, then rests for one month to reach homogenisation, and is then diluted to reach 40% abv. On the nose, a fresh and lively aroma of juniper and fresh citrus peel, blossoms and Mediterranean herbs. Lively, citrusy and slightly floral on the mid-palate, with a dry and zesty finish.

Pigskin - Sardinian Gin 700ml..........ZS280..........40% abv. Juniper berries, myrtle, thyme, fennel, sage and lemon peel are added to the infusion which is warmed slowly and kept temperaturecontrolled throughout the distillation process. The gin is aged for 12 months in chestnut barrels which were previously used to age Vernaccia di Oristano wine. On the nose, aromatic herbs, spicy notes of nutmeg and toasted vanilla. Soft, round and warm on the palate with gentle spice and a lingering toasted note on the finish.

Hand-gathered myrtle berries grown metres from the oceanside are used for this infusion. Carta’s recipe uses 1.2kg of Sardinian myrtle berries per litre of distillate. (By contrast, commercial brands use only 300-400g of berries per litre.) On the nose, intense myrtle aromas with aromatic herbs, bay leaf, sage and plum jam. The taste is akin to putting a handful of ripe berries in your mouth. Ripe fruit dominates on the palate, with a smooth and refined balance between sweet and sour berry flavours, and then finishes with dry Mediterranean herbs.

Lucrezio R. was the first batch distillery in Sardinia. Their experience has been leveraged from three generations of traditional production, which has seen wild flowers, fruits and grapes transformed into traditional Sardinian liqueurs and fine grappe.

Limoncello Linea Classica Classic Lemon Liqueur

700ml..........ZS202..........28% abv. Lemons that grow on the Emerald Coast of north eastern Sardinia are carefully selected to produce this limoncello. The selected lemon peels are macerated in a water-alcohol solution using no added colours or preservatives, resulting in an incredibly intense flavour that highlights the quality and strength of the lemons used. This lemon pith flavour denotes a high quality limoncello and sets it apart from other commercial products. The taste is persistent and leaves the palate with a fresh aroma. Drink the limoncello chilled; fresh on ice; as an addition to cocktails; or use as an addition to desserts.

Mirto Rosso di Sardegna Classico - Myrtle Liqueur 700ml..........ZS166..........30% abv. Myrtle berries of Logudoro (northeast Sardinia) are collected by hand and then steeped in a water-alcohol solution. Careful screening sees the berries collected and returned day after day into the infusion. The soaking process allows for a gentle infusion of myrtle, which is the basis for the liqueur. The maceration takes place in stainless steel tanks at controlled temperature for about two months. Afterwards, the fruit is separated, filtered tand again kept in tanks at controlled temperatures to preserve the colour and flavour. It is ideal served chilled, or over ice.

For their Private Collection preparation, Lucrezio R. source myrtle berries from Gallura in northernmost Sardinia which is rich in granite soils. The berries are collected by hand and steeped in a water-alcohol solution. The soaking process allows for a gentle infusion of myrtle, which is the basis for the liqueur. The maceration takes place in stainless steel tanks at controlled temperature for about two months. Afterwards, the fruit is separated and filtered to get the brew that is kept in tanks at controlled temperatures again to preserve the colour and flavour. It is ideal served chilled, or over ice.

Mirto Rosso Barricato Myrtle Barrel Aged Liqueur 500ml..........ZS186..........38% abv. The raw material of the best berries of myrtle (Myrtus communis) are hand-selected mainly from the Logudoro area of northern Sardinia. The berries are then steeped in a water-alcohol solution, continuously topped with the berries collected day after day. The soaking process and ultimately the infusion of the myrtle, is the basis for the good liqueur. The maceration takes place in stainless steel tanks at a controlled temperature for about 2 months, after which the fruit is separated and filtered to obtain the final brew, which is then aged in oak. It is ideal served chilled, or over ice.

VARNELLI ENOTECA SILENO LIQUORI PORTFOLIO

Girolamo Varnelli established the Varnelli family distillery in 1868 as an artisan herbal distillery in the central Italian region of Marche and has remained a family company ever since. Varnelli has always created pure herbal liqueurs and bitters with ingredients from the Sibillini Mountains surrounding the distillery. Currently, the distillery is based in a modern facility in Muccia and is managed by four women of the Varnelli family. Here, they perfectly combine the traditional methods of artisan herbal production with the most up-to-date techniques for storing and bottling their liqueurs.

Anice Secco Speciale - Anise Liqueur 100ml..........ZS160..........46% abv. 700ml..........ZS157...........46% abv. Anice Secco is unique among the Mediterranean aniseed drinks because it is dry, not sweet. It is distilled with an infusion of wild aniseed according to a recipe that is known only to the Varnelli family. The strong, persistent aromas of aniseed develop into a fragrance of wild fennel, dill and cumin, enriched with floral scents. All-enveloping, fullbodied and medium-dry, it recalls the same strong, persistent aroma found in the bouquet: aniseed, cucumber and wild fennel. The finish is harmonious and very pleasant. This is excellent as a top up in coffee, or when served neat as it acts as an efficient aid to digestion without having the bitter taste usually found in other after-dinner drinks in Italy. It also adds a special something to ice-cream, pineapple and other desserts.

This fine liqueur has a base of a special Martinique rum selected by the Varnelli family. It is a refined expression of the Italian tradition of liqueurs (punch) to be drunk hot in the wintertime. It features scents of caramelised fruit and intense mandarin zest, accompanied by vanilla and roasted coffee. Not solely reserved for warm drinks, Mandarino makes an excellent base for refreshing cocktails and can be served over ice.

Punch alla Fiamma ‘Fantasia’ Rum Punch Liqueur 700ml..........ZS273..........35% abv. This fine liqueur has a base of Martinique rum selected by the Varnelli family. Martinique rum is the only rum in the world to have an AOC designation, and is distilled from pure sugar cane juice, not molasses. It is blended with a secret recipe of citrus and honey and other pure flavours. On the palate, it has aromatic flavours of coffee blended with caramel, roasted hazelnuts, cocoa and a slight smokiness which adds richness on the palate.

Caffè Moka Coffee Liqueur

700ml..........ZS258..........28% abv. Moka is a fine liqueur that is produced using real Italian espresso, and without any artificial flavouring or colouring. According to the Varnelli family recipe, it needs at least 6 months of seasoning and settling in order to acquire its particular taste and appearance. The distinctive aroma of espresso blends with notes of cocoa, vanilla, spices, tobacco, honey and caramel. The taste is pleasantly sweet and well balanced, and the aromas are persistent.

Amaro Sibilla Bitter Herbs Digestive 700ml..........ZS158..........34% abv. Since 1868 Amaro Sibilla has been obtained from a decoction of herbs, roots and barks prepared over a wood fire and sweetened with honey. A long ageing and decanting period is then needed in order to get a transparent smooth tasting product, moderately bitter and with the right alcoholic strength. On the nose it has strong aromas of bitter herbs and dried fruits (chestnuts, walnut husk), followed by scents of coffee and honey. The first impression of sweetness due to honey is then followed by a bitter tannic taste with a long-length finish. This roughness is corrected by fine aromas of chestnuts, honey, dried fruit, vanilla and coffee. Drink neat or over ice as an aid to digestion, or hot with a twist of lemon rind. It is an exquisite thirst-quencher when mixed with soda water or lemonade, or for an original aperitif with vermouth bianco.

Amaro di Erbe Tonico Digestivo - Bitter Herbs Digestive 500ml..........ZS260..........30% abv.

This intriguing amaro is obtained from a decoction of herbs, roots and barks which are prepared over a wood fire, and only pure honey is used to sweeten this blend. It offers aromas of nearly stewed ripe fruit and sultanas, with scents of gentian, rhubarb, sandalwood, and honey. The taste is dry, bitter and warm, and its tannic structure is powerful and somewhat drying to the palate. It has a pleasantly medicinal essence, which confirms its excellent digestive properties. Serve neat, or over ice with a slice of orange.

Delizia alla Cannella Cinnamon Essence 100ml..........ZS261..........30% abv. Pure cinnamon essence is perfect to prepare special coffee, cocktails, mulled wine, sangria, and also very useful in pastry making. At first, the aroma of cinnamon is dominant, sustained by a perceptible alcohol component, then vanilla, nutmeg and bergamot are clearly evident. Sweet, alcoholic, mellow, all the aromas found in the bouquet are developed. Only a few drops are needed to enhance drinks and other recipes.

VINCENZI ENOTECA SILENO LIQUORI PORTFOLIO

Distillerie Vincenzi was founded in 1930, and is one of the best known companies in the field of production and sale of liqueurs, spirits and chocolate on the Italian scene. In recent years, the company has seen excellent growth both from the commercial point of view and in the evolution of its products, thanks to the conservation of traditional methods of production and the unchanged use of raw materials and ingredients that have always been used. Their flagship product, a well-known gianduja cream liqueur belonging to the ancient culture and tradition of Turin, has been served in the coffee shops of the city since the early nineteenth century.

Bicerin Di Giandujotto Chocolate Hazelnut Liqueur 700ml..........ZS173...........15% abv. The recipe for this delicious chocolate liqueur originated in the early 1800s when the coffee and cocoa were way too expensive to import from overseas. Piemontese hazelnuts were used to dilute and lengthen the precious chocolate supply, thus producing what we now know as gianduja. From this stemmed the liqueur Bicerin gianduiotto, and the recipe has not changed since. Bicerin is dialect in Piedmont, Lombardy and Veneto for a ‘small glass’. For 200 years Bicerin has been the drink of choice of the Turinese noblemen and peasants alike. The liqueur is creamy and dense, with rich chocolate flavour and toasted hazelnut aromas. Drink as an alternative to dessert, add to coffee, hot chocolate, or pour over any dessert for a wonderful chocolaty addition.

Amaro Derbior Bitter Herbs Digestive 1L.................ZS175..........19% abv. Amaro Derbior is based on an 1890 recipe by Dr Guglielmo Casalotto who created it as a medical tonic. The distinguishing feature of this amaro is that the alcohol used is fine Sicilian Marsala rather than the more commonly used distillates such as brandy. It offer flavours of sweet, fresh aromatic herbs upfront with a cleansing, medicinal and bitter finish. Enjoy this lower alcohol amaro neat, or over ice with an orange garnish.
