National Cheese Day

National Cheese Day is June 4th . Celebrate one of the most favorite foods of mankind by indulging in some of these amazing products.

June 4th is the single most important food holiday of the year: National Cheese Day! The origins of National Cheese Day are unknown, but some speculate that a shepherd discovered Roquefort cheese on June 4, 1070. Legend has it that the shepherd left bread and cheese in a cave and forgot about it. Upon returning a few months later, he discovered that the cheese had become moldy. He decided to try it and realized how much more flavorful and delicious it had become, and thus Roquefort was born. There are endless ways to enjoy cheese on this holiday: fondue, melted in a sandwich, eaten alongside cured meats on a charcuterie board or simply on its own. There’s no shortage of different types of cheeses to devour on June 4th, but here are a few definitely worthy of celebration!

Original Blue & Steak Sandwiches with Caramelized Onions & Arugula 30 minutes

Ingredients: • 3 ounces Point Reyes Bay Blue, crumbled • 3 tablespoons olive oil • 2 yellow onions, thinly sliced • Pinch of salt •1 New York Strip boneless steak, grilled and sliced • 1 fresh baguette, sliced in half horizontally • ½ cup baby arugula, washed and spun dry

Directions: 1. To caramelize onions, heat 2 tablespoons olive oil in a medium pan over mediumhigh heat. Add onions and salt to the pan and stir to combine. SAVORY SALUMI Bellentani's italian style salumi These salumi are made by a century old method in the Pocono Mountain area. Bellentani’s attention to their raw ingredients and process is exquisite and because of their location they can replicate and enhance the traditional Italian processes. Salami actually predates ancient Roman times; it was the ideal way for these ancient people to save meat and make it last when times were tough. The Italian terrain, studded with mountains that had cool, dry, high-altitude climates, served as the perfect long-term storage space. The salami could dry out for extended periods of time without rotting. Bellentani Salumi are made in a near-identical climate in the Pocono Mountains in New York, so there is no need for them to artificially create the aging conditions. Beyond that they believe in making a real product, one that is handmade with high quality ingredients and no artificial additives or coloring. All of the salumi are made with locally sourced pork. It is made with a combination of pork meat and fat (only the highest quality fat) that is then minced and mixed in to meat mixture. The pork fat shows up in the final salami as the white pieces dotted throughout. Bayonne Ham is produced in the Ardour basin in the heart of French Basque Country. This exceptional air-dried ham draws its unique qualities from these roots, while its flavor and character have been assured by the Protected Geographical Indication (PGI) since October 7, 1998. Since this date, the Bayonne Ham denomination has been protected by the European Union under the PGI label, a gauge of quality and respect for its geographic origins. Authentic products are something extremely important to Solera across the board. With Solera Chorizo, they wanted to craft a product that was cleaner, more natural and healthier than other Spanish Chorizos on the market. These are allnatural, antibiotic free that have 17% less salt and 16% more protein than others, with a robust flavor that can’t be beat. Solera Chorizo Rings are made with natural casings, meaning pig intestines, which is the traditional way. The final sausage ends up slightly uneven because, like anything in an artificial casing, it cannot be molded into a precise and exact shape. Instead the artisan crafters have general standards for the diameter, but the amount of meat added and the stretching to the casing is not uniform. There is an art to making sausage with natural casing, one that can’t be replicated by a machine. Chorizo is a mixture of pork, pork fat, garlic and smoked paprika (DOP Pimenton de la Vera to be exact). It is cured like salami and can be eaten without any further treatment. All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. These cheese rounds are then taken to the master cheese maker for maturing. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. The rounds are then kept in a fermentation cellar; this is when the living organisms inside and outside the cheese flourish most.

The final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes.
