2021 marks 50 years since Epicure Foods Corporation was founded. Epicure’s founder, Damir Drezga, grew up during World War II in communist Yugoslavia. After his father’s passing when he was just 9 years old, Damir had no choice than to take the role as head of household. Despite his family’s poverty and the hardships of World War II, Damir took care of his mother and younger brother. After completing school, Damir traveled to Germany for better employment to make money for his family. He survived by selling rugs on street corners, and sent most of the money he made back home. Eventually, he was loaned money from a local convent for one-way ticket to the United States. Upon arriving to America, he worked for a New York City food importer, where he learned the ins-and-outs of the industry. A year later in 1971, he purchased his first pallet of Gouda from the Netherlands, thus marking the beginning of Epicure Foods! 50 years later, Epicure Foods has grown from importing that first pallet of Gouda cheese from the Netherlands to importing quality cheese, charcuterie, and various gourmet products from around the globe.

Guilloteau

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous

Fromagerie Guilloteau currently produces a range of cheeses under the brands

Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese.

The cow's milk to make these cheeses is collected in dairies where the cheese maker produces cheese rounds. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. The final stages of the maturing process take place in a slow

maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes. The result of these special maturing techniques at the Fort des Rousses, give the Comté cheeses a nice creamy texture and a strong and refined combination of aromas that linger in the mouth.

- ½ cup of ice water

- ¼ teaspoon salt - 1 tablespoon lemon juice - 1 teaspoon lemon zest - 2 tablespoon butter - 1 tablespoon + 1 teaspoon cornstarch

INSTRUCTIONS FOR FLAKY CHEESE DOUGH: 1. Add dry ingredients to food processor and pulse quickly to incorporate. Add cheese and pulse until the mixture resembles peas. Add butter and pulse 6-8 times until butter is the size of peas. 2. Combine vinegar and water and add it to the food processor. Blend until the mixture almost comes together. 3. Remove from the food processor onto a lightly floured surface and knead gently until the dough comes together (additional flour or ice water can be added if needed). Divide dough into two equal disks, wrap in plastic, and refrigerate for at least one hour before rolling. 4. Lay the disk of dough on a lightly floured counter or between two large sheets of plastic. Roll the dough outward from the center into a 12inch circle. Turn the dough a quarter turn every few rolls to help keep it circular. Dust with additional flour as needed to prevent sticking. 5. Loosely roll the dough around the rolling pin, then gently unroll it over the pie plate (9-inch). Gently press and lift the dough into the pie plate, letting the excess hang over the plate. If there is more than 1 inch of overhang, trim. Repeat rolling out the second disk to 12 inches and refrigerate flat until it’s time to assemble the pie. FOR APPLE FILLING: 1. Toss apples with sugars, cinnamon, ginger, nutmeg, salt, lemon juice, and zest. Let sit for at least 45 minutes. Strain off the juices into a pan with the butter, cook until reduced by half and syrupy (1/4 cup). Pour this syrup over apples that have been tossed with the cornstarch. 2. Pile apples into 9-inch pie pan lined with the Beecher's cheese dough. Cut strips out of remaining round of dough and weave on top of the apples to create a lattice. 3. Refrigerate for 1 hour before baking. This will help prevent the crust from shrinking and help with flakiness. 4. Preheat the oven to 425 degrees 20 minutes before baking. Line a baking sheet with aluminum foil (to catch drips and make for easy clean up) and bake for approx. 1 to 1¼ hours. 5. After 30 minutes, cover the edges of the crust with foil to prevent over-browning. Reduce oven temperature to 375 degrees, rotate the pan, and continue to bake until the juices are bubbling and the crust is deep golden brown. 6. Let the pie cool on a wire rack until the filling has set, about 3 hours; serve slightly warm.

On lightly floured work surface, cut out 6 pastry rounds using 3 1/2inch round cutter. Place on parchment paper–lined baking sheet. Brush each round with egg wash and prick all over with a fork. Bake for 10 to 12 minutes or until puffed and golden brown. Let cool. 5. Preheat broiler. Remove bay leaves from soup; stir in parsley and chives. Place 6 ovenproof crocks or ramekins on a baking sheet. Ladle soup evenly into crocks about three-quarters full. Twice Baked Potatoes

SERVES: 4 | PREP TIME: 5 MINUTES | COOK TIME: 1.5 HOURS

INGREDIENTS - 4 medium size Russet potatoes, scrubbed - 1 tablespoon olive oil - 1/2 teaspoon salt FOR THE FILLING: - 4 ounces McCadam Yellow X-Sharp Cheddar - 4 tablespoons salted butter, melted - 1/3 cup warm milk - 1/2 cup sour cream - 3/4 teaspoon salt - 1/2 teaspoon garlic powder - 1/4 teaspoon paprika - 1/4 teaspoon pepper - 5 strips bacon cooked and chopped, divided - Chives and sour cream for garnish

INSTRUCTIONS 1. Preheat the oven to 400°F. 2. Pierce each potato 5-6 times with a fork. Drizzle with olive oil and sprinkle with salt. Bake for 45-60 minutes until the potato can be pierced easily with a fork. Let potatoes cool enough to handle then slice potatoes in half lengthwise and scoop out the insides, leaving about a ¼-inch shell. 3. Return potato shells to the oven and bake for 10 minutes. 4. Mash potato with butter, milk, sour cream, and spices, adding additional milk if needed to reach a creamy consistency. Fold in half of the bacon and cheese. Spoon mashed potatoes back into the potato skins. 5. Top with remainder of cooked bacon and return potatoes to the oven and bake at 400°F for 15 minutes.
