DIRECTIONS 1. Place the sesame seeds, fennel seeds and salt in a mortar & lightly crush to break up the seeds. 2. Pour out onto a plate. 3. Spread softened butter onto one side of each slice of bread. 4. Place the buttered side down in the seeds & press so that the bread is well coated in seeds. 5. Keep the seed side down as you build the sandwich. 6. Place half the cheese on one slice of bread, top with mortadella & chopped dates, then add the remaining cheese. 7. Top with the other slice of bread. 8. Cook in a pan over medium low heat until all the cheese is melted & the bread is golden. Eat immediately.

So it is no secret as to why there is a holiday celebrating cheese and all of the people that love it! January 20th is National Cheese Lovers Day. Although there is no evidence as to the origins of cheese making, it is said that the first cheese ever was created entirely by chance and oh how grateful we are for that! If you need help deciding how to commemorate this joyous holiday, look no further as we have done the work for you. With so many different varieties it is hard to choose just one, but luckily with cheese you don't have to! There are plenty of opportunities to taste new cheese and discover new cheese pairings. Celebrating National Cheese Day is easy and fun! You can start the day by incorporating a brie into your breakfast sandwich or adding grated gouda into your scrambled eggs. Later in the day you can pair your favorite blue cheese with some wine or dark chocolate and end the evening with an emmentaler fondue along with some bread, potatoes or veggies. The possibilities are endless! The important thing to remember on National Cheese Lovers Day is to sit back and enjoy some cheese! BLUE CHEESE Blue cheese is classified as any cheese with marbled veins of blue or blue-green mold. In todays blue cheese making, Penicillium roqueforti mold is added to the cheese production. To ensure even distribution of mold through-out the cheese, oxygen is inserted through the surface of the cheese by thin needles or skewers. Over time, the blue mold matures in the air tunnels which forms the distinctive marbled blue look. Due to its unique nature, blue cheese has a pungent, salty and tangy flavor that distinguishes it from other cheeses. Made using milk from local cattle, Castello Traditional Danish Blue comforts with a creamy profile of intricate flavors and a

Hard cheeses are dense, savory and firm. Similar to semi-hard cheese, after being pressed to remove moisture, hard cheese will either be brined or coated in wax. WASH RIND CHEESE Washed rind cheeses are bathed or washed with a brine, a mixuture of salt and water, or with other liquids such as beer or wine too. Brining the cheese encourages the growth of bacteria, Brevibacterium linens, on the surface which gives it and orange and pink hue color that is slightly sticky and darkens with age. BLOOMY CHEESE Bloomy rind is a surface-ripened cheese. This cheese earned its name from its edible white rind. During the cheese making process, cheesemakers coat and edible mold called Penicillium camemberti, a yeast like fungus across the exterior of the ripening cheese. All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. These cheese rounds are then taken to the master cheese maker for maturing. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. This regular testing and observation are essential for transferring the rounds of cheese to the appropriate maturing cellars and obtaining the best flavors. The rounds are then kept in a fermentation cellar; this is when the living organisms inside and outside the cheese flourish most. The final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes. The result of these special maturing techniques at the Fort des Rousses, give the Comté cheeses a nice creamy texture and a strong and refined combination of aromas that linger in the mouth. The Barber family have been making cheddar since 1833, which makes them the oldest surviving cheddar-makers in the World! Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969.
