WHAT IS CHEESE?
Just as a note, our classifications encompass a wide variety of cheeses. They are the industry standard classifications, but that doesn’t make it any easier to determine whether Havarti is a semi-hard or semi-soft cheese. If you are a connoisseur, privy to the molecular details of cheesemaking, this section will cover the basics and feel free to breeze right on by. If you don’t know the process behind cheese, we’ll break down in a straightforward manner. All cheesemakers follow a mix of these techniques in their own way, creating wildly different cheese. Some use ages-old traditions while others are born from the modern-day renaissance in artisan cheesemaking- taking old traditions and making them vibrant and new. You will encounter old and new-world cheeses side-by-side. What distinguishes each category is the amount of moisture present in the final product. We have done research, met with cheese makers and made some cheese ourselves. Using our collective expert experience, we will illustrate the techniques to give you a primer of sorts on the complicated, magical art form known as cheesemaking.

Setting the Milk
This breaks down to acidification and coagulation. First, bacteria must be added to clean milk (done after pasteurization when dealing with pasteurized cheeses). Back in the olden days, this was done naturally by allowing milk to acidify with time. By some miracle, the right bacteria proliferated and cheese was born. Now, most cheesemakers use freeze dried starter cultures, which include the lactic acid bacteria that facilitates acidification. To complete the first step, the milk solids must separate from the liquids, or whey. Coagulation is facilitated by rennet, which was traditionally derived from the stomach of cows and other ruminant animals. Vegetable and microbial rennet are both vegetarian alternatives that are now commonly used, less expensive alternatives to animal rennet. Through coagulation, milk protein separates from the whey. Meanwhile, milk fat, which is part of the whey, clings to the separated protein, forming a mass that we call curds.

Cutting the Curds
This is the important initial step for distinguishing which type of cheese is being made. Milk has been separating, the curds are coagulating and the bacteria has fundamentally changed the composition of the milk. At this point, the vat is filled with a gelatinous mass. Cheese makers will wait for the curd to reach their desired consistency, usually judging it by running a knife or finger through the curd, testing how it breaks apart. They are looking for something clean, so that all cuts will be uniform, without irregular crumbling or jagged edges. In this state, as one solid mass, very little whey can be expelled. The more surface area exposed, the more whey can be dispersed. By that logic, the smaller the curds are cut, the more whey is expelled. Cheese makers cut curds in a uniform manner to ensure consistent moisture is retained throughout the entire body of curds and, eventually in the final product. This is often done using a harp, which is a metal frame that has wires strung evenly throughout. The cheesemaker will carefully run this through the curd, hence the term “cutting the curd.�

Cooking & Holding
Cheese makers use vats with hollow walls to enable this step of the process. Hot water is piped in and circulated, heating the curd and whey mixture. The temperature varies based on the type of cheese being made. For a softer, or fresh cheese, the curds are heated at a mild temperature, allowed to cool slowly and given time to rest. The harder the cheese, the higher the temperature. Meanwhile, as the curds are being heated they are also being stirred. Similar to the previous steps, the rate and intensity of stirring all depend on the cheese you are trying to end up with. Circulating the curds prevents them from sticking together and allows for an even and consistent temperature throughout. Ultimately, all of the curds need to reach a specific temperature for a few reasons: to meet food safety regulations, to create the ideal environment for the bacteria to continue its work, and in some cases to set the stage for eventual, prolonged aging.

Dripping & Draining the Curd Through cutting, heating and stirring, the curds and whey have separated. If you were to reach your hand in to the vat at this point, you would pull it out with a handful of distinct curds that can range in size and density from popcorn-like to jello-cube style. Dipping is one of two ways to remove the whey, and usually occurs by ladling (often by hand) the curds in to a basket or mold. The intention with this style of draining is to be as gentle as possible so the curds can retain their moisture. The second method is by opening a valve in the vat and allowing the whey to drain out, or piping the mixture in to a tank and allowing the whey to drain from there. This method works well for harder cheeses that do not need to hold as much moisture or for larger batches of cheese.

Knitting the Curd
The final product begins to take shape in this stage. What has so far been an unappetizing mess begins to knit together and take form. This can be as simple as a large cheese cloth hanging in bundles to make a free form mass of light, soft chèvre or curds in a mold to form a wheel of some aged, hard cheese.

Pressing the Curd
Not all cheeses are pressed, some are done so under their own weight, like in the ongoing example of chèvre. For pressing, the purpose of the step is continued expulsion of moisture. For some cheeses, this means flipping regularly to continue even pressing under its own weight. For others, it can mean being pressed under the weight of other cheeses or weights. It varies depending on the amount of moisture desired in the final product and the length of aging that will take place down the road.

Salting the Cheese
This is an important step which helps to develop flavor and moisture in the final product. Salt is one of the main (and few) ingredients in cheese; the others being milk, rennet, and starters. Depending on the final desired product, very little salt can be sprinkled on to the curds before pressing, or on the surface before the aging period, which is called dry salting. The effects in this second method will take longer to be seen, but ultimately both will cause additional moisture to be drawn from the cheese, aiding in its preservation for aging. The alternative to dry salting is wet salting. In this case, the same results are achieved as above with an additional final benefit: wet salting encourages the growth of a natural rind. In this case, a wheel of cheese is submerged in a brine bath, a mixture of salt and water. When the cheese is dry salted, it causes moisture to be evaporated from the entire piece. When wet salting, this process is concentrated around the outside, drying the edges and developing a natural rind.

Curing the Cheese
After all of the preceding steps, you’ve got a piece of cheese whether it’s just a mass of fresh curds, a wheel, block or truckle. Many cheeses skip the curing stage and go right onto aging whether overnight or for days, months or years. However, additional curing techniques can elevate cheeses to a whole new depth of deliciousness. If a cheese is washed in beer or wine, that would be considered curing. If it is dusted with vegetable ash, wrapped in fruit leaves, smoked or sprayed with secondary cultures, that is considered curing. The rind can be rubbed with herbs and spices like rosemary, pimentos or olive oil in this stage. Really, this is a highly individual step that creates unique, delicious and extraordinary cheeses.

Meadow Creek Dairy Meadow Creek Dairy is a family farm in the mountains of southwest Virginia. Since 1980, farming has been their craft.
