INTERNATIONAL RAW MILK CHEESE APPRECIATION DAY Saturday, October 17, 2020 Raw milk cheeses are made with milk that has not been pasteurized, or heat-treated. Pasteurization removes many of the fungi spores, yeasts, and micro-organisms that make a cheese unique. There are delicious pasteurized cheeses, but raw milk cheeses are worth celebrating for their complexity of avor, diversity, and history. Raw-milk cheese is chronically misunderstood by policy makers and the public alike. Its regulation and safety has been a topic of heated debate for much of the last century. Not only is raw-milk cheese (when thoughtfully made according to established best-practices) safe to eat, it is highly nutritious and an important part of a healthy diet. The quality of the ingredients, the extreme care taken by producers, and the natural cheese aging process ensure that raw milk cheeses are a safe choice. Their producers represent years, even decades, of knowledge and thoughtful cheese-making. Since 1999, Oldways and a group of dedicated producers, importers, retailers, and cheese lovers have advocated to preserve raw milk cheeses around the world. In 2020, the Oldways Cheese Coalition is celebrating its 6th Annual International Raw Milk Cheese Appreciation Day to highlight the diversity and deliciousness of cheeses made with raw milk. The best way to celebrate International Raw Milk Appreciation Day is to visit cheese counters, purchase and share about delicious raw milk cheeses, and of course, taste the complex flavors of these cheeses.

All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. These cheese rounds are then taken to the master cheese maker for maturing. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. This regular testing and observation are essential for transferring the rounds of cheese to the appropriate maturing cellars and obtaining the best flavors. The final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes. The result of these special maturing techniques at the Fort des Rousses, give the Comté cheeses a nice creamy texture and a strong and refined combination of aromas that linger in the mouth.

With all of the different ways to enjoy it, it's no surprise that the average American consumes approximately 20 pounds of pasta a year and collectively, the United States consumes 5.95 billion pounds of pasta per year! Pasta can be found all over the globe as it is one of the most accessible foods. You can visit almost any country and you will see that it has its own version of the popular inexpensive staple. In Greece they have orzo, Poland has its own famous version called pierogis, Spain enjoys it as fideos, Germany has Spätzle, Israelis enjoy pasta in the form of small balls called ptitim (also known as couscous). Pasta is most associated with the country of Italy. The spread of pasta to the rest of the world began in Italy. Italy's climate makes it perfect for producing durum wheat, a necessary ingredient in pasta. It is the world leader in the pasta market, producing around 3.3 million tons a year. Italy has around 300 different shapes and varieties of pasta, and it is estimated that Italians eat a whopping 60 pounds of pasta per person each year! I N G R E D I E N TS • 3 oz Extra Creamy Blue Castello • 12 oz pappardelle pasta • 2 tbsp extra virgin olive oil • 1 lb sliced baby bella mushrooms • 3 garlic cloves, minced • 1 cup heavy cream • salt and pepper • grated Parmesan cheese • fresh thyme sprigs
D I R ECT I O N S 1. Cook pappardelle in salted boiling water according to package directions. Prepare sauce while the pasta is cooking. 2. Heat the olive oil over medium high heat. Add the garlic. When garlic is fragrant, add the baby bella mushrooms and cook until they are tender, about 6 minutes. 3. Add the heavy cream and stir. Bring to a simmer and cook until the sauce has thickened. Season with salt and pepper to taste. 4. Drain pasta once finished cooking and reserve 1/4 cup of pasta water. 5. Toss the cooked pappardelle into the sauce. Thin the sauce by adding up to 1/4 cup of pasta water until the desired consistency is achieved. 6. Garnish with shredded Parmesan cheese and fresh thyme. Serve immediately.
