- 1 Hot Solera Chorizo Ring, sliced 1/4 inch thick - 2 tbsp olive oil - 1 yellow onion, diced - 2 cloves garlic, minced - 1 tbsp smoked Spanish paprika - 1 tsp ground cumin - 1/4 tsp ground cayenne pepper - 30 oz chickpeas, drained and rinsed - 36 oz canned diced tomatoes - 1 qt chicken broth - parsley for garnish
- 2 ½ cups grated Point Reyes Toma Rashi - 1/4 cup half and half - 1 poblano pepper, seeded and diced - 1 tbsp olive oil - 1 tsp minced garlic - 3 chives, thinly sliced - 3 tsp diced jalapenos - salt and pepper to taste
DIRECTIONS
1. Heat olive oil in a large pot over medium heat. Add the Solera Hot Chorizo and the diced yellow onion and cook until the onion is translucent. 2. Stir in the garlic, paprika, and cumin. Add the tomatoes and their liquid, the drained chickpeas, and the chicken broth and stir until well combined. Add the sprigs of thyme. 3. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes. Add salt and pepper to taste, then serve with cornbread. JANUARY 2021 | 10

1. Sautee the poblano pepper and garlic until soft, about 5 minutes. Set aside. 2. Create a double boiler by putting a large bowl over a pot of simmering water, making sure that the bottom of the bowl does not touch the water. Add the Toma Rashi and half and half to the double boiler and stir until melted. 3. Add the cooked poblano pepper and garlic, jalapenos, and chives. Add salt and pepper to taste. Cook for an additional 5 minutes. Serve with pita or tortilla chips.

- 8 oz Fromager d’Affinois Garlic & Herbs - 4 potatoes, peeled and diced - 2 eggs - 1 ½ cup vegetable oil - 1 cup bread crumbs - ½ cup milk - 3 tbsp Thai Chili Garlic Paste - 2 tbsp butter - 1 tbsp garlic, minced - ½ yellow onion, diced - 1oz dried chilis - 1 tsp salt and pepper DIRECTIONS
1. Break eggs into a bowl, add salt and pepper and whisk. 2. Place potatoes in large pot of cold water. Boil until the potatoes are fork tender. Drain and put into a mixing bowl.
SERRANO HAM AND SPICY GOAT CHEESE CROSTINI SPICY YET FRESH CROSTINIS TOPPED WITH SOLERA BAYONNE HAM, WHIPPED GOAT CHEESE, ASPARAGUS AND ARUGULA.

- 4 oz Solera Serrano Ham, cut into 1 inch wide strips - 1 French baguette, sliced into 1/2 inch thick slices - 3 oz softened plain goat cheese - 1 tsp red pepper flakes - 1/8 tsp freshly ground black pepper - 1 lb fresh asparagus, washed and peeled - 1 tbsp olive oil - 2 cups fresh arugula, washed DIRECTIONS
1. Cut the baguette into 1/2 inch diagonal slices. Put on a baking sheet and place under the broiler until toasty, around 4 minutes. 2. Whip together the softened goat cheese, freshly ground black pepper, and red pepper flakes with a whisk until an airy consistency is achieved.
3. Add, butter, milk, onion and garlic into mixing bowl with potatoes and mash into a chunky consistency. Mix in diced chilis and Fromager d’Affinois Garlic & Herbs and fold until all ingredients are thoroughly combined.
3. Coat the washed and peeled asparagus in the olive oil, salt and pepper and roast in a 425 degree Fahrenheit oven for 12 to 15 minutes or until tender.
5. Spoon out 2tbsp of mixture at a time and roll into a ball. Dip the balls into egg mixture and the roll through the bread crumbs.
4. Let cool and wrap each spear in a 1 inch wide strip of Solera Serrano Ham.
6. Pour the vegetable oil into a small pot and bring to medium heat. Place potato balls into oil and fry until each side is golden brown.
5. Assemble by spreading a small amount of the spicy goat cheese on each slice of toast, adding a few pieces of arugula and topping with the asparagus wrapped in Solera Serrano Ham.
7. Remove from oil and set on a paper towel lined plate to drain excess oil. Place croquettes on plate, drizzle with Thai Chili Garlic Paste and serve.

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau then went on to start his own company, Fromagerie Guilloteau in 1981 with a focus on producing an expanding line of top-quality cheeses made exclusively with the ultrafiltration process.

Ultrafiltration is a special industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose and mineral salts. Because it retains the milk’s soluble proteins, ultrafiltration significantly increases the yield that can be used for cheese, as well as allows every step of the cheesemaking process to be quicker. Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camembert cheese. Fromagerie Guilloteau currently produces a range of cheeses under the brands Fromager d'Affinois, Pavé d’Affinois, and St. Angel. The fresh milk used from local French farms is never more than 24 to 72 hours old, adding even more value (and flavor!) to the many advantages that come from ultrafiltration. Their even, creamy textures, delicate unique tastes, and very fine rinds must be tasted to be truly valued.

Perhaps the most prestigious of the cheese award events is the World Cheese Awards. According to their official site, the World Cheese Awards is “a truly global cheese event [that] brings together cheesemakers, retailers, buyers, consumers and food commentators worldwide to judge nearly 4,000 cheeses from over 40 countries”. Judges work together to identify cheeses that are worthy of gold, silver or bronze awards. Cheeses’ rind, body, color texture, consistency, and most importantly, taste, are all considered when identifying an award-worthy cheese. Each team of judges nominates their favorite cheese as the “Super Gold”. Super Gold winners are considered the best cheeses in the entire world!

There are smaller cheese awards that occur across the globe. The United States Championship Cheese Contest is hosted biennially by the Wisconsin Cheese Makers Association. Cheeses are evaluated by a team of skilled judges on their flavor, body and texture, salt, color, finish and packaging. Gold, silver and bronze medals are awarded to the cheeses with the highest scores. The American Cheese Society Awards is the biggest competition for American-made cheeses and showcases American cheesemakers and their talents, both in cheese making and commitment to food safety. Each year, the Specialty Food Association holds the annual Sofi Awards in the United States. The Sofi Awards have been held to recognize the best specialty foods since 1972. Winners are chosen through blind taste tests by a team of highly qualified judges. Winning a Sofi award isn’t just another trophy, but an award that differentiates a brands’ product from others and opens a doorway to valuable business opportunities. Through every category there is always those select few that stand out from the crowd and emerge victorious.
