As Valentine's Day draws closer, many of us are planning that unforgettable and "perfect" evening with the one we love. Can you imagine a more coy and romantic scenario than an intimate and fun wine and cheese pairing dinner at home? A simple and elegant pair for the ages, cheese and wine pairings can be a culinary masterpiece. If your Valentine has never explored wine and cheese pairings it will be an exploration he or she will always remember.


Starting with the basics, red wine is an alcoholic beverage made by fermenting the juice of dark-skinned grapes. Red wine differs from white wine in its base material and production process. Red wine is made with dark-skinned rather than light-skinned grapes. During red wine production, the winemaker allows pressed grape juice, called must, to macerate and ferment with the dark grape skins, which adds color, flavor and tannin to the wine. Alcohol occurs when yeast converts grape sugar into ethanol and carbon dioxide. The result of these processes: red wine. Okay, you probably don’t need any help recognizing a white wine versus a red wine. They look different and they certainly taste different as well. But it’s worth your while to understand why they look and taste so different. The culprit in both cases: the skins, and a little something they bring to the party called tannins. Remember the word tannin and what it means, because wine people talk about tannins a lot.

White wine has tannin, but not enough to make it the star of the show. Instead, white wines are backboned by acidity. That’s why you might say a wine is “crisp” or “tart.” Or, if there isn’t enough acidity, you might call a white wine “flabby” or “flat.”
