Everyone has distinct memories from their childhood of looking forward to their comforting and toasty after-school grilled cheese. It’s no surprise that this simple yet satisfying sandwich has its own special day.

Though the history of grilled bread with cheese spans many centuries, the modern-day grilled cheese that Americans know and love originated in the 1920s, when sliced bread and American cheese become easily available. The creation of an open-faced sandwich using the sliced bread and cheese and cooked over a hot buttered pan became a quick and cheap staple during the Great Depression and were nicknamed “cheese dreams”. During World War II, the top slice of bread was added and were referred to as simply “cheese filled sandwiches”. The meal once eaten out of necessity eventually evolved into an extremely popular comfort food that has been adapted into thousands of variations.

Clearly, the best way to celebrate National Grilled Cheese Day is to cook up your favorite version of this American comfort food classic. Ultimate Grilled Cheese Breakfast Sandwich INGREDIENTS •

2 tbsp butter, at room temperature

8 slices sourdough bread

3 tbsp grainy mustard

8 slices peameal bacon, cooked

8 oz Wood River Alpine Style Cheddar, cut into 8 slices

4 eggs, pan-fried

PREPARATION 1. Butter one side of each slice of bread. Spread grainy mustard on unbuttered sides of half of the bread slices. Place slice of peameal bacon on top of mustard. Layer cheese slice, fried egg and another cheese slice over bacon; cap with remaining slices of bread, buttered sides out. 2. Heat large nonstick skillet over medium-low heat; cook sandwiches for 2 to 3 minutes per side or until bread is golden and toasted and cheese is melted.

3. Tip: Cook sandwiches in a panini press if desired.

Dairy Farmers of Wisconsin Welcome to the state of cheese! You can't think of Wisconsin without thinking of cheese! Wisconsin dairy farmers have been making cheese for over 175 years. Combining art and science in a tradition so rich you can taste it. In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsinproduced dairy products. An additional five cents goes to the National Dairy Promotion & Research Board for generic dairy promotion activities at the national level. Dairy Farmer's of Wisconsin's primary mission is to "Grow demand for Wisconsin milk." Key Dairy Farmers of Wisconsin roles within Wisconsin’s dairy industry include: establishing new markets, funding dairyrelated research, educating consumers about the quality and nutritional importance of Wisconsin milk and dairy products, and showcasing the important economic contribution that dairy makes to their communities and their state. Today, the Wisconsin Milk Marketing Board, Inc., dba Dairy Farmers of Wisconsin, is a non-profit organization funded entirely by Wisconsin's dairy farm families. All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. These cheese rounds are then taken to the master cheese maker for maturing. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. This regular testing and observation are essential for transferring the rounds of cheese to the appropriate maturing cellars and obtaining the best flavors. The rounds are then kept in a fermentation cellar; this is when the living organisms inside and outside the cheese flourish most. The

final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes.
