Roasted Butternut Squash Soup with Goat Cheese MAKES 4 SERVINGS INGREDIENTS

- 2 ounces Montchevre Plain Goat Cheese, plus extra for garnish - 2 tablespoons unsalted butter - 1 butternut squash - 1 onion, diced - 1 carrot, peeled and diced - 2 garlic cloves, minced - 4 cups chicken stock - 1 teaspoon salt - 1/2 teaspoon black pepper - Fresh thyme sprigs for garnish DIRECTIONS

1. Heat oven to 350 degrees Farenheit. Cut the butternut squash in half lengthwise and scoop out the seeds. Put the two squash halves cut side down on a pan lined with aluminum foil and roast in oven until tender, about 45 minutes to an hour. 2. When done cooking, scoop the insides of the squash into a bowl. Discard the skin. 3. Over medium heat, melt 1 tablespoon of butter. Add the diced onion and carrot and saute for 5 minutes. Add minced garlic and cook for 1 additional minute. Add the cooked squash, chicken stop, salt and pepper and simmer for 25 minutes. 4. After 25 minutes, pour into a blender along with the Monchevre Plain Goat Cheese. Blend until smooth. Basic Pie Crust

MAKES 1 10 INCH PIE CRUST INGREDIENTS

- 4 ounces cold President Unsalted Butter - 1 1/4 cups all-purpose flour - 1/2 teaspoon salt - 1/2 teaspoon sugar - 3 to 5 tablespoons ice water DIRECTIONS

1. In a food processor, quickly pulse the flour, salt, and sugar to mix. 2. Use the President Unsalted Butter straight from the refrigerator. Cut it into cubes and add it to the food processor. Pulse until the mixture resembles coarse sand. 3. Slowly add the ice-cold water one tablespoon at a time, pulsing between each addition. Stop adding water once the dough comes together and pulls away from the sides of the food processor. 4. Remove dough from food processor and flatten into a disk. Wrap in plastic wrap and refrigerate it for at least 90 minutes. 5. Flour your counter and a rolling pin. Roll out the refrigerated dough disk until the diameter of the disk is roughly 14 inches. Wrap the rolled crust around the rolling pin to make placement into the pie pan easier. 6. Transfer the crust to the 10 inch pie pan and crimp the edges if desired. Bake according to the directions of the pie recipe that you are using.

1. Grease an 8x8 inch pan with Lurpak Unsalted Butter and preheat oven to 350 degrees Fahrenheit. 2. To make the cookie base, cream together softened Unsalted Lurpak Butter, flour, cornstarch, brown sugar, and salt until a dough forms. Flatten the dough into an even layer in the buttered pan. 3. Bake the cookie base for 10-12 minutes until edges are slightly golden. 4. To make the topping, put oats, brown sugar, flour, and cold, cubed Salted Lurpak Butter into a bowl. Rub the cold butter between your fingers until a coarse sand texture is achieved. 5. To make the filling, microwave the Agour Dark Cherry Jam for 30 seconds to soften. Evenly spread the jam over the cookie base. Place the cherry halves over the jam. 6. Sprinkle the streusel topping over the jam and cherries. 7. Bake for 25-30 minutes, until the streusel topping becomes golden brown. Cool for 45 minutes before cutting and serving.

Cheddar Cheese Apple Pie

MAKES 1 9 INCH PIE INGREDIENTS

- 4 oz shredded Cabot Extra Sharp Cheddar - 2 basic pie crusts (pg. 17) - 6 cups peeled, cored, and thinly sliced Granny Smith apples

-3/4 cup sugar -2 tbsp instant tapioca - 3/4 tsp cinnamon -1/4 grated nutmeg - Pinch of salt

DIRECTIONS

1. Toss together sliced apples, sugar, tapioca, cinnamon, nutmeg and salt. 2. Roll out one disk of dough on well-floured surface, rotating, turning over and sprinkling with more flour as needed, into approximate 12-inch round. Fold in half and transfer to 9-inch deep-dish pie plate, easing, not stretching, it into place. 3. Spoon apple mixture into pie plate. Cover with shredded Cabot Extra Sharp Cheddar. 4. Roll out second disk of dough. Moisten edge of bottom crust with water and place top crust over apples. Press edges of dough together, trimming excess to about ½ inch. Tuck dough under itself and crimp with your fingers or a fork to seal. Make several slits in top crust to allow steam to escape. Top with sugar if desired. Refrigerate pie while preheating oven to 425°F. 5. Bake pie for 20 minutes. Reduce oven temperature to 350°F and bake for 35 to 45 minutes longer or until crust is golden brown, apples are tender and filling is bubbling thickly, covering edge with foil if browning too quickly. 6. Cool to lukewarm or room temperature and serve.

DIRECTIONS 1. Fill a large pot with salted water and set it over high heat to come to a boil. Plunge lobster into water and cover pot. Cook for 8 to 10 minutes, or until it is bright red. Check doneness by pulling an antenna; if it comes off without resistance, the lobster is done. Remove lobster to a bowl and allow to cool. 2. Heat oven to 375 degrees, with a rack in the upper third of the oven. Use a tablespoon of butter to butter a 9-by-13-inch-square baking pan. 3. In a blender, purée cottage cheese, milk, mustard, cayenne and nutmeg, and lightly season with salt and pepper. Transfer mixture to a large bowl, add grated Vat 17 cheese and uncooked pasta and stir well to combine. Pour into prepared pan, cover tightly with foil and bake for 30 minutes. 4. Meanwhile, crack lobster claws and tail over the bowl and remove the meat, reserving all liquid that comes out of the lobster. Roughly chop lobster meat. 5. Uncover baking pan, gently stir in lobster meat and up to 2 tablespoons of the reserved lobster juices, and dot with remaining tablespoon of butter. Bake, uncovered, for 30 minutes more, until browned on top. Let cool for 15 to 20 minutes before serving.

DIRECTIONS 1.Pre-heat the oven at 175ºC. Grease 6 cocottes (one person oven dishes) with a bit of butter. 2.Melt the butter in a frying pan and stir in the flour. Let it fry for a while, without letting it turn brown. Pour in the milk while stirring and keep stirring until it becomes a thick sauce. Take the pan off the heat, mix in the herbs and season it with salt and nutmeg. 3.Mix in the egg yolks one by one. Put everything in a big bowl and let it cool until lukewarm. 4.Meanwhile whisk the egg whites with a pinch of salt. First mix the Prima Donna maturo through the flour mixture and then airy scoop the egg whites through. Scoop the soufflé mixture carefully in the oven dishes. 5.Bake the soufflés done in about 25 minutes. Don’t open the oven during the first 15-20 minutes! The soufflés are done when the center isn’t moving anymore when you shake them. Great with a bit of crème fraîche.

DIRECTIONS 1. Preheat your oven to 450 degrees F. 2. Trim the top of the head of garlic to expose the tops of the garlic cloves. Place the head of garlic on a piece of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap the head of garlic up in the foil and transfer to the oven to roast for 40 minutes. Once soft, remove the head of garlic from the oven and carefully pop out the individual garlic cloves into a bowl. Add the remaining olive oil, lemon zest and red pepper flakes. Mash the mixture together with a fork and use as needed for the pizza. 3. Change oven temp to 500 degrees. 4. Thirty minutes before cooking the pizza, put your pizza stone in the oven. 5. Stretch out your pizza dough using your hands in a circular motion, then lay it on a flat surface and flatten it out using a rolling pin. If you have a pizza peel, sprinkle some flour on it and place the stretched out dough on the peel. 6. Once your dough is flat and ready to be heated, use a spoon to spread the pizza sauce and basil vinaigrette all around the dough leaving a little bit for the crust. Top with the mozzarella and goat cheese. 7. Pop your pizza peel in the oven and slide it over the stone for 12-14 minutes, until the dough is golden brown and the cheese is melted. After the pizza is cooked, pull out the pizza and sprinkle with basil, salt, and red pepper flakes. Cut into 6-8 slices and serve immediately

ince the creation of the cheese dairy in 1907, three generations of passionate cheesemakers have followed one another, perpetuating the values ​​of tradition and know-how. Today it is Jean-Charles Arnaud, heir to

this historical heritage, who maintains the secrets of maturing bequeathed by his ancestors like a real treasure. In the 1930s, the reputation of Arnaud cheese factories reached Paris. Charles parks his truck in front of the famous café de Flore on Boulevard Saint-Germain-des-Prés. In front of this headquarters of Sartre and Simone de Beauvoir, the cheese maker dreams of a great name for his Comté… JuraFlore was born. At the heart of the Haut Jura Natural Park at an altitude of 1150 m, the Fort des Rousses is home to more than 100,000 wheels of Comté in exceptional maturing conditions. It was in 1997 that Le Fort des Rousses, the second fortress in France, was converted into maturing cellars. With more than 50,000 m2 of vaulted rooms, kilometers of underground galleries and an imposing interior esplanade, the Fort designed to house 3,500 soldiers is today an exceptional monument. By abandoning its military vocation, the Fort des Rousses puts itself at the service of taste. The climate is constant, the humidity is perfect. And the marvelous stone vaults create a natural “vaulting effect”, conducive to building up the ambiance of the cellar. The effect of the vault has the consequence, in a slow mechanism, of concentrating the rate of CO2 and ammonia ideal for the aging of the grinding wheels, and of bringing a natural and regular circulation of the air. These majestic vaults undoubtedly preserve other secrets which give the Comté of Fort des Rousses its fruity and exceptional roast.

All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. This regular testing and observation are essential for transferring the rounds of cheese to the appropriate maturing cellars and obtaining the best flavors. The final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes. The result of these special maturing techniques at the Fort des Rousses, give the Comté cheeses a nice creamy texture and a strong and refined combination of aromas.

Guilloteau

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau then went on to start his own company, Fromagerie Guilloteau in 1981 with a focus on producing an expanding line of top-quality cheeses made exclusively with the ultrafiltration process. Ultrafiltration is a special industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose and mineral salts. Because it retains the milk’s soluble proteins, ultrafiltration significantly increases the yield that can be used for cheese, as well as allows every step of the cheesemaking process to be quicker. Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese.

Fromagerie Guilloteau currently produces a range of cheeses under the brands Fromager d'Affinois, Pavé d’Affinois, and St. Angel. The fresh milk used from local French farms is never more than 24 to 72 hours old, adding even more value (and flavor!) to the many advantages that come from ultrafiltration. Their even, creamy textures, delicate unique tastes, and very fine rinds must be tasted to be truly valued.
