Face Rock Cheese Curds
After enzymes have been added to fresh milk and allowed to set up, the whey is drained off leaving beautiful fresh curds behind. It is these curds that are then pressed together to make cheese. Curds are super fresh since they have not been subject to the intense pressing and aging that a final block or wheel of cheddar will receive. They don’t last long, but they don’t need to, they’re addicting! Enjoy them as a snack, battered and fried, chopped up and mixed in to soup or in the classic dish poutine. From the Black Dirt Region
Settled in Goshen, the Heart of Onion Country For a long time, Alan Glustoff dreamed of making cheese. As a college student, he paid his way by organizing a travel agency for his peers. Traveling around Europe back in the day, visiting the country’s we would consider the old world cheese masters, Alan’s passion for cheese ignited. “Like many of the people you meet,” Alan described to us in the spotless workroom of their Goshen, New York cheese making site, “I always had a fascination with cheese.” After spending a long career as a food chemist in dairy development, Alan and his wife Barbara decided to take the plunge. They searched for a long time to find the right space and eventually came upon the old farm in the heart of New York State’s Black Dirt region. Black Dirt runs for miles and it’s prehistoric. People search for Indain relics and dinosaur bones in the area; the soil is so rich it's black, with an almost volcanic look. The Glustoff's live just 50 feet from the old barn and cheese make site, with black dirt stretching out to the hoirzon behind them. They are honored to continue the dairy farming tradition at their farmhouse,which is over 110 years old. All of the updates and rennovations to the classic farmhouse was done themselves. "It was really hard," Barbara explained of designing their custom designed underground aging room. "There's no blue print for making an aging room." Contractors kept coming back to them with designs that were totally off the mark, but they persisted. Their hard work paid off with two beautiful aging rooms. When we visited 5 Spoke Creamery, we were really visiting their home, and the Glustoff's welcomed us with open arms (and a delicious homemade lunch). Their open nature and hospitality rings through to their cheese, as well. Going a step further than FDA regulations require, they test every single batch of cheese to make sure it meets their exacting high quality. In addition, they have also installed their own solar panels and now run their cheese making on 100 percent solar energy.

Handmade in Small Batches Every batch of cheese gets close attention at 5 Spoke Creamery. Everything is made in small batches by Alan himself. They just recently added one cheese maker to the team, allowing them to increase production, but they still keep things artisanal. One vat of milk produces 15 blocks of their cheddar-style cheeses.

Using Only Raw Milk Like many artisanal producers, Alan and Barbara believe that great cheese starts with great milk. For them, that means raw. The milk they use comes from their neighbors and a partnership with Stone Barns in Westchester, New York, which is actually on the former Rockefeller Estate. The cows are pastured and free to roam, choosing from a variety of grasses, herbs, flowers and weeds from which to eat. Whenever milk comes in they put it through rigorous testing to ensure it is free from any type of antibiotics or hormones. After the initial testing, they immediately begin to make cheese for the day. There is no prolonged storage for this milk; it really is as fresh as can be! The best thing about using raw milk is the depth of flavor that emerges in the final product. Terroir is a connection to place which comes through loud and clear in unpasteurized cheese. You get notes of the land, grassy, earthy flavors and aromas, which are sterilized out in big-batch pasturized cheese production. The philosophy of sticking with raw milk stems from the old-world style of cheese production which initially sparked Alan's passion for cheese. European producers believe that if you keep a careful eye on the cows, that there is no need to pasteurize the milk. Their track record may speak for itself, with centuries of cheese making.

“Farming the way it used to be.” Kindred Creamery believes in doing the right thing for farmers, families and animals. Their products are delicious and packed with flavor, but for the Meister Cheese Company, which makes Kindred cheeses, it goes way beyond taste. They actually developed the Cows First Program, which is employed by the over 208 farms which supply the over 156 million pounds of milk used to make all of their cheeses.

Clean milk comes from cows who are allowed to graze, who have a clean, spacious environment to call home, who aren't treated with hormones and are fed good food. To Kindred, it’s pretty simple: treating animals right is just the right thing to do. Cows treated well produce the highest quality milk.
“Kindred cow’s have unfettered access to the outdoors, what we call a driftless area.” The above map shows the driftless area where Kindred Creamery cows are allowed to roam free. According to their Cow's First program, they believe that cow's should be able to enjoy nature as much as possible. Cow's should be free to graze in pastures and given room to roam in an outdoor setting. When indoors, cows should be kept comfortable and healthy with appropriate bedding in clean stalls that are well ventilated.

The flavors of grass, nuts and rusticity come out, but this varies throughout the year depending on whether the milk is coming from cows eating winter hay or fresh summer grass. Biscuiterie de l’Abbaye The origins of the Sable date back to 18th century Normandy, when it was defined as a “much sought after type of confectionary which crumbles like a biscuit when eaten.” Georges Lautour, a baker in Lonlay l’Abbaye, was forced away during the Second World War. Upon his return, he decided that he would begin making his own Sable to bring back the recipe that was put on hold. His wife added to the recipe and that was how Abbay Sable was born. Word of this delicious Normandy delicacy spread quickly throughout the region and it was hard for Georges to keep up with the demand. He decided to join forces with his son and son-in-law, creating what is now Biscuiterie de l’Abbaye. In 1964, they received a blue ribbon (recognition of the quality and originality of their product) for the Abbey Sable. This quality, has been the driving force behind the development of Abbey’s original recipe, the Sable, along with all of their other cookies and biscuits. Today, Biscuiterie de l’Abbaye is run by the children of Georges Lautour; it is still a 100 percent family owned business.
