Having a blast on National Pizza Party Day is no pie-in-the-sky idea. Pizza’s the very definition of a good time and your May 21st options are plentiful. Since it’s currently unknown who invented National Pizza Party Day, we thought that we’d do a deep-dive into the history of pizza itself. Although not everyone may realize it, pizza is actually a storied food that’s been around for a very long time indeed. Although mainly thought of as an Italian dish, pizza has seemingly existed forever. The ancient Greeks used to flavor their flatbread with oils, herbs, and cheese, while Persian soldiers used to bake their own pizzas on the hot surfaces of
their shields. Traditional pizza is also known as Neapolitan pizza, and it originates—as the name suggests—from Naples, around the middle of the 16th century. Italian immigrants later introduced the dish to their new American compatriots, and eventually, pizza became the savory crowd-pleaser we know it to be today. In 1905 pizza found its way to America in a little pizzeria in Little Italy in New York City. Although there wasn’t a lot of demand for pizza from the early 1900s to the late 1930s, World War II eventually changed that fact. That’s because returning U.S GI soldiers who were stationed in Italy and got a chance to taste the local cuisine brought their newfound love of pizza with them. The rest is, as they say, history and now pizza parlors can be found all over the U.S.

so much history behind this incredible dish, it’s not surprising that it finally got its own holiday. Get creative this National Pizza Party Day. BACON, KALE AND CARAMELIZED ONION PIZZA
INGREDIENTS
1 3/4 cups all-purpose flour
3/4 cup warm water (approx. 105°F to 115°F) 1 1/4 tsp instant active dry yeast 1 tsp granulated sugar 1 tbsp olive oil 1 tsp salt TOPPINGS 1 tbsp butter 1 large onion, thinly sliced 1/2 tsp each salt and pepper, divided 3 tbsp olive oil, divided 4 cups loosely packed chopped kale leaves 3 cloves garlic, minced 2 tsp lemon zest 4 tsp finely chopped fresh rosemary 6 slices bacon, cooked and crumbled 1 1/4 cups shredded Wood River Creamery™ Original cheese 4 tsp finely chopped fresh chives

PREPARATION Dough In a bowl, stir together 1/4 cup flour, warm water, yeast and sugar; let stand for 5 to 10 minutes or until mixture starts to look bubbly and frothy. Using wooden spoon, stir in olive oil, remaining flour and salt to make loose dough. Transfer to lightly floured surface; knead for 10 to 15 minutes, adding flour as needed, to make soft, elastic, and slightly sticky dough. Form dough into ball; transfer to lightly greased bowl. Brush top of dough lightly with oil; cover with wet kitchen towel. Let stand in warm spot for about 2 hours or until doubled in size. Punch down dough; transfer to airtight container or resealable plastic bag. Refrigerate overnight; let stand at room temperature for 2 hours. Toppings Melt butter in skillet set over medium heat; cook onion, and 1/4 tsp salt and pepper for 5 to 8 minutes or until slightly browned. Reduce heat to low; cook for 20 to 25 minutes or until golden brown. Let cool completely. Heat 4 tsp of the oil in skillet set over medium-high heat; sauté kale, garlic, lemon zest, and remaining salt and pepper for 3 to 5 minutes or until wilted. Let cool completely. Pizza Assembly Preheat oven to 500˚F. On lightly floured surface, roll out dough into 8-inch round. Using hands, stretch dough into 12-inch round, about 1/4-inch thick. Transfer to lightly greased 12-inch pizza pan. Brush dough with remaining oil and sprinkle with rosemary. Scatter caramelized onion, kale mixture and bacon over top. Sprinkle with cheese. Bake until crust is golden brown and cheese is bubbling, 15 to 20 minutes. Garnish with chives.

Preheat oven to 400* F Dust wooden cutting board with flour or semolina flour For fresh pizza dough, spread pizza dough on flour board to desired thickness and diameter Set a medium cast iron skillet on range to medium-high heat Add drained and dried corn kernels to pan without any oil or fat Cook stirring occasionally until exterior of corn kernels are turning lightly brown Add 1 tbsp butter to pan and stir about 30 seconds Promptly remove corn from pan to avoid burning the butter Line nonstick cookie sheet with tin foil and brush foil lightly with olive or cooking oil Lay dough flat on sheet and adjust to desired size or diameter Spread desired amount of pizza sauce on dough and add shredded Oaxaca cheese Top pizza with corn Bake in oven about 10-12 minutes or until crust is crispy and golden and cheese is bubbly and evenly melted Remove pizza from cookie sheet to previously dusted cutting board, cut and garnish with red onion, a drizzle of crema, cilantro, spicy cotija, and a dusting of paprika.

The Wisconsin Milk Marketing Board, Inc., dba Dairy Farmers of Wisconsin, is a non-profit organization funded entirely by Wisconsin's dairy farm families. The organization has been created to increase the sale and consumption of Wisconsin milk and dairy products. In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsinproduced dairy products.
