Unlike truffles, mushrooms are easy to find because they grow above ground and typically in dark and damp areas. Mushrooms are a unique and versatile delicacy. There are over 20,000 species of mushrooms, but only about 20 are edible.

Mushrooms have a very savory and earthy taste.

They are the only food that possess the fifth primary taste which is umami. Umami is what gives Mushrooms their meat-like taste.

Truffles are a very rare delicacy as they cannot be planted or cultivated. Truffles grow on the roots of trees and only in certain areas of the world (Italy, France and the Pacific Northwest). The only reason we are even able to find truffles is because of their aroma. Animals such as dogs and pigs sniff out the strong smell that truffles contain and they dig them out from under the ground. They have a very distinct flavor, not something that is easily compared to other tastes. They have been compared to gold and equally as expensive, as truffles are recognized as the most expensive food in the world. A two pound white truffle sold for $300,000 dollars back in 2010 during an auction in Macau.

Bloomy rind or surface ripened cheeses, is the term used for cheeses that ripen from the outside in.

Examples of bloomy rind cheeses are bries and camemberts, which have a buttery flavor and can sometimes have an earthy and mushroomy taste.

The rind is completely edible and is sometimes the

best tasting part of the cheese because it is enriched with so much flavor. The fuzzy rind found on most bloomy rind cheeses is the result of molds, such as Penicillium candidum or Penicillium camemberti being introduced to the surface of the cheese during the cheesemaking process. Mold is typically not known for being a good thing, but in this case it is.

As the aroma-producing mold begins to break down, a creamy taste advances all through the interior of the cheese, producing a luscious and smooth texture.

Montboissié du Haut Livradois is produced in the highest part of the Jura Mountains in the Franche-Comté region.
