Cabot Creamery Co-operative was established in 1919, when a group of dairy farmers in the northern Vermont town of Cabot joined forces to turn their excess milk into butter and market it throughout New England. Ninety-four farmers made up the original co-operative.
Cabot's farmer-owners thrived by shipping their milk and butter south. As the national economy shifted away from agriculture, cows outnumbered people in the hills of Vermont. By 1930, the decision was made to start crafting high-quality cheeses in addition to butter. In 1989, Cabot took first place in the cheddar category at the U.S. Championship Cheese Contest. That ribbon kicked off an impressive run of national and international recognition in which Cabot won every major award for taste. In the international World Championship Cheese Contest, Cabot has won 27 ribbons, including 18 Best in Class awards, in the last two decades alone. Today, Cabot Creamery Co-operative is made up of 1,000 farm families from New England and Upstate New York. The company currently employs 1,000 people across its four creameries in Vermont, New York, and Massachusetts. All profits continue to be returned to the farmer owners of the co-op. Cabot also is dedicated to bettering the communities in which it does business. As a certified B Corporation, Cabot Creamery embraces a global set of standards for sustainability, employee enrichment, and using the Cabot name as a force for good. Big Dish Tomato Basil Mac & Cheese 10 medium, fresh tomatoes (5 coarsely chopped and 5 sliced) 2½ cups fresh basil leaves, coarsely chopped 2½ lbs. penne, large elbows or shells 10 cups milk 5 (8 oz.) bars Cabot Extra Sharp Cheddar, grated (about 10 cups) 20 Tbsp. Cabot Salted Butter (2½ sticks) 20 Tbsp. all-purpose flour 2½ cups of Panko bread crumbs
COOK noodles until al dente, drain, place in a large bowl and set aside. Preheat oven to 350°F. MELT the butter in a heavy-bottomed pot or saucepan over medium heat and whisk in the flour, a little at a time, until well blended. Continue stirring, letting it cook for a minute or two. Slowly add the milk and keep whisking for another 2-3 minutes. Add the cheese and stir with whisk or spoon until it melts and is blended into the mixture. Adjust the heat to low. Add the herbs and cook while stirring for 3 or 4 minutes. ADD about half of it to the pasta, when the sauce is done, and mix well. Add the 2 chopped tomatoes, a half cup of the chopped basil and the other half of the cheese sauce and mix again. PLACE the mac and cheese in lightly greased baking dishes. Top evenly with the sliced tomatoes, the remaining cup of chopped basil and then bread crumbs. Bake for 20 to 25 minutes or until hot and bubbly. SERVES 30.

Kaaslands’ Kanaal is crunchy, butterscotch, salty-sweet cheese candy. Kanaal is a Proosdij which is a semi-firm to firm style of washed-curd cheese made very similarly to Goudas using specific combinations of mixed-strain start cultures. The delicious, Dutch-made result has aroma, flavor, and texture profiles with characteristics a cross between Gouda and Parmesan cheese. This also includes the satisfying crunchiness of increasing amounts of tyrosine crystals that form with age along with even more sweet, fruity, toasted caramel, and bouillon flavors than a Gouda cheese. Proosdijs have lower butterfat in dry matter than the required 48% for official Gouda status. With Kanaal coming very close at 45% it has the benefits to satisfy while also warranting those extra snuck bites.

Pronounced “Darby” in England, Sage Derby is a regional cheese called a “territorial” by the English. Originally it was only made for festive occasions, such as harvest and Christmas, but thankfully Ford Farms makes Sage Derby all year round. It is a green veined, semi-hard cheese with a mild sage flavor. Historically, the addition of sage leaves to the curd was not for looks, or even taste. It was medicinal. During the 17th Century sage was believed to have powerful therapeutic properties that could cure a variety of ailments. English Sage can be made into tea and taken to counteract sweating and to aid digestion. Husband and wife Milton Creamery co-founders, Rufus and Jane Musser, with their three sons, Junior, Galen, and Mark dedicate their lives to dairy farming-- a perfect pair with their Mennonite faith.
