The Beginning- Les Trois Petits Cochon Opens its Doors in Greenwich Village Les Trois Petits Cochon is the brainchild of two masterful French chefs, Alain Sinturel and Jean Pierre Pradie, and the constant adventure which eventually brought them to the United States. What they created was the result of initial shared experience cooking in a high end kitchen in London. The duo loved cooking, but they wanted to set out on their own. Inspiration struck when the two packed up and spent time traveling around Africa- tasting food, visiting villages and, most importantly, cooking. Alain and Jean Pierre met people from all over the world, getting inspiration and experience from their cultures, until finally they went their seperate ways. Alain returned to France and continued to prepare traditional French cuisine while Jean Pierre made his way to America. Fate, however, wasn’t having it. They ran into each other one day in New York City and decided to create their own concept, something completely revolutionary at the time in 1975. Back then, French was considered “ethnic” food; the only place you ate French cuising was in a high-end restaurant, and of those there were only a few. Regular people didn’t have access to French food, but Alain and Jean Pierre brought it to them. Les Trois Petits Cochon opened its doors in Greenwich Village as the first “fast-casual” establishment serving traditionally high-end French fare; it rocked the city within a short period of time. Alain and Jean Pierre were able to create sophisticated French options in a take-out setting, adapted to American ingredient offerings and palattes.

Rave reviews and immediate interest catapulted Les Trois Petits Cochon to success after their initial start in 1975. Their first menus included a mixture of pates, salads, quiches and more sophisticated plates like coq au vin and beouf bourgogne. Alain and Jean Pierre made all of the pates in small batches, by hand in the 300 square foot space after waking up early to search the city for fresh, high-quality ingredients. In 1975, it was hard to find some of the authentic ingredients that they needed to make traditional French food, but the duo Trois Petits Cochon never sacrificed on quality and consumers were hooked. Eventually, chefs began requesting them to supply pates in bulk quantites to serve at their restaurants. Many chefs did not have the time, skills or resources to make the authentic pate which Alain and Jean Pierre were perfecting. These initial requests helped Les Trois Petits Cochon evolve into what it is today- the leading creator of authentic pates and charcuterie in the United States. While they may no longer make French dishes in a take-out environment, the company has remained true to their intention, and to CEO David Kemp, “to thoughtfully innovate whenever it will best serve our loyal fans.” To Les Trois Petites Cochon, that means taking the step to become the first organic pate company in the United States. Like when they started, innovating the New York City food scene, they continue to innovate the food landscape.

Papillon Roquefort

In September each year, the Papillon baker comes to make approximately 300 rye bread loaves, which are then used to make the penicilium roqueforti. The bread is baked long enough that it has a hard, dark brown exterior with a moist interior. The Papillon strain of penicilium roqueforti is injected into the bread, where it develops for a month and is then transformed into a fine powder. After the milk from the Lacaune ewe has rennet added, cut and mixed, the curds and whey are seperated. When just the curds remain, the rye bread powder is sprinkled over top, which is the most important part of Papillon Roquefort production. The curds are packed in to molds, turned and pressed for two days, before they are salted. Coarse salt is placed on both sides of the wheels and then pressed into the wheel when it is pricked. To be considered AOP Roquefort, the cheese must be aged in the natural caves for a minimum of 14 days and then for 3 months in aging rooms. Papillon Roquefort is aged initially for at least 21 days and then for an additional minimum of 5 months. They take the extra time to develop a version of AOP Roquefort that goes beyond others on the market. From Dalmatia with Love Neb Chupin was born and grew up in the Vodice, a small town in Croatia. More specifically, it is located on the Dalmatian coasts of the Mediterranaena Sea. He had a special connection with his grandfather, and together they worked the vast olive fields and fig groves. They picked and ate the freshest fruits and sour cherries together every summer, but eventually Neb left the Dalmatian costal town for the city to study engineering. It was in Zagreb, Croatia, that Neb met Maia Magee, a classical singer from Massachusetts. They fell in love, but the story is far from over. After listening to Neb’s fond reminiscing about his childhood and the vibrant coastal experiences and food, Maira became inspired. Just like Neb, most of the younger generations had flocked to cities to pursuits besides agriculture. The groves and fields that Neb used to work with his grandfather had fallen in to neglect, but Maia’s idea was to go back to his roots! Together, they decided to bring the authentic Croatian products of Neb’s childhood to the United States. At first it was extremely challenging. Normal consumers had no idea what a fig was, let alone how they should use a fig spread. fior d’arancio Fior d’Arancio is inspired by the cheese making oral traditions passed down from one Venetian farmer to another. During World War I, Italian farmers would try to hide their food and cheese from invading Austrian soldiers. One of the spots they chose was inside empty wine barrels. After the soldiers left, the farmers took their cheese wheels out of the barrels to find them sweeter in flavor with the outer rind tinted by the wine. It was through this story that cheesemaker Sergio Moro got the inspiration to create a wine-soaked cheese. He had already transformed what his grandfather started as a small dairy farm into a factory specializing in the production of farmstead cheeses. The cheeses made were guided by the same principles as were passed down from previous generations. Sergio started with trying to find the perfect wine to wed with a blue cheese. Fior d’arancio translates to the “orange flower,” which is also the name of the sweet dessert wine used to make this cheese. Made with 100 percent yellow Moscato grapes, Fior d’Arancio wine has a DOCG (Denominazione di Origine Controllata e Garantita) designation and is made locally to the Moro Formaggi. This wine stood out because of its beautiful golden color and intense aromas of lemon, tangerine and white peach. With such a strong, sweet and citrus flavor profile, the blue cheese does not have an overly funky or off-putting odoor that many other washed rind cheeses develop over

time. It smells fresh, fragrant and floral, creating a beautiful sensory experience when eaten. After selecting the perfect wine, Sergio set to work on making his farmstead blue cheese. Using milk from both Alpine Brown and D’Oropa cows, both of which have great butterfat and protein content for cheese production. While the actual process itself is a closely guarded secret, the basics are straightforward: after the wheel takes shape and the blue mold cultures are added, holes are drilled into the wheel. Fior d’Arancio wine is then poured over the top of the wheels and wrapped in linen cloths. Through osmosis, the cheese absorbs the perfume and aroma of the wine while aging on wooden planks for 30 days. They are then topped with glacé orange peels for additional flavor and aroma. The flavor and texture created in the cheese are unlike any other blue available. It has strong citrus and fruit aromas in addition to those of honey and wildflowers. Fior d’Arancio is creamy and slightly crumbly when cut. It has the subtle tang normally found in blue cheese, yet it is balanced with the freshness and sweetness from being steeped in a Moscato. Unlike any other blue cheese out there, this is a perfect dessert cheese or stand-alone star. The crumbly texture also work well in recipes, but this cheese is so good you’ll want it all on its own. Emmi Kaltbach Cave Aged Emmi Kaltbach cheese is made in a time honored tradition by master affineiurs in the sandstone caves of Switzerland. Both of these cheeses meet AOP standards, all of the milk that is used to make these cheeses is from cows that are grass fed in the summer and natural forage fed in the winter. After it meets standard quality checks, this milk eventually is molded, pressed and brined for 24 hours. After this point the cheese is aged for 3 months. This is the standard process for Le Gruyere AOP cheese, however Emmi goes many steps beyond that. They will inspect the wheels after having aged for 3 months to decide which are the most in line with their affineurs exacting standards. From a small pool of Le Gruyere makers, they pick the wheels which are then transferred to sandstone caves for additional aging. The caves are a perfect temperature and humidity to continue aging for as long as necessary to reach the ideal characteristics. SW--065
