There are over 20,000 species of mushrooms, but only about 20 are edible. Mushrooms have a very savory and earthy taste. They are the only food that possess the fifth primary taste which is umami. While April showers brings May flowers, we're bringing you something just as good as flowers and that's bloomy rind cheeses! Bloomy rind or surface ripened cheeses, is the term used for cheeses that ripen from the outside in. Examples of bloomy rind cheeses are bries and camemberts, which have a buttery flavor and can sometimes have an earthy and mushroomy taste. The rind is completely edible and is sometimes the

best tasting part of the cheese because it is enriched with so much flavor. The fuzzy rind found on most bloomy rind cheeses is the result of molds, such as Penicillium candidum or Penicillium camemberti being introduced to the surface of the cheese during the cheesemaking process. Mold is typically not known for being a good thing, but in this case it is. As the aroma-producing mold begins to break down, a creamy taste advances all through the interior of the cheese, producing a luscious and smooth texture. Bloomy rind cheeses are so delicious that legend has it that after Napoleon tasted a bloomy rind cheese for the first time, he was so overwhelmed with the luxurious taste of this particular cheese he decided to officially name it after the area the cheese originated from, Camembert. Montboissié du Haut Livradois is produced in the highest part of the Jura Mountains in the Franche-Comté region. It dates back to the 19th century when producers of Comté decided to make a smaller cheese from the day’s leftover curd for their own consumption.
