“Although the first U.S. reference to panini dates to 1956 and a precursor appeared in a 16th-century Italian cookbook, panini sandwiches became trendy in Milanese bars, called paninoteche, in the 1970s, when office workers were looking for quick lunch choices. Trendy U.S. restaurants, particularly in New York, began selling the sandwiches, whose popularity then spread to other U.S. cities, each producing distinctive variations of the sandwich. Food historians generally agree, panini, as we know them today, originated in the sandwich shops of Italy, perhaps as early as the 1960s. A survey of newspaper articles confirms that the panini sandwich caught the American consumers attention in the mid-1970s. As time progressed, panini evolved from upscale fare to trendy sandwiches for everyone. In many English-speaking countries, a panino (from the Italian, meaning “small bread, bread roll”) is a grilled sandwich made from bread other than sliced bread. The plural form of “panino” in Italian is panini. Examples of the bread types used for panini are ciabatta, foccacia and Italian baguettes. The bread is cut horizontally and filled with deli ingredients or other foods and then pressed in a grill. Dill-icious Turkey Panini Salty, sweet, and smokey, this panini packs plenty of flavor no matter how you press it. INGREDIENTS butter 1 ciabatta or olive bread roll 4 thin slices Smokey Turkey Breast 1/3 cup Castello Creamy Dill Havarti, shredded 1 Tbsp Dalmatia Organic Apricot Spread 1/2 of a small yellow or white onion, sliced 2 Tbsp Dalmatia Green Olive Tapenade TO MAKE ONE SANDWICH Place a non-stick skillet over medium heat and add a tablespoon of butter. Spread it around the pan and watch it melt completely. Add onions and green olive tapenade, sauteeing until onions are slightly browned. Cut roll horizontally, without slicing all the way through. Stuff with turkey slices, add the onion/olive tapenade mix, and Castello Dill Havarti shreds. Add Dalmatia Organic Apricot spread to the middle for a sweet center. Add butter or olive oil to panini press and grill for about 2-3minutes or until cheese is fully melted.

“Most of us have heard of the fourth Earl of Sandwich, otherwise known as John Montagu. In the late 1700’s, French writer Pierre-Jean Grosley recounted his observations of English life in a book called Londres (translated to English under the name A Tour to London). In the book, a few lines were written that forever tied this food invention to the Earl of Sandwich:
A minister of state passed four and twenty hours at a public gaming-table, so absorpt in play, that, during the whole time, he had no subsistence but a piece of beef, between two slices of toasted bread, which he ate without ever quitting the game. This new dish grew highly in vogue, during my residence in London; it was called by the name of the minister who invented it. While it is not clear if this anecdote is completely true, the book gained popularity and the story took hold. Soon the name was official—when you ate two pieces of bread with something in the middle, you were eating a “sandwich.” Though the Earl of Sandwich (or, perhaps, his cook) deserves credit for helping sandwiches gain a name and popularity, variations of the concept have been around for centuries. It’s difficult to pinpoint exactly when or where they first appeared. Farm laborers in rural France had been eating meat between sliced bread long before it had a name, though the sandwich likely started even earlier than that circa 110 BC in Jerusalem with the invention of the Korech or “Hillel sandwich” that is eaten during Jewish Passover. It may indicate that this was already a popular way of serving food in the Middle East. Sandwiches first appeared in American cookbooks in 1816. The fillings were no longer limited to cold meat, as recipes called for a variety of things, including cheese, fruit, shellfish, nuts and mushrooms. The years following the Civil War saw an increase in sandwich consumption, and they could be found anywhere from high-class luncheons to the taverns of the working class. CY-500 Kynthos Halloumi 12x8.8oz • $40.28/CS Halloumi is a fresh, un-ripened frying cheese similar to a milky and light mozzarella-- if it were much firmer and slightly saltier. It has been enjoyed all over the world since its origins in what is now known as the Middle Eastern island country of Cyprus circa 395 AD. Today, halloumi is the crown jewel of Cyprus cuisine and is also widely used in Mediterranean cooking including in the traditional dishes of neighboring Turkey and Greece, as well. It is typically produced with different ratios of mixed milk types, but, thankfully, Kynthos makes it simple to choose their version over all others by including a distinctly delicious combination of cow, sheep, and goat milks. The result is a subtly complex taste well suited to stand on its own equally as well as it does when paired with other ingredients. Halloumi is special for being made without the use of acid or acid-producing bacteria as with most cheeses. Instead, milk and rennet are heated to about 195°F to bring out the whey proteins. The fresh curd is then skimmed off, drained, and boiled in the clarified whey until floating.
