It i 100% A2/A2 milk, which means that is less allergenic than A1 milk it has double the protein, double the calcium, 40% more nutrients and it has half the cholesterol than cow’s milk.
AOP Echiré butter is produced in wooden churns. This authentic expertise gives the butter its unique flavor, as well as a light and soft texture which melts in the mouth.

Fromagerie Guilloteau was founded in 1981 with a focus on producing an expanding line of top-quality cheeses made exclusively with the ultrafiltration process.
Ultrafiltration is a special industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose and mineral salts. The mineral salts that are maintained during this process make Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese.
The Fromager d’Affinois line of cheeses offer silky, smooth, mouth-coating creaminess and a decadently rich, buttery taste. Made with pasteurized cows’ milk and available in a variety of flavors using only the freshest ingredients, there is a d’Affinois for everyone to adore.

ABOUT LE GRUYERE AOP
Le Gruyère or Gruyere AOP is one of the classic Swiss cheeses. It was first mentioned in a document in 1115 and has been an integral part of Swiss cheese culture ever since. Only cheese that was actually made in Gruyère in Friborg was worthy of the Le Gruyère AOP name.
Today, the area of origin has expanded so that Gruyère cheese can also be produced in the cantons of Vaud, Jura and Neuchâtel. However, thanks to the use of high-quality raw milk and strict compliance with the specifications for milk producers and master cheesemakers, the same tasty and high-quality Swiss hard cheese can still be produced in around 150 cheese dairies.

The Wisconsin Master Cheesemaker Program is a major reason that Wisconsin makes over 600 different kinds of cheese. Wisconsin is actually the only state in the U.S. with this level of certification. Skilled cheesemakers with over a decade of experience enter this three-year program to perfect making specific varieties of cheese. When the Master Cheesemaker program was created, Wisconsin dairy farmers had no idea the impact that all of that mastery would have. They couldn't foresee the dominance at award shows around the world, or that Wisconsin cheesemakers would go on to make more kinds of cheese than anywhere else on the planet!
