Known for its mountainous regions and coastal shores, Sardinia is also home to the Sarda Sheep which is used exclusively to craft our Fetalia Feta. The Sarda Sheep breed is indigenous to the island of Sardinia and is best known for providing milk to create Pecorino Sardo. Sarda Sheep are high-milk yielding animals and are considered to be among the best Italian breeds of sheep for production of sheep’s milk. The breed provides cheesemakers with rich, fat-laced cheese. This tasty dish combines the sweetness of roasted pumpkin and butternut squash and the salty taste of feta cheese. A prime harvest recipe that is adored by many.

INGREDIENTS 7 oz Fetalia Feta, cubed 1 lb of butternut squash, peeled and cut into cubes 1/2 lb pumpkin, peeled and cut into cubes 1 pre-made pie crust 2 tbsp olive oil 1 tbsp honey 1 tbsp thyme 1 tsp flour Salt and pepper to taste
DIRECTIONS 1. Preheat oven to 425° F. 2. Place butternut squash and pumpkin cubes in a baking dish. Drizzle with oil and sprinkle with salt and pepper. Roast uncovered for 30 minutes or until tender. 3. Sprinkle flour onto a baking sheet and roll out pie crust. Scoop squash and pumpkin into the center of the pastry. Top evenly with feta and thyme. 4. Bake 35 minutes or until crust has turned a light golden brown. Remove from oven and set aside. Drizzle honey over top and serve warm.

DIRECTIONS 1. Season turkey breast with salt and pepper. Sear on both sides at medium heat until the meat has turned slightly crunchy with a golden brown color. Remove turkey breast and slice into thin strips.

Rustic, Savory, Eye-Catching Holiday Appetizer DIRECTIONS 1. Pre-heat oven to 350°F. Spray medium sized pie plate or baking dish lightly with cooking spray. 2. In a small pan, heat 1 tbsp of butter. Add the sliced onion to the pan and saute on medium-low heat for 8-10 minutes. When onions are a rich golden brown, remove from heat and set aside. 3. In a mixing bowl, combine pumpkin puree, sage, salt and pepper. Mix until puree is thoroughly coated in spices.
INGREDIENTS 16 oz brie, sliced 1-13oz pre-made pizza crust 1 cup pumpkin puree 1/2 Spanish onion, sliced 1/2 cup fresh cranberries 1/4 cup confectioners sugar 1 tbsp fresh sage 1 tbsp salted butter 1/2 tsp salt 1/2 tsp pepper 1 sprig of rosemary SERVINGS - 6
4. Roll out dough and spread puree mixture across the surface evenly. Add onions on top and layer with brie slices. 5. Slice the dough into 2“ sections and tightly roll sides inwards. Place around the pan. 6. Place in oven for 25-30 minutes or until the rolls turn a golden brown. 7. While rolls are in oven, add 1/4 cup cranberries and 3 tbsp of water to a blender and blend until creamy. Pour in sugar and stir until the cranberry glaze is a thick consistency. 8. Remove baked brie rolls from oven, drizzle with cranberry glaze, top with rosemary and reserved cranberries and serve.

In a medium sauce pan, add half-andhalf, thyme, rosemary, onion and garlic over medium heat. Bring to a simmer and add grated Herbes de Provence Cheddar Gruyere. Bring to a simmer and then reduce heat to medium-low. Simmer for 10 minutes, make sure to stir constantly. 5. Pour cheese sauce into each dish and place in oven. Bake for 40 minutes or until each dish has formed a golden cheese crust. 6. Remove from oven and let sit 5 minutes. Serve warm.

Combining art and science in a tradition so rich you can taste it. In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsin-produced dairy products. An additional five cents goes to the National Dairy Promotion & Research Board for generic dairy promotion activities at the national level. Dairy Farmer's of Wisconsin's primary mission is to "Grow demand for Wisconsin milk." Key Dairy Farmers of Wisconsin roles within Wisconsin’s dairy industry include: establishing new markets, funding dairy-related research, educating consumers about the quality and nutritional importance of Wisconsin milk and dairy products, and showcasing the important economic contribution that dairy makes to their communities and their state. PARMESAN Autumn Tuscan Bread Soup Belgioioso American Grana® is a premium parmesan cheese that is aged a minimum of 18 months on wooden shelves in special caves. During this process, the cheese wheels are turned by hand to develop its deep nutty flavor and granular texture.
DIRECTIONS 1. Sauté the onion, carrots and celery in olive oil in a Dutch oven over mediumhigh heat until crispy and tender. Reduce heat to low. Add garlic and red pepper flakes; cook and stir for 1 minute longer.
INGREDIENTS 1 large onion, chopped 2 medium carrots, chopped 2 medium celery ribs, chopped 1 small bunch kale, chopped 3 tbsp olive oil 4 garlic cloves, minced 1/4 teaspoon crushed red pepper flakes 6 cups chicken stock 2 cups cubed peeled butternut squash 1 Yukon Gold potato, cubed 6 ounces BelGioioso American Grana® cheese, grated (2 cups) and rind reserved 1 bay leaf 1 can (15.5 ounces) cannellini beans, rinsed and drained 1/2 cup fresh bread crumbs zest of 1 medium lemon salt and pepper to taste

Kanaal is crunchy, butterscotch, salty-sweet cheese candy, fresh from Holland. The older Kanaal gets, the more deliciously dense and fudgy it becomes. At a glance or blind bite, one may guess Kanaal is any number of cheese types. In a way this is true as it is a lesser known style called Proosdij. Kanaal develops aroma, flavor, and texture profiles with characteristics of a cross between Gouda and Parmesan cheeses. This also includes the satisfying crunchiness of increasing amounts of tyrosine crystals that form with age along more sweet, fruity, toasted caramel, and bouillon flavors than Gouda cheeses. Proosdijs have lower butterfat in dry matter than the required 48% for official Gouda status. RACLETTE Autumn Zuppa Raclette is a Swiss staple; more than a cheese, raclette represents a fun, authentic and friendly way of dining. Raclette is eaten hot – the name comes from the French word ‘racler’ or ‘to scrape’ - as the savory melted wheel of cheese was traditionally heated over an open fire before being poured over an accompanying dish of potatoes. Historically, Swiss shepherds would eat Raclette in the summer, as a filling and delicious meal. INGREDIENTS 7oz Mifroma Swiss Raclette 1/4 cup chestnuts (dried) 1 white onion, chopped 1/4 cup button or cardoncelli mushrooms 1 oz white wine 2 cups vegetable broth 2 oz chives, chopped 2tbsp lemon juice 1oz extra virgin olive oil 2 slices French baguette, sliced Salt & pepper to taste SERVINGS - 4 DIRECTIONS 1. Soak the dried chestnuts in water overnight, before draining them the next day and setting aside the water. 2. Clean and chop the mushrooms into thin slices. Set aside. 3. Dice half of the cheese and place it in a small saucepan with 150ml of water. Bring to the boil for 15 minutes, turning occasionally, then drain with a colander and set aside the water. Put the other half of the cheese water into the fridge. 4. Brown the white onion in a small amount of oil. Once softened, add the white wine, lemon juice, half of the mushrooms and half of the soaked chestnuts. Brown slightly, then add the remaining water from the chestnuts and blend with a blender to obtain a thick cream. 4. Add the remaining mushrooms and chestnuts with remainder of the cheese water into a pot and bring to a boil. Heat the vegetable stock and pour into the soup to obtain the desired consistency. Sprinkle with salt and pepper 5. Brown the diced bread in a little oil and set aside. Ladle soup into bowls, top with remaining raclette, bread cubes, scallions and a drizzle of olive oil.

ach wheel of Comté cheese are carefully aged and inspected by master cheese makers to create beautiful, bold flavors of tropical fruits, nuts and cooked cream in this one-of-a-kind Comté. During the prematuring phase, Comté cheese is only salty on the surface. As it dissolves, the salt deposited on the surface draws water out from the body of the cheese and is what determines the surface microflora. The cheese is rubbed three times a week. Thus forms the crust, a real protective shell rich in surface microflora.
