une 4th is the single most important food holiday of the year: National Cheese Day! The origins of National Cheese Day are unknown, but some speculate that a shepherd discovered Roquefort cheese on June 4, 1070. Legend says that the shepherd left bread and cheese in a cave and forgot about it. Upon returning a few months later, he discovered that the cheese had become moldy. He decided to try it and realized how much more flavorful and delicious it had become, and thus Roquefort was born. From French Camembert to Greek Feta, there are over 3,000 varieties of cheeses produced worldwide. Cheeses differ in their aroma, age, texture, taste, mold content, shape, and softness. The climate, soil, terroir and production methods unique to each region gives cheese its own unique character that can often not be replicated if produced in other parts of the world. The European Union was the #1 worldwide cheese producer in 2020, producing an impressive 10.35 million metric tons of cheese! This National Cheese Day, we are celebrating the different types of cheese from all around the globe! While there are so many delicious ways to enjoy cheese—melted into a sandwich, alongside accompaniments on a charcuterie board or simply on its own—this holiday is a perfect opportunity to try something new and test out one of these international cheesy dishes! Extra Cheesy Polenta

WHAT 2 cups polenta 1/2 cup shallots, minced 2 cloves garlic, minced 1 tbsp butter 3 1/2 cups chicken stock 3 1/2 cups water 1 large pinch baking soda 1 tsp salt 1 cup asiago DOP , grated 1 cup parmesan cheese, grated 1/2 cup basil, minced

HOW Place a large pot on medium high heat. Add the butter and sauté the shallots and garlic for a couple of minutes. Add the stock and water to the pot and bring it to a boil. Once it is boiling add the salt and the baking soda, giving everything a good stir. Pour in the polenta, using a whisk or slotted spoon stir the polenta for a couple of minutes to break up any clumps. Turn the heat to low and cover for 5 minutes. After 5 minutes stir everything again, cover, and let the polenta cook for another 25 minutes. While the polenta is cooking shred

the asiago and parmesan cheeses and mince the basil. When the polenta has finished cooking add the cheese, basil and stir until everything is thoroughly combined. Remove the pot from the heat and let the polenta stand covered for 10 to 15 minutes. The polenta will continue to thicken as it rests. The polenta is ready to serve when it has reached your desired thickness. Spread gorgonzola cheese on top to add a decorative touch.

Chicken Cordon Bleu

HOW Slice the chicken breasts along the long side about two thirds of the way through. Open up the chicken breast like a butterfly.

Using a rolling pin, flatten the chicken by pounding and rolling over it. Repeat with the second breast. Place a slice of ham that will fit onto one half of each flattened breast, leaving a margin the width of a finger around the edge. Divide the grated cheese between the two chicken breasts and place it on the ham. Set out two large plates. Spread the flour over one, the breadcrumbs over the other. Sprinkle the breadcrumbs with salt.

Melt the butter in a frying pan over a medium heat and when it is melted and just beginning to foam add in the chicken presentation side down. Allow it to sit for 4-5 mins. Check that the chicken has colored on the cooked side and become golden brown. Then flip over and continue to cook on the other side. Baste the chicken as it continues to cook with all of that lovely butter, this helps to prevent the chicken from going dry and also cook evenly. Cook for an additional 4-5 minutes or until chicken reaches a temperature of 158°F

Dredge one breast with flour, dip into the egg to coat both sides, let the excess run off, and coat with breadcrumbs. Repeat.

HOW Toss grated Vlaskaas with cornstarch. Set aside. Crack the garlic clove with heel of hand or knife, but do not completely smash. Rub fondue pot with garlic clove. Discard garlic. Add wine to fondue pot and bring to a low simmer. Add cheese to fondue pot and stir to melt and dissolve cornstarch (simmer but do not boil). Add cognac/brandy. Season with salt & pepper. Sprinkle with ground coriander and serve. Tip: For an alcohol-free fondue, replace the wine and cognac with chicken or vegetable broth.

Scrape out onto a plate and place in the refrigerator for about an hour, to chill completely. When the mixture is chilled and you're ready to cook, get out three bowls. The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau then went on to start his own company, Fromagerie Guilloteau in 1981 with a focus on producing an expanding line of topquality cheeses made exclusively with the ultrafiltration process.

It began to rise in popularity during the Middle Ages when people began to enjoy food instead of it solely being eaten as a means to survive. Today, charcuterie is used as an ingredient and recipes and is also served alongside cheese and other accompaniments on cheeseboards. The beauty of these boards is that they are easy to prepare and completely customizable to satisfy whatever you're craving! To prepare the perfect board, combine your favorite cheeses with crackers, fruit, olives, nuts, and most importantly, charcuterie such as prosciutto, salami or ham. ayonne Ham is produced in the Ardour basin in the heart of French Basque Country. Although Bayonne Ham is strictly a product from the Southwest of France in terms of production, it is also an authentic reflection of its terroir in the image of the Ardour River basin with its richly varied landscapes and climates between the Pyrenees and the Atlantic. In summer, the hams are placed in special drying rooms where the long aging process begins. The muscular parts of the ham are carefully covered with a mixture of pork fat and flour, a key procedure called "pannage" (coating). This allows the meat to dry ever so slowly over the course of the long aging process. hese salumi are made by a century old method in the Pocono Mountain area.Bellentani’s attention to their raw ingredients and process is exquisite and because of their location they can replicate and enhance the traditional Italian processes. Salami actually predates ancient Roman times; it was the ideal way for these ancient people to save meat and make it last when times were tough. The Italian terrain, studded with mountains that had cool, dry, high-altitude climates, served as the perfect long-term storage space. The salami could dry out for extended periods of time without rotting. Bellentani Salumi are made in a near-identical climate in the Pocono Mountains in New York, so there is no need for them to artificially create the aging conditions. Beyond that they believe in making a real product, one that is handmade with high quality ingredients and no artificial additives or coloring.

All of the salumi are made with locally sourced pork. It is made with a combination of pork meat and fat (only the highest quality fat) that is then minced and mixed in to meat mixture. The pork fat shows up in the final salami as the white pieces dotted throughout. Having the correct meat to fat ratio is crucial in making a good salami, but all of Bellentani salumi are leaner and better for you. At that point, spices and seasonings are added based on the desired final product. Each Bellentani salumi is mixed with spices and stuffed in to casing. At the end of the process they are delicately hand-rolled in spices.

A

uthentic products are something extremely important to Solera across the board. With Solera Chorizo, they wanted to craft a product that was cleaner, more natural and healtheir than other Spanish Chorizos on the market. These are all-natural, antibiotic free that have 17% less salt and 16% more protein than others with a robust flavor that can't be beat. Solera Chorizo Rings are made with natural casings, meaning pig intestines, which is the traditional way. The final sausage ends up slightly uneven because, like anything in an artificial casing, it cannot be molded into a precise and exact shape. Instead the artisan crafters have general standards for the diameter, but the amount of meat added and the stretching to the casing is not uniform. There is an art to making sausage with natural casing, one that can’t be replicated by a machine.

Chorizo is a mixture of pork, pork fat, garlic and smoked paprika (DOP Pimenton de la Vera to be exact). It is cured like salami and can be eaten without any further treatment. They are great for crumbling into paella, rice dishes, salads, wraps and scrambled eggs. Slice them and put in sandwiches. If you do want to cook them, make sure to just ear quickly on the outside. You don’t want to cook off the interior fat globules, which are a sign of quality and pack a punch of flavor. Imported from Spain, Solera Serrano Ham is an all natural, drycured ham similar to a Prosciutto di Parma with no added nitrates.
