A perfect salty and savory combination loved by many across the world, chips and dip go hand in hand to create the ultimate snack or party faire. Whether you enjoy a cool and creamy dip, a vegetable packed salsa, a chunky and spicy guacamole or a hot and oozy queso dip to die for, there’s a dip for every chip and a chip for every dip. This March 23rd we celebrate National Chips & Dip day to honor our go-to snack.

The infamous potato chip was not invented until 1853 by a cook named George Crum (also known as George Speck) an African American chef who worked at Moon’s Lake House in Saratoga Springs, New York. According to the popular Saratoga legend, the chip was first invented when a picky patron sent back an order of French fries complaining they were too thick to enjoy. Annoyed with the customer’s request and criticism, Crum sliced a batch of potatoes paper-thin, fried them in oil to a hard crisp, incapable of being pierced with a fork without shattering, and sprinkled them with salt. To his surprise, the customer was elated with this new, thin potato creation and thus the potato chip was born. Crum’s new snack and Moon’s Lake House soon became well known for their one-of-a-kind “Saratoga Chips” Thanks to Mr. Crum, companies have developed hundreds of different variations of America’s all-time favorite snack. New England Warm Lobster Dip INGREDIENTS BASE DIP 14 ounces evaporated milk 1 can

INGREDIENTS

Whisk the cornstarch into the evaporated milk until combined. Pour the milk mixture into a pan and cook on medium heat stirring often until it comes to a simmer and thickens. Remove from heat and add the cheese to the pan. Stir to combine until the cheese is melted.

1 cup base cheese dip

Preheat oven to 350. Put the dip base into a oven safe dish along with some of the lobster, and chives, and all the butter, and truffle. Bake for 15 minutes until warmed throughout.

Spicy Roasted Pepper Dip DIRECTIONS STEP 1 Cut onion in half and mince one half. Set aside.

2-4 jalapeno peppers, seeded, deveined,

Warm oil in a small saucepan over medium heat. Add 2/3 of minced jalapeno and grate 1/2 onion into pan. Stir to coat and cook for 3-5 minutes until tender. Add cream and bring to a bubble. Add cheese a little at a time, stir until cheese is melted. Stir in 1 tablespoon cilantro.

STEP 3 To create a simple pico de gallo: Combine chopped onion, tomato, 1/2 tablespoon cilantro, and remaining jalapeno in a bowl.

STEP 4 Pour queso blanco into a medium size serving bowl (2 ½ cup or larger). Top with pico de gallo. Serve and enjoy

A long tradition of unsurpassed quality BURNETT DAIRY COOPERATIVE HAS BEEN FARMER OWNED FOR 125 YEARS. Founded in 1896, Burnett Dairy Cooperative is one of the only remaining full-service agricultural cooperatives producing cheese. Generations of dedicated farm families have built our legacy. Today we are owned by nearly 200 dedicated local farmers who provide their milk to make the finest cheeses. Burnett Dairy Cooperative has its roots in the Branstad (1897) and Wood River (1896) creameries, located in northwest Wisconsin, which boast a long tradition of serving dairy producers. In the 1960s, the two creameries merged and formed Burnett Dairy Cooperative at the Alpha location (named after its Alpha De Laval cream separator). They focused on Mozzarella and Provolone at first and then expanded into Cheddars and more innovation fusions. In 2013, Burnett Dairy Cooperative acquired the Cady Cheese Factory in Wilson, WI. Cady Cheese has a great history of cheesemaking going back to the early 1900s, with the first known cheesemaker hired in 1908. With this acquisition came a strengthening of cheesemaking experience for traditional longhorn cheeses and a shared passion for artisan specialty cheeses and fusions. 1 12-inch pizza crust — premade or homemade 1 tbsp butter 1 large onion, thinly sliced 1/2 tsp each salt and pepper, divided 3 tbsp olive oil, divided 4 cups loosely packed chopped kale leaves 3 cloves garlic, minced 2 tsp lemon zest 4 tsp finely chopped fresh rosemary 6 slices bacon, cooked and crumbled 1 1/4 cups Wood River Creamery Original, shredded 4 tsp finely chopped fresh chives

3 tbsp butter 1 onion, finely chopped 2 cloves garlic, minced 2 cups 35% heavy cream 1 sprig each fresh thyme and rosemary 3 bay leaves 1/2 tsp each salt and pepper 1/4 tsp ground nutmeg 3 lbs Yukon Gold potatoes, thinly sliced 2 cups Wood River Creamery Herbes de Provence, shredded 2 tbsp finely chopped fresh parsley

DIRECTIONS Melt butter in a skillet set over medium heat; cook onion and 1/4 tsp salt and pepper for 5 to 8 minutes or until slightly browned. Reduce heat to low; cook for 20 to 25 minutes or until golden brown. Let cool. Heat 4 tsp of the oil in a skillet set over mediumhigh heat; sauté kale, garlic, lemon zest, and remaining salt and pepper for 3 to 5 minutes or until wilted. Let cool. Preheat oven to 500°F. Place pizza crust on a lightly greased 12-inch pizza pan. Brush the pizza crust with remaining oil and sprinkle with rosemary. Scatter caramelized onion, kale mixture, and bacon over the top. Sprinkle with cheese. Bake until crust is golden brown and cheese is bubbling, 15 to 20 minutes. Garnish with chives.

DIRECTIONS Preheat oven to 400°F. Melt butter in a saucepan set over medium heat; cook onion and garlic for 3 to 5 minutes or until softened. Pour in cream; stir in thyme, rosemary, bay leaves, salt, pepper, and nutmeg. Bring to simmer, stirring often. Remove from heat; cover, and let stand for 10 minutes. Remove and discard bay leaves, thyme, and rosemary sprigs. Arrange one-third of the potatoes in greased 9x13 inch casserole. Spoon one-third of the cream mixture over the top and sprinkle with one-third of the cheese. Repeat layers twice. Cover with parchment paper and foil; bake for 45 minutes. Remove foil and parchment paper. Bake for 30 to 35 minutes or until potatoes are tender, cheese is bubbling and golden, and most of the liquid is absorbed. Let stand for 15 minutes. Sprinkle with parsley.
