A LONG TRADITION OF UNSURPASSED QUALITY Burnett Dairy Cooperative has its roots in the Branstad (1897) and Wood River (1896) creameries, located in northwest Wisconsin, which boast a long tradition of serving dairy producers. In the 1960s, the two creameries merged and formed Burnett Dairy Cooperative at the Alpha location (named after its Alpha De Laval cream separator) They focused on Mozzarella and Provolone at first and then expanded into Cheddars and more innovation fusions. In 2013, Burnett Dairy Cooperative acquired the Cady Cheese Factory in Wilson, WI. Cady Cheese has a great history of cheesemaking going back to the early 1900s, with the first known cheesemaker hired in 1908. With this acquisition came a strengthening of cheesemaking experience for traditional longhorn cheeses and a shared passion for artisan specialty cheeses . Today, Burnett Dairy produces cheese under two leading retail brands — Wood River Creamery (Cheddar Gruyere specialty line) and Cady Creek Farms (traditional and specialty longhorns and blocks).

THE SERGEANT PEPPER Sweet apple, smoked bacon and gooey cheese all smashed together between two slices of hearty bread. What more could you want?

INGREDIENTS 4 ounces Wood River Original Cheddar Gruyere 4 ounces Cady Creek Monterey Jack 2 tablespoons butter 1 head cauliflower, cut in small pieces Salt and pepper 1/2 cup flour 1/2 cup rice flour 2 tablespoons cornstarch 1 cup cold seltzer water (club soda) Vegetable oil for frying 2 yellow onions, thinly sliced

DIRECTIONS 1. Heat large sauté pan over high heat. Add butter and cauliflower; sauté on high until brown, stirring so cauliflower doesn’t burn. Season with salt and pepper; remove to plate lined with paper towels; drain. 2. For batter: Whisk together flours, cornstarch, and a pinch of salt and pepper. Whisk in cold seltzer water until smooth. (Water MUST be cold for tempura-type batter.) Store batter in the refrigerator until ready to fry. 3. Heat 3-4 inches vegetable oil to 350ºF in fryer or deep pan. Dip onion slices into the batter to cover and fry until golden brown. Drain on paper-towel-lined plates and season with salt and pepper. 4. Heat grill over medium. Drizzle one side of each slice of bread with a 1/2 tablespoon olive oil; place 4 slices, oil-side down, on grill (or use panini press). 5. Top each slice with Pepper Jack, cauliflower, fried onions, and a slice of Cheddar, in that order. Place remaining 4 bread slices on top of sandwiches, oilside up. Grill, turning once, until the bread is golden and the cheese is melted.

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969. lue cheese is the name given to cheeses that contain cultures of one or two types of blue mold: Penicillium roqueforti or Penicillium glaucum. These molds thrive in low oxygen environments and feed on milk proteins. Blue cheese is aged in temperature controlled environments, usually in caves. In order to get the veining that is characteristic of blue cheese, the cheese is needled purposefully by cheesemakers, so that the molds can spread into these crevices. Other types of blue cheeses are compacted in a way to leave air holes that allows the mold to travel inside.

It is thought that blue cheese was invented by accident, when a cheese maker had a little too much to drink and accidentally left a loaf of bread in a moist, dark cave. He returned a few weeks later to find that the mold had covered his bread, and the surrounding cheese. He decided to taste the moldy cheese and discovered a delicious dairy delicacy! There are three common types of blue cheese: Stilton, Gorgonzola, and Roquefort. Roquefort is a sheep's milk cheese known for its sharp, tangy flavor and creamy texture and is one of the oldest known cheeses. Gorgonzola is a cow's milk blue cheese produced in Northern Italy that has a robust and aromatic "funky" flavor. The first step to making blue cheese is to heat the milk then add starter culture. The starter culture causes the milk to separate into curds and whey. Then, mold spores are added--either Penicillium roqueforti or Penicillium glaucum--along with rennet. Once curds form, the cheese is pressed into the desired shape, salted, then left to dry. As it dries, the cheesemaker needles the cheese to allow the mold to travel into the cavities and create the signature veining. The cheese is left to age for the desired amount of time, on average about 2 months. The longer a blue cheese is aged, the more pungent the flavor. NOVEMBER 2021 | 42
