Pictured here is Petit Pavé d’Affinois Cremeux, which takes its name from the characteristic cube shape plus the geographic origin of the first Pavé, or block. Created in the Dauphiné region, giving it the name “Dauphinois”, the brand quickly became Pavé d’Affinois, in recognition of the delicate ripening stage (or “affinage” in French), needed to produce a quality soft cheese. The brand has made its mark – it is now one of the most popular cheeses in France.


The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institue for Agricultural Research (INRA) the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Expanding from his research at INRA, Guilloteau went on to develop his signature cheese, Pave d’Affinois, in 1981. Following his success with Pave d’Affinois, Guilloteau went on to develop Fromagerie Guilloteau. His main focus was to produce an expanding line of top quality cheeses made exclusively with the ultrafiltration process for French and international consumers. In the words of the INRA, ‘Ultrafiltration is a special industrial process in which milk is filtered through a sieve-like membrane to partially eliminate small molecules such as water, lactose and mineral salts. By retaining the milk’s soluble proteins, ultrafiltration increases the yield that can be used for cheese by 16-22%. Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Pavé d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese. The process yields a liquid pre-cheese and makes it possible to increase automation of production chains and produce identical cheeses of the same weight, an important factor for individually sold products. Eliminating the phase where milk is watery prior to clotting reduces the volumes handled during processing.’ Today Guilloteau employs over 200 people at two production sites in Belley and Pelussin, a part of the Rhône-Alpes, France, and still sets the industry standard for ultrafiltrated soft-ripened cheeses. They use only fresh milk from local French farms that is never more than 24 to 72 hours old adding even more value (and flavor!) to the many advantages that come from ultrafiltration. Their even, creamy textures, delicate unique tastes, and very fine rinds must be tasted to be truely valued. And for those that already know, the value of any bite of Guilloteau is truly priceless.

Hor D'Oeuvres Winter is in full effect and what better way to warm yourself up than by sitting at home catching up on some football while enjoying some spicy spreads! Football season is appetizer season and finger food is the name of the game. Not only is the Big Game almost here, but January 16th is International Hot and Spicy Food Day. If you enjoy eating food that makes your mouth sizzle, your eyes water and sends your taste-buds into a frenzy, then this Holiday is for you. Not only is spicy food painfully good, but it is also good for you. Chili peppers are high in vitamins, calcium, beta carotene and may help reduce cholesterol. You've probably heard horror stories of how eating peppers and too much spicy food burns a hole in your stomach, but the truth is that it actually does the opposite. Hot peppers help protect your

stomach from forming painful ulcers. The capsaicin in hot peppers assist in killing the H. pyroli bacteria, the number one cause of stomach ulcer formation. According to archaeologists, humans have been seasoning their foods with hot and spicy ingredients for over 6,000 years. With 140 different varieties of chili peppers in Mexico alone, it is no wonder why it is said to have originated from our Central American neighbors and then internationally traded to other countries such as Asia and India. Chili peppers aren't the only food that brings the heat, spicy mustard, hot mustard and horseradish might not pack the same punch as peppers, but they definitely have a strong kick. They will also add an abundance of flavor to any plate. Keep reading to see how you can score big with your game day grub by re-creating the following three hot halftime hor d'oeuvres that are sure to spice up any gathering. JANUARY 2019 | 21


SIZZLIN' Steak and horseradish havarti crostini • • • • • • • • •

4 small sirloin steaks 2 pinches coarse salt 1 tablespoon used coffee grounds 1/2 teaspoon cayenne pepper 1 baguette, sliced diagonally into about 15 1/4” slices 2 tablespoons extra virgin olive oil 1/2 tsp garlic powder 1 cup arugula 1 wedge (6 oz) Roth Horseradish Havarti cheese, cut into 15 slices

Sprinkle each steak with salt on both sides. Gently press the coffee grounds, brown sugar and cayenne pepper into both sides of the steak. Place in a large ziplock bag and marinate in the refrigerator for at least 2 hours. Preheat oven to 350 degrees F. Arrange the baguette slices on a large rimmed baking sheet. Brush each slice with olive oil, and season with a pinch of garlic powder and coarse salt. Bake for 10 minutes. Heat 1 tablespoon olive oil to a large pan. Sear the steak on both sides for 4 minutes each. Remove from the pan and cover on a plate, resting for 10 minutes. Thinly slice the steak against the grain. Arrange a few leaves of arugula on each toasted baguette slice, followed by two slices of steak, and a slice of Roth Horseradish Havarti cheese. Bake the crostini for another 5-10 minutes, until the cheese is melted. Garnish with extra arugula leaves and serve immediately.

Blazin' Belletoile Burgers

1 1/2 pounds ground beef Salt and freshly ground pepper 6 oz. Belletoile, rind removed, cut into 4 slices 4 hamburger buns, split Red onion, tomato and lettuce slices, for serving ½ mango, finely chopped 4 slices of roasted red pepper, finely chopped 1 table spoon of garlic 1 table spoon hot sauce 1 table spoon turmeric Season ground beef with salt and pepper and form into four patties. Brush lightly with oil and grill over high heat to desired cooking preference. While patties are cooking, place mango, red pepper, garlic, hot sauce and turmeric in blender and mince. Remove from blender and set aside.

Place one Belletoile slice on each patty and leave patty on grill an additional 4 minutes or until cheese has melted. Remove from grill and place burger on bun and top with tomato, lettuce, red onion and three tablespoons of Chutney and serve.

PASTA LA VISTA BABY

P

asta, a whirlwind love affair with over 600 shapes to choose from. You can enjoy it with sauce, meat, herbs, fish, vegetables, the list goes on and on. With all the different combinations that can be done with pasta it is not strange to hear that the average American consumes approximately 20lbs of pasta a year and collectively, the U.S. consumes 5.95 billions pounds of pasta per year. Not to mention that the average Italian consumes more than 51lbs of pasta per year! Pasta can be found all over the world as it is one of the world's most accessible foods. You can visit almost any country and you will see that it has its own version of the popular inexpensive staple. In Greece they have orzo, Poland has its version called pierogis, Spain enjoys it as fideos, Germany has Spätzle, Israelis enjoys pasta in the form of small balls and call it ptitim (also known as couscous). Although there are over 1,300 different names for pasta there is one thing that has remained the same; that cheese and pasta go together like spaghetti and meatballs. Whether it be grated, shredded, melted, cubed, crumbled or all of the above, you know you are going to have a good meal when the two meet. This winter, enjoy these three savory recipes with a couple of our favorite cheeses that will have you thinking that anything is pasta-ble.

Baked Mac and Brie • • • • • •

10 oz. of Henri Hutin's Brie Couronne 1K Chives 1 package of penne or preferred pasta 3 tablespoons butter Salt to taste 2 cloves of garlic, chopped 4 tablespoons grated Parmesan

Preheat oven to 350 degrees. Place Brie in oven and heat until melted. Add 4 cups of water to a pot and cook pasta in salted water. Once pasta is cooked, remove from stove top and drain but reserve 1/2 cup for later use. Return pasta to pot and add in Parmesan, garlic, butter and ½ cup of water. Mix thoroughly. Pour half of Brie over pasta until completely mixed. Add pasta into oven safe dish. Top with remainder of melted Brie to create a layer on top. Bake in oven for 20-30 minutes or until top is golden.

BBQ Mac and Cheese 1 lb elbow macaroni 2 1/2 cups evaporated milk 2 large eggs 1/2 tsp dry mustard 1/4 teaspoon onion salt 1/2 teaspoon celery salt 10 oz (1 1/4 cups shredded Prairie Breeze™ Cheddar Cheese) 1/4 cup bread crumbs 1/4 cup grated Parmesan cheese

Boil a pot of water over high heat and add the pasta, stirring on and off until it's al dente. Drain it. Preheat your broiler. In a large bowl, mix together the evaporated milk, eggs, dry mustard, hot sauce, onion salt and celery salt. Fold in the pasta and about three quarters of the cheese. Add it back into the pot noodles and cook over medium heat until the cheese melts and the sauce thickens up a bit. Pour the mac and cheese into a 9×13 greased pan. If you want to butter your bread crumbs, melt 1/2 stick butter in a skillet and add the bread crumbs. Sprinkle the Parmesan, bread crumbs, and the rest of the cheddar over the top of the pasta in the pan. Place under the broiler and cook until the top turns golden brown, about 3 minutes. • • •

Stuffed Goat Shells •

1 package of Lille Goat Garlic and Herb Goat Cheese 4 oz if Ricotta cheese 12 oz jumbo pasta shells 1 jar of marinara sauces 1 medium yellow onion, chopped 4 oz basil, finely chopped 2 cloves of garlic, minced 1 tbsp butter 1 tbsp salt

Pre-heat oven to 350 degrees Fahrenheit. Bring 6 cups of water to a boil. Add pasta and pinch of salt. Cook pasta until tender and then drain into strainer. Heat butter in a pan. Add onion and garlic, cook on medium-heat until browned. In a large bowl, stir together goat cheese, ricotta, salt and basil. Add onion and garlic into cheese mixture and fold together. In a medium oven safe dish, spread jar of marinara across bottom. Take each shell and fill with 1 tablespoon of cheese mixture and place evenly in pan. Cover top with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes uncovered. • • •
