Cambozola Black Label, Pear & Onion Tartlets

A truly elegant choice for any occasion, CAMBOZOLA Black Label is the reserve version of classic CAMBOZOLA, with stronger notes of blue, a taller profile, and beautiful gray mold exterior. CAMBOZOLA Black Label is a soft ripened cheese with blue mold, aged longer, and at a colder temperature, yielding bolder blue flavor and a wonderfully smooth texture that simply melts on the tongue.

INGREDIENTS

2 medium onions thinly sliced

1 tablespoon olive oil

1 tablespoon brown sugar

2 pears, cored and thinly sliced

1 sheet (8 oz ) store bought puff pastry, thawed

1 egg

4 ounces CAMBOZOLA Black Label cheese, sliced into 8 pieces

1 tablespoon thyme leaves, minced

1/4 cup honey

Flaky sea salt

DIRECTIONS

1 Preheat oven to 400 degrees fahrenheit and line a rimmed baking sheet with parchment paper or a silicone baking mat Set aside

2 Heat oil in a large deep pan on medium high heat Add onions and cook for about 10 minutes or until wilted and starting to brown Reduce heat to low, add brown sugar and continue cooking for 10 minutes more until they are completely golden and very soft. Remove from heat and allow to cool for 10 minutes

3 While onions are cooling, roll out the puff pastry and cut into 8 squares Use a fork to pierce each piece of puff pastry a few times to allow steam to escape during cooking Transfer pastry to prepared baking sheet

4. Divide reserved onions evenly between puff pastry pieces, leaving a 1/4 inch border around the edge of each tart

5 Top each tart with two slices of pear Press pear down slightly to secure

6 In a small bowl, beat egg with 1 tablespoon of water then brush the edges of each tart with egg wash

7 Bake tarts in preheated oven for 30 minutes or until pastry is golden brown around the edges and pears are cooked through

8 Remove tarts from oven and immediately top each one with a slices of CAMBOZOLA Black Label cheese, thyme leaves, a drizzle of honey and a sprinkle of salt Serve immediately.

INGREDIENTS

1 sheet refrigerated pie pastry

2 tablespoons sugar

1 teaspoon salt

1 teaspoon ground cinnamon

2 large sweet potatoes, peeled and halved lengthwise

1 tablespoon olive oil

2 medium tart apples, cut into 1/8 inch slices

2 tablespoons lemon juice

6 ounces Sartori MontAmoré® Cheddar cheese, shredded (1 1/2 cups)

1/4 cup honey, warmed

Make ahead tip: Prepare and bake tart up to 3 hours ahead. Cool on a wire rack. Serve warm or at room temperature. Drizzle tart with honey in front of guests for added flair.

1 Roll out pie pastry on a lightly floured surface Transfer to a 9 inch tart pan with removable bottom; trim edges Refrigerate for 30 minutes

2 Heat oven to 375°F

5 Drizzle apples slices with lemon juice in a bowl Sprinkle with remaining cinnamon sugar mixture; toss to coat

6 Arrange sweet potatoes around edges of crust, placing potatoes rounded side upright and overlapping slices Arrange apples in a circular pattern, placing skin side upright and overlapping slices Alternate circles of sweet potatoes and apples Tuck cheddar between layers

7 Drizzle tart with half of the honey Bake for 25 minutes Drizzle with remaining honey Bake for 15 20 minutes longer or until crust is deep golden brown Lightly cover with foil if tart is over browning

FROMAGERIE G

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau then went on to start his own company, Fromagerie Guilloteau in 1981 with a focus on producing an expanding line of top-quality cheeses made exclusively with the ultrafiltration process.

Ultrafiltration is a special industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose and mineral salts. Because it retains the milk’s soluble proteins, ultrafiltration significantly increases the yield that can be used for cheese, as well as allows every step of the cheesemaking process to be quicker. Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese.

Fromagerie Guilloteau currently produces a range of cheeses under the brands Fromager d'Affinois, Pavé d’Affinois, and St. Angel. The fresh milk used from local French farms is never more than 24 to 72 hours old, adding even more value (and flavor!) to the many advantages that come from ultrafiltration. Their even, creamy textures, delicate unique tastes, and very fine rinds must be tasted to be truly valued.

Pear & Fromager d'Affinois Crostini

Similar in appearance to a brie cheese, both the white rind and the creamy interior of Fromager d'Affinois are milder in flavor. This crowd pleasing French cheese is best enjoyed when the rind starts to bulge, and the center is oozing with rich, buttery aromas

INGREDIENTS

1 baguette

2 tablespoon olive oil

6 oz Fromager d'Affinois Plain

½ cup toasted walnuts, finely chopped

2 pears halved, cored, and thinly sliced

4 tablespoon honey

Fresh rosemary sprigs, optional

DIRECTIONS

1. Place a rack 6 inches from the broiler and heat the broiler to high.

2 Slice the baguette into 1/2 inch rounds Brush one side with olive oil

3 Place the bread slices on a baking sheet Place the baking sheet on the top rack of the oven and broil until the bread is golden brown

4. Slice the Fromager d'Affinois into 1/4 inch slices. Place one slice on each baguette piece. Top each baguette piece with a few pear slices

5 Broil until the cheese starts to melt; about 3 minutes

6 Remove from the oven and top with chopped walnuts and a drizzle with honey Garnish with rosemary if desired

7 Serve immediately

Cheddar Gruyere Stuffed Duchess Potatoes

INGREDIENTS

1 whole garlic bulb

1 tablespoon olive oil

2 1/2 pounds Yukon Gold potatoes, peeled and quartered

2 teaspoons salt

4 ounces Wood River Creamery

Original Cheddar Gruyere

1/4 cup butter, melted

4 large egg yolks

3 tablespoons heavy whipping cream

1 teaspoon minced fresh rosemary

Salt and pepper

1 large egg, lightly beaten

Minced fresh rosemary

DIRECTIONS

1 Heat oven to 400°F

2 Remove papery outside from garlic (keeping cloves together) Cut off the top third of garlic bulb; drizzle with olive oil Wrap tightly with aluminum foil Bake for 35 40 minutes or until garlic is tender Cool for 15 minutes Squeeze garlic into a small bowl Mash with a fork Set aside.

3 Place potatoes in a large saucepan; cover with water Add salt Bring to a boil Reduce heat to medium Cook, uncovered, for 20 22 minutes or until potatoes are tender Drain

4 Meanwhile, cut the Cheddar Gruyere into 8 cubes, about 1/2 inch each Freeze the cheese cubes for at least 30 minutes

5 Place potatoes on a 17 x 12 inch baking pan Bake for 12 15 minutes or until the outside of potatoes dries slightly

6 Mash potatoes Add the butter, egg yolks, cream, rosemary and reserved garlic; mash until smooth Season with salt and pepper

7 Line the same baking pan with parchment paper Coat with cooking spray

8 Pipe or spoon potato mixture into eight 3 inch circles on prepared pan Place Cheddar Gruyere cubes in the center of each Pipe or spoon potato mixture into mounds to cover

9 Bake for 10 minutes Brush with egg wash Bake for 8 10 minutes longer or until golden brown. Garnish with rosemary.

As the story goes, Count Bolognesi, an Italian diplomat, was enamored with Wisconsin’s rolling pastures, clear waters, and pure milk. To bring a little bit of his homeland to this beautiful new countryside he loved, Bolognese began making authentic Parmesan cheese on a small farm on Lake Nebagamon in northern Wisconsin in 1923, hiring a master cheesemaker from Italy. The cheese was packaged under the Red Star label, a symbol that would stand for quality, and the Stella® brand was born.

Stella Asiago, as well as all of their cheeses, are crafted with a rich heritage of Italian cheesemaking, dating back to 1923. This traditional Italian favorite was originally developed in its namesake: the village of “Asiago” in northern Italy. Slightly sweeter, smoother and nuttier than Parmesan, Asiago’s flavor ranges from mild to robust (depending on age) and adds panache to pasta, potatoes and salads.

8 large Roma tomatoes, halved

1 large onion, quartered

4 garlic cloves, peeled

2 tablespoons olive oil

Salt and pepper

3 cups vegetable broth

1 1/2 cups solid packed pumpkin

1 to 3 teaspoons sugar

1 teaspoon minced fresh oregano

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

1 Preheat oven to 325 °F and grease a 9x13 inch baking dish with butter or cooking spray Set aside

2. Bring a large pot of salted water to boil. Pour in the rigatoni noodles and cook until al dente

3 Melt butter in a large saucepan over medium heat Add the flour and whisk to fully combine Cook for 1 minute, whisking often Whisk in the milk and half and half and bring the sauce to a slight boil, whisking constantly The milk, butter and flour mixture should thicken Remove from heat

1 cup dried cranberries
