Good news cheese lovers! National Macaroni and Cheese Day is approaching quickly. Cheesy, gooey, hearty and creamy, America’s favorite comfort food has its very own holiday, celebrated on July 14. Whether you’re a fan of classic Macaroni and Cheese or prefer it loaded with lobster, bacon, or veggies—there is a cheesy variation for any taste. The exact origins of Macaroni and Cheese are unknown, but the first known Macaroni and Cheese recipe is thought to have been written in Liber de Coquina, an Italian cookbook from the 13th century. This cookbook included a recipe called de lasanis which was comprised of sheets of cooked lasagna noodles cut into small squares and tossed with grated cheese. We can thank Thomas Jefferson for bringing this classic comfort food to the United States. While visiting Italy, Jefferson became enchanted by the Italian’s cheesy pasta dishes. Upon his return, he brought recipes and pasta machines with him, as pasta was unknown in America at the time. He began serving Macaroni and Cheese at his presidential events, and soon enough the love for the cheesy combo spread around the country. During the Great Depression, Kraft boxed Mac and Cheese was introduced. The selling point was that one box could feed a family of four for just 19 cents. The absolute best way to celebrate National Mac and Cheese day is cooking up your version of a perfectly gooey, golden and cheesy pot of Macaroni and Cheese. BEER MAC & CHEESE
SRIRACHA PIZZA BAKE
In boiling slightly salted water, cook pasta 1-2 minutes less than package directions. Rinse in cold water and set aside. It should be al dente because you will be cooking it further in the oven. Heat milk in a small sauce pan on the stove just until warm, do not boil. Melt butter in a medium pot over medium-low heat; slowly whisk in flour until smooth. Cook, whisking constantly for 1 minute. Gradually whisk in warm milk and cook, whisking for 5 minutes or until thickened.

(2 cups) Tillamook Sharp Cheddar Cheese, shredded lb. smoked bacon, cooked until crispy then chopped oz. pasta (Cavatappi is ideal because it has little pockets for cheese to hide. If you can’t find it penne works too)
Slowly add beer and cook, whisking again constantly, 2 minutes. Whisk in salt, black pepper, onion powder, Dijon mustard, and 3 cups of the cheeses, mix until smooth; stir pasta into sauce mixture add the cooked bacon. Spoon pasta and bacon coated mixture into a lightly greased 8 inch baking dish; top with remaining Provolone cheese. Bake at 400°F uncovered, for 20 minutes. Let Mac & Cheese sit for 5 minutes before serving.

Preheat oven to 350F.
MACARONI & CHEESE MUFFIN CUPS
Bring a large pot of salted water to a boil. Boil pasta to al dente, about 6 to 8 minutes. Drain pasta and set aside.
Spray a muffin tin with cooking spray and set aside. In a medium sized pot, boil water with ½ tsp salt. Once boiling, add elbow macaroni and cook for 8 minutes.
In a large heavy-bottom pot, melt 4 tablespoons butter over medium heat. Add flour and mix well. Add milk and heavy cream. Continue to heat until mixture reaches a simmer. Add cheeses, sriracha, mustard powder, garlic powder, and Italian seasoning and mix well. Pour sauce over pasta. Add the pepperoni slices and mix well. Place in a large oven-proof baking dish. Top with extra pepperoni slices and shredded Cabra LaMancha. Bake for 20 to 25 minutes, until the cheese is golden brown and bubbling. Sprinkle chopped parsley on top and serve!

Remove from heat, drain, and place back into the pot. Add half the amount of cheese, egg, butter, remaining salt, pepper and stir well.

The Story BEHIND THE CHEESES Frico's heritage dates back many years, in Holland Frico started out as a co-operation in 1898 when six Dutch dairy factories united into what was named the "foundation of Friesian Cooperative Dairy Export Association." Their first export was butter, followed by a selection of top quality cheeses that soon had people asking for more. Frico has a history full of taste and memorable moments that made Frico what it is today: the largest producer of cheese in Holland, making cheese with all the love and passion for quality just like all those years ago!
PANFRIED MELTED CHEESE HAWAWSHI PREPARATION 1. Mince onions in a food processor, making sure they are thoroughly minced but not pureed. 2. Finely chop green bell pepper and chili pepper. 3. In a bowl, mix the minced meat with onions, green and chili pepper. Add salt and pepper and mix until well combined. For best results, leave to marinate in the fridge for a few hours. 4. To prepare the sandwiches, cut the bread into halves. Fill each half with one heaped tablespoon of minced meat. Spread it evenly in the bread so it cooks evenly. 5. Place one slice of cheese in each half baladi. You may need to cut the cheese to fit properly in the sandwich. 6. Brush the bread with oil on both sides. 7. Heat a large frying pan, then lower the heat to medium and place one baladi half (or two if the pan is big enough), cheese-side up. 8. Leave the bread to fry for a few minutes. Gently press down. When the bread is golden and crispy, turn it to the other side. Let it cook until golden, then remove and place on kitchen tissue to get rid of residue oil. Repeat the process with the rest of the sandwiches.

Bastille Day is a French holiday held nationally on July 14th, celebrating the storming of the Bastille—a turning point in the French Revolution. The Bastille was a military fortress and prison, housing those who dissented against the government. The Bastille represented the tyranny of the French monarchy. The French Revolution was sparked by the citizens of France becoming increasingly frustrated with Louis XVI and Marie Antoinette’s extravagant spending and involvement in international conflicts. By the late 1780s, the economy was failing and there was a widespread famine. Violent revolts of angry revolutionaries upset with the government began to break out. During the unrest, on July 14, 1789, a mob surrounded the Bastille in order to demand the weapons and ammunition that were stored inside. Eventually several mob members were able to overpower the guards and release the prisoners held inside. The taking of the Bastille by the revolutionaries marked the beginning of the French Revolution. Bastille Day, called La Fête Nationale (The National Celebration) in France, was made a national holiday in 1880. JULY 2019 | 22
Every year on July 14, schools, government buildings and many businesses are closed in France for Bastille Day. Each year, a military parade is held on the Avenue des Champs-Élysées in Paris. It is watched by thousands on French television and is the oldest and largest national military parade in Europe. Fireworks light up the French sky during the evening. Guilloteau
Since 1981, Fromagerie Guilloteau has used a unique technology to produce all of their cheeses, called ultrafiltration. This manufacturing process involves removing the excess water contained in milk prior to the cheesemaking process, leaving only the protein, milk fat, and nutrients. All of the milk that Fromagerie Guilloteau receives for their production is pasteurized and then filtered. RACLETTE Raclette is the world’s most famous melting cheese as well as a beloved dish originally created by Alpine cheesemakers feasting upon boiled potatoes and cornichons topped with the melted cheese. The name Raclette derives from the French verb “racler” meaning “to scrape”, which describes the method used to layer the cheese once melted from the heat of fireside rock on which it was placed. This semi-firm cows’ milk cheese has a washed rind which creates a pungent aroma that is met with a contrastingly mild flavored, springy paste. Try it melted on bread or paired with pickles, vegetables, cured meats, a bottle or two of your favorite Vouvray, Riesling, or Alsatian white and invite over your nearest and dearest for a fabulous French fondue party.
SAINT-NECTAIRE Saint-Nectaire is a semi-soft, washed rind, cows’ milk cheese. It has a leathery, natural rind that is mottled with brownish gray mold that develops over a minimum of 28 days while aging on rye straw mats. Saint-Nectaire’s aromas are of an earthy cellar with intensely vegetal flavors plus notes of hazelnuts or cashews which complement its doughy, pudgy, creamy paste.
