It’s that day again—March 14—where math enthusiasts and pie lovers unite over a day celebrating both, Pi Day! Pi (represented by the Greek symbol π) is the ratio between the diameter and circumference of a circle. Pi, an irrational, never ending number, is often abbreviated to the first three digits, 3.14, making March 14 the perfect day to celebrate the world’s finest circular delicacy.
National Pi Day was founded in 1988 by American physicist Larry Shaw. The first Pi Day celebration occurred at the Exploratorium—a San Francisco interactive science museum at which Shaw worked. The celebration rightfully included a circular parade and eating of pies which contines to be held at the Exploratorium to this day. Pi Day became a national holiday on March 12, 2009. Coincidentally, Pi Day also happens to be Albert Einstein’s birthday.

Stir in cooked onion.

Melt butter in a small nonstick pan and cook onion until soft. Let cool slightly.
Pour filling into pie crust, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.

TOPPING •
8 ounces Vermont Creamery Crème Fraîche
Place flour in large bowl and add salt. Stir to combine. Add butter and using a fork or hand held dough blender, cut the butter into the flour, gently stirring to ensure every crumb of butter is pea size and coated in flour. STEP 3 Once butter is combined, add in ice water one tablespoon at a time, mixing until dough begins to take shape. Gently knead with your fingers to help bring dough together. If needed add additional water a little at a time. STEP 4
STEP 6 Gently spoon berries into the center of the dough, leaving about an inch boarder around the edge. Fold the bare edge of dough inwards on top of the berries, working around the entire circle. STEP 7 Bake for 45-55 minutes or until the crust is golden and the berry mixture bubbles a little. STEP 8 Serve with a dollop of cool crème fraîche.
Once dough is formed, shape into disk and roll on a piece of parchment to a uniform thickness of ¼ inch. Rolled dough should be roughly round. MARCH 2020 | 9

o celebrate St. Patrick’s Day, we are sharing the best products that the Emerald Isle has to offer! With a high amount of annual rainfall and a temperate climate, Ireland’s lush green pastures on which dairy cows graze lend to the silky richness and creamy taste of Irish dairy products. The production of dairy in Ireland began 6,000 years ago. Researchers from the University of Bristol have discovered Neolithic pots on the island that had traces of ancient dairy fats aging back to almost 4,000 BC. Artisan cheese-making was a Gaelic tradition that eventually disappeared from Ireland until the late 1970s. It was in the southwest of Ireland that cheesemaker Veronica Steele kick-started the renaissance. She pioneered the Irish artisan cheese industry with production of Milleens, an award-winning, washed orange rind cheese. Today, Ireland is recognized as the global leader in the dairy sector in terms of safety, sustainability and traceability and Irish dairy farmers produce over 7.5 billion liters of milk annually. Irish dairy products are known for their unique taste. BLOOM WITH BRIE Established in 1981, Fromagerie Guilloteau has been producing an array of specialty soft-ripened cheeses using the ultrafiltration process. Today, they are one of France's leading cheese producers.
The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau’s now signature cheese, Pavé d’Affinois, was born using the ultrafiltration process. Guilloteau then went on to start his own company, Fromagerie Guilloteau in 1981 with a focus on producing an expanding line of top-quality cheeses made exclusively with the ultrafiltration process. Ultrafiltration is a special industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose and mineral salts. Because it retains the milk’s soluble proteins, ultrafiltration significantly increases the yield that can be used for cheese, as well as allows every step of the cheesemaking process to be quicker. Eliminated when traditional techniques are used, mineral salts are also retained in ultrafiltration, making the Fromager d’Affinois (and all Guilloteau cheeses) two to four times richer in calcium than a Brie or Camebert cheese. As the company continued to strive towards success, Fromagerie Guilloteau was awarded the French Quality Prize by the Mouvement Français pour la Qualité (MFQ – French Quality Movement) in 1996. Today, Guilloteau has two production sites in France, and still sets the industry standard for ultra-filtrated soft-ripened cheeses. They work in partnership with over 100 local milk producers with an average heard of around 50 cows. 25 million liters of milk is collected per year from Montbéliardes and Prim’Holstein Montbéliarde is a breed of red pied dairy cattle from the mountainous regions of France. These breeds are known for their high-quality milk that is rich and proteins and ideal for cheesemaking. This protein-rich milk makes for the creamy and flavorful cheese that Fromagerie Guilloteau is known for. Fromagerie Guilloteau currently produces a range of cheeses under the brands Fromager d’Affinois, Pavé d’Affinois, and St. Angel. They fresh milk used from local French farms is never more than 24 to 72 hours old, adding even more value (and flavor!) to the many advantages that come from ultrafiltration. Their even, creamy textures, delicate unique tastes, and very fine rinds must be tasted to be truly valued.

Sunblush tomato and Fromager d’Affinois Garlic and Herb cheese cromesquis
Total Time: 30 minutes Makes: 6 servings INGREDIENTS • 250g of Fromage d’affinois Garlic and Herb Cheese • 2 ounces of sunblush tomatoes • 1 ounce of pine nuts • 2 eggs • 1 cup of flour • 1 cup of breadcrumbs • 1 liter of frying oil • Salt/pepper
METHOD: • Finely dice the sunblush tomatoes and coarsely chop the pine nuts. • • Mash the cheese in a mixing bowl with a fork and blend in the diced tomatoes and pine nuts. • • Roll the mixture into small 10g balls. FOR THE BREADCRUMB COATING: • Break the eggs into a basin, season with salt/pepper and lightly whisk. • • Pour the flour into one bowl and the breadcrumbs into another. • • Roll the cheese ball first in the flour, then the egg mixture and finally into the breadcrumbs. • • Repeat the operation with just the egg mixture and breadcrumbs. • • Repeat the whole process for each ball. • • Heat the oil to 170°C and fry the Cromesquis for 30 seconds to 1 minute.
