Brunch! Celebrate Mother's Day and National Mimosa Day with shareable brunch bites

Everyone's favorite part of the weekend, brunch! It all began in 1895 when Guy Beringer, an English writer, wrote an essay entitled "Brunch: A Plea." The essay argued that Sunday mornings were meant to sleep in and then meet up with friends. He discussed how brunch would prepare one for the stressful work week ahead and how Sunday brunch would be more enjoyable than the typical eggs and bacon one was accustomed to. He envisioned a lighter meal with a variety of pastries and noted that "beer and whisky are admitted as substitutes for tea and coffee." Fast forward almost 125 years later and brunch is exactly what Guy had wanted it to be, a beloved social gathering of friends and family, where one could discuss the festivities of the previous night and wipe away the worries of the week to come. In honor of National Mimosa Day on May 16th, we present a variety of delicious shareable bites to enjoy at your next brunch gathering. HISTORY OF THE MIMOSA There are a few theories as to where this brunch favorite may have originated from. It has been said to have been discovered by French Bartender Frank Meier at the Ritz Bar in Paris in 1925. Another theory states that it was actually discovered four years prior in 1921. A popular drink called Buck's Fizz was created at the Buck's Club in London and was made using champagne and orange juice.

Slice eggs lengthwise, remove yolks, and place yolks in a medium bowl. Fill a 1 quart container with water and add 1 oz of liquid smoke. Place the egg whites in the water mixture and refrigerate for 4 hours. Mash the yolks into a fine crumble using a fork. Add PsycheDillic, mayonnaise, vinegar, mustard, salt, and pepper. Mix well and refrigerate until the egg whites are ready. Remove the whites and place on a towel to dry off. Fill each egg white half with 1 Tbs of the yolk mixture. Sprinkle with smoked paprika and garnish with dill.

bag of Asturi Bruschettini (any flavor) 1 lb whipped cream cheese 1 bunch fresh dill 1/2 thinly sliced smoked salmon 2 tbsp capers Start by mixing the whipped cream cheese with fresh dill and capers Spread the mix on each Bruschettini Place the thinly sliced smoked salmon on top and serve. Perfect appetizer to get the party started!

GRILLING CHEESE & PEACH TOAST WITH FRESH MINT AND HONEY

1 large, ripe peach, pitted and sliced in half 1 tsp olive oil 2 Rougette Bon•fire Grilling Cheeses 4 slices multigrain bread 1 tbsp honey 2 tsps fresh mint leaves, minced Preheat grill to medium high heat. Brush the cut sides of each peach half with olive oil. Pierce each cheese with fork 3 times on both sides and place on hot grill. Place peach halves on grill, cut side down. Grill cheese and peaches over medium high heat for 4 minutes. After 4 minutes, use tongs to turn over cheese. Continue grilling on second side for another 4 minutes. Remove peaches and cheese from grill. Transfer to a cutting board and allow to cool for five minutes before handling. While peaches and cheese are cooling, reduce heat to medium and place bread slices on grill. Grill bread for 1 minute or until toasted with grill marks. Turn bread over and toast on second side for one minute more. Remove bread from grill. Slice each peach half into 8 thin wedges, for 16 total wedges of peach. Slice each cheese round into 8 thin strips. Arrange peach slices and cheese strips on each slice of toast in an alternating pattern. Drizzle each slice with honey and sprinkle with fresh mint. Cut each slice of toast in half and serve at once.

Long before the days of Taco Tuesday, taco trucks and Taco Bell, there were Mexican silver mines. Historian Jeffrey M. Pilcher, professor of history for the University of Minnesota, has researched the origins of the famous Mexican cuisine and has discovered that tacos haven't been around as long as people may think. The taco is not this age old cultural food dating back to the Aztecs, but rather to some time in the 19th century. According to Pilcher, the word "taco" originated from the silver mines as miners would use the word "taco" to refer to the mini explosives miners used to extract the ore in mines in the form of little pieces of papers they would wrap around gunpowder. The first type of taco was the "tacos de minero" which translates to "miner's tacos" and have you ever noticed how a taquito with hot sauce resembles a stick of dynamite?

Soon after the discovery of the taco came the "taquerias" (taco shops) which have since become an important component of workingclass neighborhoods and symbolic to the Mexican street food culture. Today, across the world people everywhere are enjoying tacos. The U.S alone consumes 4.5 billion tacos a year! With so many different toppings and flavors there's only one way to get your fiesta on this Cinco de Mayo, taco-bout awesome!

VEGGIE OAXACA QUESADILLA

LE ROULE PINEAPPLE AND FISH TACOS

3/4 cup Rizo Bros Oaxaca Queso, pulled tortillas, flour or corn 2 1/2 cup of fresh veggies, diced salsa or sour cream to top, optional

Heat non-stick skillet to medium. Add 1 tortilla to pan. Top tortilla with ¾ cup pulled Rizo Bros Oaxaca Queso until distributed evenly, covering tortilla. Sprinkle diced veggies on top of Rizo Bros Oaxaca Queso. Place second tortilla on top of queso & veggies, sandwiching the ingredients. Let cook for 1-2 minutes or until the tortilla begins to lightly browned. Flip entire quesadilla and cook opposite side for 1-2 minutes or until lightly browned. Reduce heat to low and cook until cheese is fully melted. Remove from heat, slice into 6 triangles, and enjoy!

Preheat oven to 375F. Lightly oil a baking sheet and place fish fillets on top. Season with salt, pepper, and add one tablespoon of lime juice on top. Place in the oven for 10-12 minutes or until flaky. Set aside. In a medium-size bowl, combine pineapple, red onion, cilantro, 2 tablespoon lime juice, and gently toss.
