he most popular drink of the season is often referred to as an iconic symbol that marks the beginning of Fall. But how and when did pumpkin spice become so popular?
One of the earliest references to pumpkin spice came in 1936 from a recipe in the Washington Post that was entitled " Spice Cake of Pumpkin Newest Dish: Delicacy Tempting to all Appetites and Easy to Prepare. Ideal Dessert for Family Dinner, Healthful for Children." Then around 15 years later companies like McCormick introduced a spice called "pumpkin pie spice" and in the 1960s it was simply referred to as OCTOBER 2019 | 10
"pumpkin spice." However is wasn't until 2003 when a basketball player from Stanford would turn the seasonal flavoring into a multi-million dollar industry. Peter Dukes started working in Starbucks in 2001 and in 2003 he was met with the task of creating a new branded espresso drink for the Fall. He believed that a pumpkin pie inspired latte was the best route and boy was he right. Starbucks first introduced their signature Fall beverage in 2003 and since then Starbucks has made over $1 billion dollars from Pumpkin Spice Latte sales alone.
Pumpkin Spice has become such a trend that from early September till October you can find just about anything pumpkin spice flavored. Just in the past few years we have seen pumpkin spiced cereal, ice cream, peanut butter, bagels, and even pudding.

The word pumpkin appeared for the first time in the fairy tale Cinderella.
Pumpkin Spice, or pumpkin pie spice, was a seasoning created out of the same ingredients used to make pumpkin pie. The ingredients include cinnamon, nutmeg, ginger, cloves and sometimes allspice, but it does not actually contain any pumpkin. Pumpkin itself is a cultivar of a squash plant with a rich and earthy flavor and an oozy texture. Over 1 billion pounds of pumpkin are produced in the U.S. every year, which is great for cooking because most parts of the pumpkin are edible. Pumpkin can be boiled,
steamed, roasted and baked, giving it many ways to be incorporated into a dish. Pumpkin is also rich in vitamins and minerals while being very low in calories. Although pumpkin has a sweet and earthy flavor making it delicious to eat on its own, the creamy consistency of goat cheese and its tangy taste make it an ideal pair. Even more pumpkin pie recipes are calling for the use of goat cheese in the
ingredients because it is a refreshing change to the sweet dessert we are accustomed to.

A Taste of Bavaria Ice-capped mountains are
interspersed with brilliant blue glacier lakes in the Allgäu, the region of southern Bavaria where Käserei Champignon collects milk and makes its traditional German cheeses. Bavaria is one of the most naturally beautiful regions in the world and Germany’s chief dairy and agricultural center. It has been this way for centuries, with fertile lands nourished by ice-blue lakes. It wasn’t until the 19th century that dairy production flourished. Before this point all of the milk made was used for personal consumption, with the land prioritized for growing flax to be used in clothing. Once cotton replaced flax, the farmers in this area began to expand their dairy operation. As the farmers Allgäu is located in Bavaria, a landlocked state in southeast Germany. The city is known for its beer halls and annual Oktoberfest celebrations.
Sun rises over the German Alps, lighting the rich green grass of the valley a yellowgold. Families that have worked this land for hundreds of years rise with it. So begins another day in Allgäu, where the grass is rich with herbs and the cows graze on open pastures that dot the mountainside.

All of the cows sport some sort of headpiece as they make the descent. The occasion is marked with music and festivities in the

The techniques for cheesemaking have been passed down from generation to generation, and are a great source of national German pride. Käserei Champignon continues in this tradition. ou’ve heard of Oktoberfest, now get ready for Cheesetoberfest!
The first Oktoberfest was held on October 12, 1810 in Munich, Bavaria, Germany, when Prince Ludwig married Princess Teresa of Sassonia-Hildburghausen. All of the citizens of Munich were invited to celebrate in the fields in front of the city gate to celebrate the marriage. The celebration included a horserace and feast, and was the very first Oktoberfest. To this day, Oktoberfest is celebrated at the same location, called Theresienwiese (The Teresa Meadow). Although massive amounts of beer were consumed at the first Oktoberfest, the event was based around its horse race and agricultural show. It wasn’t until 1818 that beer began to be heavily associated with Oktoberfest, when beer and food stands were introduced. In 1910, Oktoberfest’s 100th anniversary, 120,000 liters of beer were consumed, which was a record for the time. The same cold, frothy beer that is
enjoyed during Oktoberfest also makes for a great accompaniment to cheese. Most people instinctively choose red wine to pair with cheese, but beer may be a better bet. Red wine contains tannins, chemical compounds from the skin, stems and seeds of grapes that coat and dry the mouth and dull taste buds. In order to really taste the complexities of the cheese, you’re better off pouring yourself a cold beer. The frothy feel of beer cuts through the richness and fat of the cheese and helps cleanse your palate before your next bite. Pairing cheese and beer is quite easy. Pair the intensity and choose whether you want complimentary or contrasting flavors. For example, the strong taste of a blue cheese melts well with sweetness and complexity of a dark stout. 1 ½ tablespoons flour
¾ cup grated Paulus Abbey Beer Cheese
