01. In large saucepan melt butter over low heat. Add marshmallows and 2 oz Truffle Tremor, and stir until completely melted. Remove from heat. 02. Add Kellogg’s Rice Krispies cereal. Stir until well coated. 03. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool, then top with remaining 2 oz Truffle Tremor. Cut into 2-inch squares. Best if served the same day.

I NS TRU C T I ON S 01. Bake pizza according to package directions. 02. Remove pizza from oven. 03. Using a ghost-shaped cookie cutter, cut out shapes from cheese. 04. Cut 8 black olives in half. Take 4 of the black olives you've cut in half and cut each into 4 strips. Place on pizza using the halves as spider legs. 05. Place ghost shaped cheese on pizza. 06. Place pizza back in oven for an additional 5 minutes 07. Serve and enjoy!

In the late 19th century, Central Formaggi cheeses were carried by sailing ships, now they are carried in temperature-controlled trucks to ensure there is no break in the cold chain. This is how the story of the Villecco family unfolds, spanning four generations, each focused on producing high-quality sheep’s and goat’s cheese. Growing steadily in terms of both size and range with the introduction of ever-new products, the business became known as Central in 1974 and took the plunge, bringing its multitude of small dairies scattered around the Sardinian countryside under one roof in its new strategically located Serrenti facility.

tral Formaggi Cheese Making Process Central Formaggi developed and nurtured their own signature cultures used in the cheese making process. This culture gives the Central cheeses their signature flavor that is recognized and desired worldwide. Central’s state of the art production facility incorparates the handmade cheese making practices they have used for over 100 years. The Junco Baskets that are featured are used as a mold for many of the Central cheeses. Once the desired form of the cheese is made, it goes into a warm room allowing more whey to drain. Afterwards, the cheese goes into a cool room to bring the PH levels down. The cheese is then put into a brine bath for 24 to 48 hours allowing the natural rind to develop. OCTOBER 2021 | 25

hard sheep’s milk cheese, with a compact structure or with occasional holes. It has a solid, balanced, pleasantly strong taste, which tends to become more marked with time. All the wheels are marked with “Central” logo and clearly show the signs from the handmade reed basket in which are made.
