Wisconsin

You can't think of Wisconsin without thinking of cheese! Wisconsin Dairy Farmers have been making cheese for over 175 years, combining art and science in a tradition so rich you can taste it. The Wisconsin Milk Marketing Board, Inc., dba Dairy Farmers of Wisconsin, is a non-profit organization funded entirely by Wisconsin's dairy farm families. The organization has been created to increase the sale and consumption of Wisconsin milk and dairy products. In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsin-produced dairy products. An additional five cents goes to the National Dairy Promotion & Research Board for generic dairy promotion activities at the national levels. Dairy Farmers of Wisconsin's primary mission is to "grow demand for Wisconsin milk". Key Dairy Farmers of Wisconsin roles within Wisconsin's dairy industry include: establishing new markets, funding dairy-related research, educating consumers about the quality and nutritional importance of Wisconsin milk and dairy products, and showcasing the important economic contribution that dairy makes to their communities and their state. "Wisconsin Cheese" means natural cheese made from bovine milk and produced in the state of Wisconsin or processed cheese made exclusively with natural cheese produced in the state of Wisconsin in licensed facilities using bovine milk. Today, Wisconsin is home to nearly a quarter of the nation's total dairy farms, 95% of which are family owned. Wisconsin is #2 in nationwide milk production, generating 2.44 “We do more flavors and billion pounds of milk per month. varieties of cheese than

GREAT Rinds THINK ALIKE Spring is here, which means warmer weather, longer days and blooming flowers. While April showers bring May flowers, we're bringing you something just as good as flowers: bloomy rind cheeses!

Bloomy rind, or surface ripened, is the term used for cheeses that ripen from the outside in and have soft, edible rinds. Bloomy rind cheeses, such as Bries and Camemberts, tend to have buttery or earthy flavors and creamy, luscious interiors. The fuzzy rind found on most bloomy rind cheeses is the result of molds, such as Penicillium candidum or Penicillium camemberti, and yeast being introduced to the surface of the cheese during the cheese-making process. Mold is typically not known for being a good thing, but in this case, it is. The mold and yeast metabolizes the fat and protein of the cheese from the outside in, resulting in an extremely creamy and gooey interior texture and earthy, mushroomy flavor. The longer a bloomy rind cheese is aged, the more creamy its texture and complex its flavor due to the length of time that the fat and protein have metabolized. Many believe that bloomy rind cheeses originated in Normandy, France hundreds of years ago. Because there was no refrigeration, to avoid waste people would mold their thick, soured milk into disks and store them in cold, dark basements. The mold of the cellars were attracted to the soured milk and over time formed bloomy rinds on the curds. Legend has it that after Napoléon tasted a bloomy rind cheese for the first time, he was so overwhelmed with the luxurious taste of this particular cheese that he decided to officially name it after the area the cheese originated from, Camembert. All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk.
