The earliest recorded bee was discovered encased in amber and has been dated as over 100 million years old. Today there are nearly 20,000 known species of bees around the world.

In ancient times, honey was the primary sweetener for food and beverages. Before bee-suits, many would take on the painful and difficult task of collecting honey from beehives.

Honey and cheese is one of the most cultivated combinations a person can try. Just a tiny drizzle of honey on cheese creates the perfect combination of contrasting flavors.

For almost 30 years September has been National Honey Month. Beginning in 1989, the National Honey Board began this holiday as a way to promote beekeeping, the beekeeping industry and of course the natural sweetener that is honey! Many are not aware of how fortunate we are to have such easy access to honey. Honey is one of the few foods in the world that never spoils, and it takes roughly 22,700 bees to fill a single jar of honey! Honey bees perform about 80 percent of the world's pollination, which means that we have bees to thank for every one in three bites of food we eat. Honey bees pollinate crops such as cranberries, apples, blueberries and cherries. Besides making delicious honey, bees are a very big part of our agricultural system, contributing an estimated $20 billion per year to the U.S. agricultural efforts. It is no wonder that honey bees contribute so much to society as they are born ready to work and with

their own specific roles already assigned. A honey bee colony will consist of three different types of bees: The Queens, Workers, and Drones. The Queens are the only members of a colony able to lay fertilized eggs and can produce up to 2,000 eggs in a day. A queen is very important in establishing a strong honey bee colony. Worker honey bees are all female and their job is to collect pollen and nectar from flowers, build and protect the hive and other task to preserve the survival of the colony. Drones are all male bees and they only have one job, to fertilize new queens. During the spring and summer months, a colony could contain roughly 80,000 bees. Sadly, the world has been seeing a decline in colonies for last few years. From the Hive to Your Home Ever wonder how honey makes it from the hive to your home? Once a female adult worker bee collects nectar by sucking out the sugary fluid from a flower using its' long tube-shaped tongue, it stores it in its body in a special reservoir that is referred to as the "honey sac." Once the worker bee has loaded up on nectar, they return to their hive. At the hive, the worker bee transfer the nectar through their mouths to another bee. This process is done repeatedly until the partially digested nectar is deposited into a honeycomb cell. Unlike the thick honey we are accustomed to, when honey is first deposited into a honeycomb it is wet. In an effort to dry it out, the bees then use their wings to fan it until it becomes dry and sticky. When it is ready, the bees then seal the cell with a liquid wax coating, which eventually hardens into beeswax. Beekeepers maintain and monitor the hives during the entire process and once the honey is ready to be harvested, they will remove the honeycomb cells from the hive frames and process it for human consumption.

The fertile herbal meadows of the Appenzell lend Appenzeller its unique flavor. The cheese is washed at regular intervals with an aromatic herbal brine, the ingredients of which are a closely guarded secret. Appenzeller is a medium-hard, spicy cheese with a maturation period between three to six months whose flavor intensifies with age.

1 tablespoon salted butter. 2 tablespoons packed light brown sugar. 2 medium Gala apples, peeled, cored, and cut into 3/4 inch dice.

1 baguette, sliced diagonally into 1/4 inch pieces.

2 tablespoons cornstarch.

4 ounces of Montchevre plain goat log.

1/4 cup golden raisins.

4 teaspoons freshly squeezed lemon juice.

4 ounces of sliced Cabot Extra Sharp Ceddar and Whole-wheat crackers.

1 teaspoon of freshly ground black pepper. Assorted food for dipping such as bread cubes, apples, broccoli or cauliflower.

Directions

In a medium bowl, toss the cheeses and cornstarch together until the cheese is fully coated. Set aside.

Add apples and raisins and reduce heat to medium-low. Cover pan and cook, stirring occasionally, for about 6 minutes or until apples are beginning to soften.

In a fondue pot over medium heat, bring the apple cider and lemon juice to a simmer. Slowly add the cheese, stirring after each addition to fully incorporate the cheese. Once smooth, sprinkle with the pepper and serve.

Uncover pan and continue cooking, stirring often, for 6 minutes longer or until apples are lightly browned and just tender. Let cool slightly.

Note: Do not let the fondue boil as that may cause the cheese to separate and become stringy.

Top each cracker with slice of cheddar and spoonful of warm apples.

8 ounces of Montchevre Chevre in Blue cheese.

8 hearty white bread slices.

9 slices of Montchevre Goat Milk Cheddar.

3 ounces Italian Proscuitto. Honey to Drizzle.

8 teaspoon butter. Vegetable cooking spray.

Directions

1/3 cup water. 1/4 cup white sugar. 1/2 cup brown sugar. 4 Honeycrisp apples, cored and thinly sliced.

Heat up a non-stick pan on medium-low heat.

Core apple and cut into wedges. Cut prosciutto slices into strips so you have one slice for each wedge of apple.

Spread 1 teaspoon of butter on 1 side of each bread slice.

1/2 teaspoon of ground cinnamon.

Place 1 slice of Emmi Roth Dill Havarti on each of 4 bread slices and top with apples.

1/3 cup all-purpose flour.

Drizzle honey on apple wedges and place blue cheese against the slices of apple. Add pieces of parsley and then wrap with slice of prosciutto.

Top the apples with remaining cheese and bread. Coat both sides of sandwiches with vegetable cooking spray. Cook slowly on medium-low heat until both sides are golden brown and toasty.

Johnny Appleseed was born John Chapman on September 26, 1774. Although it has been stated that John carelessly spread apple seeds everywhere he went, it has since been discovered that he planted apple nurseries. Once the nurseries were established, he built fences to keep the livestock out and would leave a neighbor in charge of its' care. John would only return to the nursery every couple of years to tend to it and eventually would sell off the orchards and the surrounding land. Johnny had multiple purposes for the trees he planted, but despite popular belief, the fruit that grew on them was not edible. Apples are heterozygous, meaning that if you plant the seeds of one apple the resulting apples will bear only a little resemblance to the source apple. It has been identified that in order to replicate the same fruit, one must follow the process of grafting. Grafting is when one inserts a section of the tree stem with leaf buds into the trunk of another tree.

Despite evidence that apples not grown using the grafting process resulted in inedible fruit, Johnny still continued to solely plant apple seeds. Since the apples his orchards would produce could not be eaten, they were therefore primarily used for hard cider. To his advantage, this was a far more valuable crop than edible apples because at the time cider was essential at American dinner tables and was safer to drink than water.
