It all started in the early 80s when Jean-Claude Guilloteau set out to create his own cheese. This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and retained its best qualities. The cheese features a thin rind, a distinct taste, and a melting texture.

The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed down by Fromagerie Guilloteau cheese makers for over 40 years now.

Fromagerie Guilloteau uses only fresh milk from local French farms, never more than 24 to 72 hours old, adding even more value (and flavor!) to the product. Ingredients:

- 2 ripe but firm pears, sliced

- 4 cups arugula and spinach mix

- 1 cup walnuts, toasted

- 7 ounces Fromager d'Affinois, sliced into 1 1/2 inch cubes

- 1/4 cup balsamic vinegar

- 1/4 cup extra virgin olive oil

- 1 tablespoon honey

- salt and pepper to taste

directions:

1. Preheat your grill to medium-high heat.

2. While the grill is heating, lightly brush the pear slices with olive oil to prevent sticking to the grill.

3. Grill the pear slices for 2-3 minutes on each side, until grill marks appear and the pears are softened slightly. Remove from the grill and set aside.

4. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt and pepper to make the dressing.

5. In a large salad bowl, combine the arugula and spinach mix.

6. Top with the grilled pear slices, toasted walnuts, and slices of Fromager d'Affinois cheese.

7. Drizzle the balsamic dressing over the salad and toss gently to combine. Serve immediately.

Ingredients:

- 4 cups cooked corn kernels (fresh, canned or grilled)

- 1 cup Talavera Grated Cotija cheese

- 1/2 cup mayonnaise

- 1/2 cup sour cream

- 1/4 cup chopped cilantro

- 2 tablespoons fresh lime juice

- 1 teaspoon chili powder

- 1/2 teaspoon garlic powder

- Salt and pepper to taste

directions:

1. In a large mixing bowl, combine the mayonnaise and sour cream. Mix until smooth.

2. Stir in the lime juice, chili powder, smoked paprika, garlic powder, and a pinch of salt and pepper. Adjust seasoning to taste.

3. Add the cooked corn kernels and chopped cilantro to the bowl. Mix thoroughly to ensure all ingredients are well combined.

4. Fold in the Talavera Grated Cotija cheese, making sure it is evenly distributed throughout.

5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

6. Garnish with additional chopped cilantro, Talavera Grated Cotija cheese and a sprinkle of chili powder before serving.

- 4 cups arugula (or mixed greens)

- 4 slices Bellentani Prosciutto

- 2 ripe peaches, halved and pitted

- 1/2 cup crumbled blue cheese

- 1/4 cup walnuts, toasted and chopped

- Balsamic glaze or balsamic reduction, for drizzling

- Extra virgin olive oil, for grilling peaches

- Salt and black pepper to taste

directions:

1. Preheat your grill to medium heat. Brush the peach halves lightly with olive oil.

2. Place the peaches on the grill, cut side down, and cook for about 3-4 minutes until grill marks appear and the peaches are slightly softened. Flip and grill for another 2-3 minutes. Remove from heat and let cool slightly.

3. In a large salad bowl, combine the arugula or mixed greens, Bellentani prosciutto, grilled peach halves (sliced if desired), crumbled blue cheese, and toasted chopped walnuts.

4. Drizzle the salad with balsamic glaze or balsamic reduction. Season with salt and black pepper to taste. Toss the salad gently to combine all ingredients. Serve immediately.
