Cows are social animals They prefer not to be alone and will bond and make friends within their herd. Cows are all female, and, like women, are pregnant for 9 months. Male bovines are called bulls or steers. Crazy 8s! Cows spend each day sleeping for 8 hours, eating for 8 hours, and 8 hours of chewing cud-- the softened food they push back up to re-chew & swallow. The average cow produces 8 gallons of milk per day which is approximately 70 pounds. Cows have superior senses of smell including the ability to smell up to 6 miles away. Cows are red-green colorblind, yet see the world with almost 360 degree panoramic vision. Cows have a better ability to hear lower and higher frequencies than humans. Kanaal is crunchy, butterscotch, salty-sweet cheese candy... fresh from Holland and ready to sweeten any occasion. A most tasty treat perfectly made to please cheese fans everywhere-- the older Kanaal gets, the more deliciously dense and fudgy it becomes. As an added bonus, expiration date laws aside, due to its cheesemaking style plus help from the wax-coated protective wrapping, there is a practically unlimited shelf life when well treated. At a glance or from a blind bite, one may guess Kanaal is any number of cheese types. In a way this is true as it is a lesser known style called Proosdij (‘Proooze-Dee’) created to capture the best of many cheese worlds. Proosdij is a semi-firm to firm style of washed-curd cheese made very similarly to Goudas using specific combinations of mixed-strain starter cultures. As a result, Kanaal develops aroma, flavor, and texture profiles with characteristics a cross between Gouda and Parmesan cheeses. This also includes the satisfying crunchiness of increasing amounts of tyrosine crystals that form with age along with more sweet, fruity, toasted caramel, and bouillon flavors than Gouda cheeses. Proosdijs also have lower butterfat content by dry matter than the required 48% for official Gouda status. With Kanaal coming very close at 45% it has the benefits to satisfy while also warranting those extra bites. The Barber family have been lovingly handcrafting authentic English cheddar cheese at Maryland Farm in Ditcheat, Somerset – just 11 miles from Cheddar village itself – since way back in 1833, making them the oldest cheese making family in England and one of the oldest cheddar producers in the world! From the very beginning of their journey, the milk which came from the Barber family’s herd of cows – which are free to roam, graze and relax on natural, rich and lush pasture, as nature intended – was sold to locals, while the cheese that was crafted was used to feed the family and dedicated farm workers. As time went by, the Barber family needed more milk in order to meet the demand for their mouth-watering cheddar cheese so they began to buy extra supplies of milk from neighboring farms around the area, and still do so to this day.
