Celles sur Belle butter is made by Sèvre et Belle, a small cooperative in the village of Celles sur Belle in the west of France, dating back to 1893. Founded and run by local folks, it has remained faithful to tradition while constantly adapting to advances in technology. They have deliberately restricted themselves to a reasonable size. Celles sur Belle is a protected, AOC butter from the Poitou-Charentes region of France. It is made in a traditional way in barrel-shaped churns from cream fermented for 24-36 hours. Cut the figs into four quarters. Heat a frying pan with the honey, then once the honey begins to bubble, add the fig quarters and cook the dish for 2 minutes. Deglaze it with the balsamic vinegar and leave for another minute, then divide into glass cups.
Preheat the oven grill. Toast the sandwich bread slices. Boil the eggs for 9 minutes, then peel them and cut each into slices. Slice the tomatoes and shred the lettuce. Mix the mayonnaise together with the lettuce. Cut the cheese into slices. Now you can build your sandwich. Fantastic!

The Salzarulo family began its tradition in the Latticini business in the town of Lioni, Italy many decades ago. In 1980, the family brought its fine art of cheese-making to Brooklyn, New York where it created a name for itself making fresh, whole milk mozzarella cheese.
