Essentials of

FRENCH Cheese

Bastille Day is a French holiday held nationally on July 14th, celebrating the storming of the Bastille—a turning point in the French Revolution. The Bastille was a military fortress and prison, housing those who dissented against the government. The Bastille represented the tyranny of the French monarchy. The French Revolution was sparked by the citizens of France becoming increasingly frustrated with Louis XVI and Marie Antoinette’s extravagant spending and involvement in international conflicts. By the late 1780s, the economy was failing and there was a widespread famine. Violent revolts of angry revolutionaries upset with the government began to break out. During the unrest, on July 14, 1789, a mob surrounded the Bastille in order to demand the weapons and ammunition that were stored inside. Eventually several mob members were able to overpower the guards and release the prisoners held inside. The taking of the Bastille by the revolutionaries marked the beginning of the French Revolution. Bastille Day, called La Fête Nationale (The National Celebration) in France, was made a national holiday in 1880. Cheese is a big part of French culture. Although there are around 1,000 types of cheese in France, Brie and Camembert are the most well-known. It is estimated that each person in France eats approximately 59 pounds of cheese a year! To celebrate Bastille Day, we're sharing French cheese must-haves!

The terroir (the geography, soil and climate) of an area dramatically influences the taste of cheese that is produced in the region. The grass on which milk-producing animals graze, the contents of the soil and the humidity all affect the flavor of the resulting cheese.

Germain Crottin De Chèvre

Brie 3K Ermitage

A traditional product of the Loire Valley, Crottin de Chèvre Germain is a molded goat cheese made from pasteurized milk. Under its fine, white rind hides a firm and slightly crumble texture with a delicate taste. As a snack, on a cheeseboard or in a warm dish, Crottin de Chèvre cheese does not miss a single opportunity to delight gourmet palates!

Brie Ermitage has a fresh milk taste and a soft paste under a white, bloomy rind. The milk makes the difference! Creamy Ribbon Pasta with Mushrooms and Langres Cheese

Potatoes au Gratin with Brie and Bayonne Ham

• 14 oz fettuccine pasta • 6 1/2 oz heavy cream • 1 1/2 lbs button mushrooms • 1 red onion • 3 oz Germain Langres AOP cheese • 1 tbsp olive oil • a few sprigs of fresh parsley

• 2 lbs russet potatoes • 1 cup whole milk • 1 cup heavy cream • 3 cloves garlic, minced • salt and pepper • pinch of ground nutmeg

2. In a large pan, add the sliced potatoes, milk, heavy cream, minced garlic, salt, pepper, and nutmeg. Bring to a boil then lower heat. Allow to simmer until the cream thickens, about 8-10 minutes. 3. Remove from the heat and add the cubed Brie Ermitage and grated Gruyère. Let rest for 5 minutes to allow the cheese to begin melting. Stir until it has melted into the cream completely. Add the fried Jambon de Bayonne.

ou can't think of Wisconsin without thinking of cheese! Wisconsin Dairy Farmers have been making cheese for over 175 years, combining art and science in a tradition so rich you can taste it. The Wisconsin Milk Marketing Board, Inc., dba Dairy Farmers of Wisconsin, is a nonprofit organization funded entirely by Wisconsin's dairy farm families. The organization has been created to increase the sale and consumption of Wisconsin milk and dairy products.

Dairy

In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsin-produced dairy products. An additional five cents goes to the National Dairy Promotion & Research Board for generic dairy promotion activities at the national levels. Dairy Farmers of Wisconsin's primary mission is to "grow demand for Wisconsin milk". Key Dairy Farmers of Wisconsin roles within Wisconsin's dairy industry include: establishing new markets, funding dairy-related research, educating consumers about the quality and nutritional importance of Wisconsin milk and dairy products, and showcasing the important economic contribution that dairy makes to their communities and their state.

Wisconsin Cheesemakers, these fine craftsmen produce nearly 2.8 billion pounds of cheese each year, over 25 percent of all domestic cheese. These quantities continue to grow to meet the nation’s demand for quality and variety of cheese from Wisconsin, America's Dairyland.

As the story goes, Count Bolognesi, an Italian diplomat, was enamored with Wisconsin’s rolling pastures, clear waters, and pure milk.
