• Prep Time: 10 minutes • Cook Time: 12 minutes • Resting Time: 1 hour • Servings: 24 rolls Ingredients: • 5 cups all purpose flour • 2 tbsp rapid rise, instant yeast • 1/4 cup granulated sugar • 1 tsp salt • 1 1/2 cups warm milk • 6 tbsp ISIGNY SEA SALT BUTTER • 1 egg , room temperature • 3 tbsp melted butter

INSTRUCTIONS: 1. Mix 3 cups of flour, yeast, sugar, salt, warm milk, ISIGNY BAR SEA SALT butter, & egg in a medium bowl. Mix well. 2. Add 1/2 cup flour and blend until all mixed 4. Add another 1/2 cup flour and mix for a couple of minutes, form a ball of dough. 5. Add additional flour if it is necessary. The dough should be slightly sticky. 7. Place the dough in a lightly greased bowl and cover with towel. Let rise for 30 mins. 8. Remove the towel and deflate the dough by punching down softly. 10. Divide dough and form 24 rolls by shaping into balls. 11. Place rolls on lightly greased baking sheet. Cover with a towel and let rise 30 mins. 13. Preheat oven to 375 degrees. Bake rolls for 12-15 minutes or until golden brown. 14. Remove rolls and brush with the melted butter. Serve immediately or freeze for later use.

Ingredients: • 1 pound Baby Bella mushrooms • 1 tablespoon extra-virgin olive oil • 1 teaspoon kosher salt • Freshly ground black pepper • 2 tablespoons ISIGNY BAR SEA SALT butter • 4 large garlic cloves, minced •2 tablespoons of grate Parmesan •Chopped fresh Italian parsley

INSTRUCTIONS

1. Wash mushrooms and remove stems, place bottoms up on a baking sheet. 2. In a sautee pan, add a 2 tablespoonof butter, sautee garlic, salt, oil, and pepper and cook until soft, do not burn. 3. Scoop a teaspoon of the butter/ garlic mixture inside of mushroom tops. 4. Sprinkle parmesan cheese on top of the mushrooms. 5. Bake for 10-12 minutes, or until slightly browned. 6. Garnish with parsley and serve as a side dish or appetizer.

• Prep Time: 10 minutes • Cook Time: 25-34 minutes • Servings: 2-4 NOTE: Pan fry leftover polenta with olive oil by cutting into squares and browning in a sautee pan. Top withmore butter and cheese and serve. If the polenta is not thick enough, just add a tablespoon of polenta a little at a time to thicken as desired.

INSTRUCTIONS: Bring the water and milk to a boil in a medium sized pot. Slowly stir in the polenta into the pan while whisking at the same time to prevent lumps. Bring heat down to a slow simmer. Leave pot half covered to avoid overflowing and continue to cook 25-35 minutes or until it's thick and creamy. Stir stir often to prevent sticking to pot. When polenta is cooked remove from the heat and stir in the butter, cheese and more salt to taste if needed. Serve warm, sprinkled with additional cheese and garnish with parsley. Can be served as a meal or side dish.

• Prep Time: 20 minutes • Cook Time: 1.5-2 hours • Servings: 2-4 NOTE: To make gravy skim fat from roasting pan and thicken pan drippings with a tablespoon of flour for gravy (or more if needed. Serve gravy on the side with chicken.

INSTRUCTIONS: Preheat oven to 350°. Carefully loosen skin from chicken and rub 1/4 cup butter under skin. With toothpicks secure skin under chicken breast Place chicken in a roasting pan, breast side up in the oven. Pour broth around chicken. Brush chicken with remaining butter. Pour orange juice and wine into pan. Mix garlic, salt, pepper, parsely, thyme, and sage and sprinkle over chicken. Roast chicken until thermometer inserted in thickest part of the chicken reads 170°-175°F ( approximate time - 1.5 to 2 hours.) Cover with foil if needed to prevent burning. Once cooked remove chicken from oven and let stand covered with foil for 15 minutes before carving.
