A 2018 World Championship Cheese Contest Top 20 finisher, Chandoka is inspired by the mother and three aunts of Larry Hedrich, owner of LaClare Farms. The four sisters grew up on the farm where LaClare Family Creamery is now located. They used the first two letters of each of their names and came up with CHANDOKA as kids. Cave Aged Chandoka is a clothbound New Zealand style cheddar made from pasteurized cow and goat milk. Aged for a minimum of 8 months, it smells of cellar and vegetable notes with a fudgy paste that tastes of rich butter, citrus, grass and horseradish.

Milton Creamery is the result of a dream. Since the opening of their farmstead family business in 2006, the Musser Family continues to make their dream of doing something to help others in the agriculture world and beyond a reality everyday. They do this through exceptional cheesemaking which adds value to the milk for dairy farmers and creates jobs in the local community while bringing people everywhere delicious, responsibly made products created with art and passion from Southeast Iowa. Husband and wife co-founders, Rufus and Jane Musser, with their three sons, Junior, Galen, and Mark dedicate their lives to dairy farming-- a perfect pair with their Mennonite faith. According to Rufus, "Jane and I are originally from Pennsylvania where I grew up working with my father growing and selling produce. In September 1992, we moved to Southern Iowa and began dairy farming. Our Mennonite traditions value hard work, ingenuity, and simple living. Many of our neighbors are Old Order Amish. Although different, Mennonites and Amish are both Anabaptists, of Swiss heritage, and share many values. These common values made it easier for us to work together as dairy farmers and cheesemakers to start Milton Creamery." APRIL 2018 | 10
The Musser family mixes fresh ingredients, art, and passion to create fine cheese.
CHEESE: the 'WHEY' you like it. The Mussers get all of their milk from cows on nearby, small Amish dairy farms. Herds are managed and milked by the immediate family, and all of the herds are less than sixtyfive cows. The farmers that provide milk to Milton Creamery don't give their cows artificial growth hormones, like rBGH and rBST, and the cows are grazed throughout much of the year. Over winter, the farmers continue to provide the cows with quality feed. This classic approach to dairy farming creates simply delicious milk used at Milton Creamery. In the creamery, the Musser's son, Galen, has been in charge of making the cheese at Milton Creamery since he was sixteen. He loves what he does and his passion has paid off. At just seventeen, Galen brought home his first cheese award from the U.S. Cheese Championship. Prairie Breeze won Best of Class in the Open Hard category.
Milton Creamery worked hand-in-hand with the Flory Family of Jamesport, Missouri, to develop this aged clothbound cheddar. Instead of aging it in plastic, Flory's Truckle ages with the cheesecloth left on the outside, allowed to dry for ten days, then coated with lard to minimize mold penetration, and aged twelve more months. The cloth allows it to breathe resulting in a dry, crumbly texture with incredible rustic, sharp flavors.
Prairie Breeze is a twist on a well-aged white Cheddar style cheese, aged for a minimum of 9 month, made with Vegetarian Rennet and no added color. Sweeter than your typical cheddar with lots of flavor, crumbly yet creamy with a little crunch from the calcium crystals developed during the aging process.
For a sophisticated update on the classic 'cheddar & apple' pairing, use creativity to compose an artistic plate sprinkled in ingredients pleasing to your palate. There is no right or wrong except not to try your hand at playful plating!

Cricketer Farm Extra-Mature Cheddar As London burned under the relentless World War bombing, millionaire tycoon Max Aitken – later Lord Beaverbrook – came over to the UK from Canada and established himself as the right hand man of Prime Minister Winston Churchill. Lord Beaverbrook’s energy spread to modernizing British farming which had severely declined over the previous two decades, and he gathered a group of approximately 12 farms into an efficient operation by 1942, bringing in New Zealander Sandy Copeland, who taught British farmers the art of grass feeding, and how to achieve a greater output and quality. Out of this partnership arose the heritage of Cricketer Farm, a relationship which for these two giants of business, publishing and farming, lasted 36 years. The rich green pastures of the rolling Somerset, England, plains gave birth to a name that has endured more than 70 years.

Kaaslands’ Kanaal is crunchy, butterscotch, salty-sweet cheese candy. Kanaal is a Proosdij which is a semi-firm to firm style of washed-curd cheese made very similarly to Goudas using specific combinations of mixed-strain start cultures. The delicious, Dutch-made result has aroma, flavor, and texture profiles with characteristics a cross between Gouda and Parmesan cheese. This also includes the satisfying crunchiness of increasing amounts of tyrosine crystals that form with age along with even more sweet, fruity, toasted caramel, and bouillon flavors than a Gouda cheese. Proosdijs have lower butterfat in dry matter than the required 48% for official Gouda status. With Kanaal coming very close at 45% it has the benefits to satisfy while also warranting those extra snuck bites.

Based in Muscoda, Wisconsin, the multi-generational family behind the Meister Cheese Company created Kindred Creamery out of a passion for integrity, sustainability, and equitable practices concerning their land, animals, and community. The company believes that how you treat animals reflects not only their contentment, but also leads to higher quality milk and the best possible cheese. They reward dairy farmers by paying higher prices for their milk when they follow strict & humane agricultural and animal rearing practices as outlined in Kindred’s Cows First program. This includes allowing all cows from the 208 participating farms to roam freely outdoors, grazing naturally as they please.

A little while later, he returned to this place and discovered his meal covered in a blue-green mold. Famished, he tasted the cheese and was delighted. Roquefort, alchemy between the natural ventilation of a cave, rye bread and the cheese of the Lacaune ewes had been born. In 1925, Roquefort became the first recognised Appellation d’Origine cheese.
