Ideal picnic foods should be able to be served cold and be eaten without a fork, knife or plate. Humboldt Fog Crostini

The days for late summer brunches are here, and this Humboldt Fog crostini is the perfect salty-sweet appetizer — and no one will guess how easy it was to put together!

Ingredients 15-20 SERVINGS

15 MINUTES

1 French baguette

3 tablespoons butter, melted

Humboldt Fog Grande

1 tablespoon olive oil

Soft-ripened goat milk cheese featuring a distinctive ribbon of edible vegetable ash. Buttermilk and fresh cream flavors with floral notes and a clean citrus finish.

8 ounces fig jam

Preheat oven to 400°F. Cut French baguette into 1-inch wide slices. Mix together melted butter and olive oil. Brush the mixture on both sides of baguette slices and place on baking tray. Toast in oven on 7 minutes each side until golden brown.

After the baguette slices have cooled slightly, spread a generous amount of fig jam on each slice. Add one piece of prosciutto and a crumbling of Cypress Grove Humboldt Fog to each crostini. Sprinkle with lemon zest and garnish with chopped herbs if desired.

Brie & Walnut Sandwich

Creamy, crunchy, and slightly-sweet, this sandwich is something to savor. Enjoy it alongside a crisp white or rosé.

1/2 yellow onion, thinly sliced 1/2 tablespoon butter, divided 1/2 teaspoon sugar 1/4 cup chopped walnuts 1 tablespoon apple preserves 1 small French baguette 3 ounces Supreme Brie, sliced 1 cup arugula salt and pepper

Melt 1/4 tablespoon butter in a skillet. Add the sliced onion and cook, stirring often, until lightly browned, 3-4 minutes. Add the sugar and reduce the heat to low and cook until deep brown and caramelized (about 20 minutes).

Remove onions from pan and put aside. Wipe the pan clean and return to medium heat. Add the chopped walnuts and toast for about 5 minutes, stirring often. Add the chopped, toasted walnuts into the apple preserves and stir well.

Melt the remaining butter over medium heat and add the arugula. Season with salt and pepper and cook for about 5 minutes, until wilted.

Slice the baguette in half lengthwise and add the cooked arugula onto one side. Top with the sliced Supreme Brie and walnut apple preserve mixture. Top with the other slice of bread and cut the sandwich into two halves. Serve immediately.

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969.
