You Have a Pizza My Heart It cannot be a coincidence that National Pizza Day and Valentine’s Day are celebrated less than a week apart. Everyone loves pizza, so why not combine the two celebrations into one delicious date night?

Whether its thin crust, deep dish, Sicilian, or anything in between, National Pizza Day begs to be celebrated with enjoyment of this cheesy American favorite. While the only information that is known about the celebration of National Pizza Day is that it began in 2000, there is lots of information about the creation of the dish itself.

Flatbreads with various toppings have been consumed by the people of many ancient civilizations, but the birthplace of modern pizza is Naples, Italy. In the 1700s and early 1800s, the population was quickly increasing, and therefore many of the cities inhabitants fell into poverty. These people resorted to inexpensive food that was easy to eat, with no plates or silver ware required. The first pizzas—flatbreads with toppings such as tomatoes, cheese, lard, and garlic—met this need.

During the 19th century, Neapolitans began emigrating to America in order to find work, and they brought their cuisine with them. Gennaro Lombardi, who moved to the United States in 1897, opened the first ever pizzeria in the United States and is credited with bringing the dish into the country. His pizzeria, called Lombardi’s, opened in 1905 in New York City’s Little Italy and is still open till this day. Soon, pizzerias began to pop up all over the country and became an American dietary staple.

1. Preheat oven to 350°.

• 1 lb pizza dough

2. Stretch your pizza dough and round it out on a lightly floured surface.

• 10 oz Brie Ermitage, sliced • 1 handful arugula • 2 beetroots, sliced • 1 handful pine nuts • Handful flour • 3 oz olive oil

CHEESY CHORIZO SKILLET PIZZA Ingredients

Makes 4 servings

1. Preheat oven to 450˚F.

• 5 oz Solera Thin Sliced Chorizo, Solera Chorizo Ring Mild, or Solera Chorizo Ring Hot

2. Let dough rise at room temperature for about 30 minutes.

• 1 premade pizza dough • ¾ cup pizza sauce • 1 ½ cups shredded mozzarella cheese • 1 shallot • 1/3 cup sliced button or cremini mushrooms • 1/3 cup quartered cherry tomatoes

3. After dough has rested, stretch it into a floured cast iron skillet. 4. Spread the tomato sauce on the dough. Top with the mozzarella cheese, mushrooms, tomatoes, and the Solera chorizo of your choice. 5. Place the skillet on the stove over medium –high heat for about 4 minutes, until the bottom of the crust begins to cook. 6. Remove from heat and transfer to the preheated oven and cook for about 12 minutes, until the crust is browned and the cheese is melted. 7. Let cool for 10 minutes and then serve!

Valentine's Day Cherry Jam Spread Ingredients

• 2 lb fresh or frozen cherries, pitted and coarsely chopped

1. Place a saucer or small plate in the freezer. This will be used to test the jam consistency later. Combine cherries, sugar, and lemon juice in a large saucepan over high heat and bring to a boil, stirring until sugar is dissolved. Reduce the heat to mediumlow and simmer, stirring frequently, for 20 minutes, then remove from the heat.The jam will still be a bit thin, but should coat a spoon.

• 3/4 cups sugar • 2 tbsp lemon juice

2. To test for completion, place a small amount of jam on the plate from the freezer. Touch the jam with a spoon or your finger. If it wrinkles, it’s ready to be enjoyed. If not, simmer for another 5 minutes and repeat. 3. Transfer the jam to a glass jar and cool completely. Seal and store in the refrigerator. 4. 100 YEARS OF HISTORY

T

he Germain cheese dairy has a rich history with its creation over a century ago. In 1921, accompanied by his wife, Henri Germain moved to Chalancey in the Haute-Marne department of north-eastern France, where he created his very own cheese dairy. With the knowledge and experience he had gained form his family’s cheese dairy, he began producing soft cheeses. In the 1960s, Henri passed away and the Germain dairy was taken over by his son, Pierre Germain. To develop the business, he deciced to embark on the first attempts at Langres and Époisses cheeses, named after the communes of Epoisses and Langres in northeastern France. AOC, which refers to the regulations established in France to define quality standards for cheese, is eventually obtained for both Langres and Époisses and they become the spearheads of Fromagerie Germain. In 2015 the decision was made to build a new cheese dairy in Vaux-sous-Aubigny a few steps from the original one located FEBRUARY 2020 | 14

in Chalancey. Entrepreneurship, respect for traditions and commitment to quality have been the watchwords for almost 100 years for Fromagerie Germain. In Chalancey, a few kilometers away, cheese know-how remains. Today, Germain produces their range of specialty cheeses out of their Vaux-sous-Aubigny dairy and distribute their cheese worldwide as well as in their storefront.

THE TERROIR

The tradition of 3 French regions, with strong cultural heritage, can be found in Germain cheeses.

Champagne tradition The heritage of the Champagne region lies in a wealth of architecture and religious symbolism, as well as gastronomy. The emblem of this region is none other than the much-vaunted sparkling wine. Germain Langres AOP and Le Triple Creme cheese embody this terroir and tradition.

Perigord is a rich, widely diverse, historic and cultural heritage. It is also an area for gourmet products such as foie gras and truffles, as well as Germain Le Pico cheese, symbolizing French gastronomy.

The Burgundy region is renowned for its terroir and authenticity. It is from this multi-faceted terror that the inspiration for Epoisses AOP and L'AffinĂŠ au Chablis is drawn.

THE PRODUCTION PROCESS The Langres owes its hollow shape to its refining process during which it is never turned over, thus causing the formation of a well. Tradition has it that we pour a few drops of Champagne into it in order to make it burn, and thus reveal sweet notes. -Bernard, Master Cheesemaker at the the Fromagerie Germain

We refine our Epoisses AOP for at least 4 weeks. We rub them, one by one, with Marc de Bourgogne. The rubbings make it possible to implant and balance the different ripening flora. Our Epoisses indeed derive their flavor and color from the ideal balance of 2 flora: Geotrichum and ferments of red. The first gives the creamy character and the floral note to our Epoisses, the second the coloring, the character an d the typical taste. The Triple Crème Germain is a cheese made from cow's milk and with an extremely soft center. Its softness is explained by the addition of cream to the milk during the production of the cheese. 2. Finely dice the shallot and thinly slice the chives. Mix with the crème fraiche and add salt and pepper to taste.

• 8 slices brioche bread • 2 handfuls arugula • 8 tbsp. crème fraîche • 1 shallot • 6 sprigs chives

• Salt and pepper to taste

3. Slice the Epoisses AOP and add to one piece of bread. 4. Add the shallot and chive crème fraiche and put a few leaves of arugula on top. Cover with the other slice of bread. 5. Toast in the oven for about 8 minutes, or until the bread is golden brown and the cheese is melted. 7. Serve with the remaining arugula.

Directions 1. Peel and thinly slice the button mushrooms. Finely chop the red onion. 2. Boil the pasta until it is al dente, and then drain. 3.
