If someone asked you what a fig is, chances are you'll most likely say its a fruit, right? Technically you're not far off, but the truth is that figs aren't actually a fruit, they are inverted flowers. Fruit or not, it is no wonder why the fig has its own week. Figs are an amazing source of essential minerals such as magnesium, calcium, potassium, copper and vitamins K and B6. Together, these amalgamations have the capacity to hinder kidney and liver problems, regulate blood sugar levels, prevent macular degeneration and high blood pressure, assist in weight loss and protect the heart. Figs are among the oldest nourishments consumed by humans and are in fact mentioned often in the Bible. Their most famous mention was in the story of Creation. It is written that when Adam and Eve left the Garden of Eden they used fig leaves to cover themselves with. Some scholars have gone as far as to argue that the forbidden fruit was actually a fig and not an apple. In Ancient
Greece, dried figs were an important part of the daily diet like olives and wine. In Greek legend, figs are associated with Demeter, the Greek goddess of agriculture and fertility. The fig was referred to as the "fruit of the gods" and used as training food by early Olympic athletes. Ancient Olympian winners also received figs as the first Olympic medals. Figs have been viewed as symbols of peace and prosperity, but they are also a symbol of the fall harvest. Figs are in season in early June and then from August through October. Don't miss out on this year's National Fig Week, which runs from November 1st to 7th. Fig & Balsamic Pork Tenderloin

Caveman Blue with Honey Bourbon Grilled Figs
12 Figs, green or black 12 Rosemary sprigs, 6" long 3 tablespoons of butter and honey 1 1/2 teaspoon of lemon juice 1 tablespoon of bourbon or brandy Pinch of salt 6 oz. Rogue Caveman Blue, cut into 4 wedges
Prep Time: 10 minutes Cook Time: 30 Minutes
1-1/2 pound pork tenderloin or pork loin fillet 1 6 ounce jar of Dalmatia Fig and Orange Spread 2 tablespoons of balsamic vinegar

2 teaspoons of mustard
Strip the leaves from the bottom 5” of rosemary sprigs. Cut the tip of each at a 45 degree angle, forming a point. Soak rosemary skewers in a shallow dish of water. Set aside.

Preheat oven to 425°F. Arrange pork in 13 x 9-inch metal roasting pan. Season with salt and ground black pepper. Roast 15 minutes.
In a small skillet, melt butter over medium heat. When melted, add honey and stir to combine. When mixture reaches gentle boil, add lemon juice, bourbon and 6 rosemary leaves, stirring constantly. Mixture will foam and froth. Cook, stirring constantly, for one minute. Keep warm over lowest heat setting until needed.
Meanwhile, blend Fig Spread, vinegar and mustard in small bowl. Pour half of mixture over pork and continue roasting for an additional 10 minutes. Pour remaining fig mixture over pork and roast 5 minutes or until desired.
Cut figs in half from stem to bottom. Push two figs onto each rosemary skewer. Dip each fig skewer into the honey-butter mixture. Grill figs over medium-low heat for 3-5 minutes until warmed through. Use a grill basket for best results.
Remove pork to cutting board and loosely tent with aluminum foil. Let rest 10 minutes before slicing. Slice and serve with reserved drippings if desired.
Top figs with crumbled Caveman Blue cheese and drizzle with remaining sauce. Serve as an appetizer or side dish for a main course.

Fresh Fig Crostata Directions
On a lightly floured surface, lay out the pie dough. Transfer to a parchment paper– lined baking sheet and refrigerate for 30 minutes.

Preheat the oven to 375°. In a bowl, toss in the figs with 3 teaspoons of the honey, 6 oz of Fromager d’Affinois with truffles, lemon juice, thyme leaves and a pinch of salt. Arrange the bowl ingredients on the dough, leaving a 1/2-inch border all around. Fold the edges over the figs and brush the dough with the egg wash. Chill for 30 minutes.

Bake the crostatas for 35 minutes, rotating halfway through baking, until the crusts are golden. Let stand for 10 minutes.

1 pound prepared pizza dough
1 cup of ricotta cheese
1 tablespoon chopped fresh thyme
2 bags of Asturi Black and Green Olive Bruschettini
8 figs, quartered 1/2 red onion, diced
2 tablespoons of honey
2 cloves garlic, thinly sliced
1/4 cup of chopped walnuts
1/4 teaspoon coarse sea salt
Directions
1/4 teaspoon ground black pepper
Spread out bruschettini slices on plate or pan.
Directions
Top each slice with ricotta cheese, then add chopped walnuts. Cover each with a dollop of honey and top with fig slices.
Spread 1 tablespoon of the oil on a baking sheet. Place dough in the middle, turn it to coat with oil and press out evenly. Cover the focaccia lightly with either a towel and allow it to rest for about 45 minutes.
Serve on a platter or wood cutting board for the perfect appetizer.
Add 2 tablespoons of olive oil in the bottom of a 10-1/2 inch metal pan, take the dough and press it evenly in the bottom of the pan. In the center of the dough add 6 ounces of Campo de Montalban. Top the remainder of the dough with figs, red onion and garlic and press into the dough. Coat with thyme, sea salt and ground pepper.

In a large sauté pan, heat the olive oil over medium high heat for about 1 minute. Working in batches, sear the chorizo and garlic for 2-3 minutes, turning the sausage once during cooking and then setting the sausage aside. Place the figs in a medium saucepan with the vinegars, brown sugar, water and cinnamon. Bring to a simmer over medium heat and cook for about 10 minutes, adjusting the heat up or down to maintain the simmer. Divide the chorizo among 6 bowls. Pour the figs and the pan sauce over the chorizo and serve piping hot.
